Whatever you call them, "overnight tomatoes," slow-roasted tomatoes," or "moonblush tomatoes," they're really good!

One may use any kind of tomato. Here I have cherry tomatoes (Solanum lycopersicum var. cerasiforme - Solanaceae) with garlic and sprinkled with olive oil, cane vinegar, sea salt, herbs, and spices.

Heat oven to 350 F. Slice tomatoes thinly, sprinkle with a bit of oil, vinegar, salt, spices, and herbs. Place tomatoes in oven, turn off oven and leave tomatoes in hot oven for 4 to 8 hours (generally overnight).
