Somehow during the tasting at Catherine le Goeui, we got on the subject of truffles. Apparently, she likes them too, so she told us to go to Le Provencal up the road in Richerenches. So off we went to partake in our next adventure: omelette avec truffles.

Call it work in progress, but I'm seriously thinking of cancelling Martha's Truffle Training course.
She loves nothing better than a good forage in the woods but so far the results have been a little disappointing. Here, she's found a fine, albeit slightly nibbled, Blusher, which is apparently edible but must be well cooked otherwise it does naughty things to your red blood cells!
Maybe I should just get a pig 🤔

See's Candy white chocolate lemon truffle...this was such a difficult project. Much sampling was required to find the ideal sweet subject.
I have made these Oreo Truffle Balls a few times before since they are pretty easy to make. They only consist of 3 ingredients - cream cheese, broken oreos and a coating of good quality chocolate. I like to keep the inside a little chunky, so I only thoroughly mix about one-half of the broken oreos in first. The second half is mixed just until combined, leaving some big pieces in for texture. I did not have as much white chocolate as I thought I did, so I had to melt down some bittersweet chocolate to finish dipping. Since these need to stay refrigerated because of the cream cheese, you don't have to temper the chocolate, which can make it easier if you like - but if you have the extra time feel free to! It was pretty cold in the house today, so the chocolate set a bit faster than I wanted it to. This made them a bit more bumpy, but I kind of like "homely" look to them. It's hard to stop at just one with these!

A few days ago, my wife and I had the opportunity, or rather the privilege, of receiving a visit from my good friend Xac, a companion of hundreds (or maybe thousands?) of flying hours, as well as jokes, laughter, tourism, photography, gastronomy...
And of some awkward situations that we managed to resolve by working as a team and with professionalism.
Now he's passing on the legacy to his copilots, so that the "essence" doesn't disappear.
Xac knew WHAT he had to bring as a gift and WHO he had to give it to.
Premium Artisan Truffles from the Madrid bakery "Balbisiana".
A delight for the senses. (I think I managed to try one...)

UNAS TRUFITAS PARA UNA OCASIÓN ESPECIAL, 2025
Hace pocos días mi mujer y yo tuvimos la ocasión, más bien el privilegio, de recibir la visita de mi buen amigo Xac, compañero de cientos (¿o quizá miles?) de horas de vuelo, y también de bromas, risas, turismo, fotografía, gastronomía...
Y de alguna situación comprometida que logramos solucionar trabajando como equipo y con profesionalidad.
Ahora él está transfiriendo el legado a sus copilotos, para que la "esencia" no desaparezca.
Xac sabía QUÉ tenía que traer como regalo y a QUIÉN se lo tenía que regalar.

Un deleite de los sentidos. (Creo que logré probar una...)

Don't think I've ever made truffles before.
Very simple to put together and they always go down a storm.
These here are white chocolate with pistachio nuts.
A whole pistachio hiding inside every truffle.

I cut a dark chocolate truffle in half to share with my Flickr friends - just as I had to do as a youngster, so as to share with my sister. The center of this truffle is so silky and buttery - that it didn't last long after I took this shot. YUMMY!!!
