Whatever you call them, "overnight tomatoes," slow-roasted tomatoes," or "moonblush tomatoes," they're really good!

One may use any kind of tomato. Here I have cherry tomatoes (Solanum lycopersicum var. cerasiforme, Solanaceae) with garlic and sprinkled with olive oil, cane vinegar, sea salt, herbs, and spices.

Heat oven to 350 F. Slice tomatoes thinly, sprinkle with a bit of oil, vinegar, salt, spices, and herbs. Place tomatoes in oven, turn off oven and leave tomatoes in hot oven for 4 to 8 hours (often overnight--hence "overnight tomatoes").

I did this batch with tomatoes from my potted cherry tomatoes growing on my back deck at home in Wisconsin.
