Whilst staying on a farm near Guardiagrele, Abruzzo, in the foothills of the snow-capped Maiella Mountain, with uninterrupted views to the Adriatic Sea, we were invited to walk through the field where the truffles grew. Shot with a B&W IR 5D2.

A recent truffle hunt resulted in some prize finds.
I learned that here in Australia we have around 300 native truffle species, but this is Tuber melanosporum, the black Périgord truffle, native to southern Europe.
Black truffles are associated with oaks, hazelnut, cherry and other deciduous trees and are harvested in late autumn and winter.
The round, subterranean fruiting bodies (ascocarps) have a black-brown skin with small pyramidal cusps. They have a strong, aromatic smell and normally reach a size of up to 10 cm.

Opinions are divided when it comes to truffles. Some love them, others don't need them at all.
I don't have to have them, but I like them from time to time and when the flavour isn't overpowering. My favourite Italian restaurant makes an incredibly good truffle pasta - everything is just right.

Die Meinungen über Trüffel sind geteilt. Die einen lieben sie, die anderen brauchen sie überhaupt nicht.
Ich brauche sie nicht, aber ich mag sie von Zeit zu Zeit und wenn der Geschmack nicht zu stark ist. Mein Lieblingsitaliener macht eine unglaublich gute Trüffelpasta - da ist alles genau richtig.

I may be wrong but I think these are False Truffles, I keep finding little holes in the ground up the wood, when I investigated them I found these about 2cm deep, some half eaten, what would eat this? possibly squirrel?
The original reciepe was Red Velvet, but i didn't find any of the ingredients, so i made my own Vanilla truffles, luckily it was successful! I thought it would be a mess to be honest so i tried so hard to make them look good at least =P
