The tortilla classically has sliced potatoes that are fried in olive oil until soft, then finished with eggs. A few years ago we hit on a barbaric but delicious modification: use a bag of thick-cut ridged chips. They're already fried crisper than you can get them at home, and the thickness and ridges helps the chips remain rather toothsome in the finished dish. I don't do this every time I make a tortilla (and my Spanish friends thank me for that!) but it's better than you'd think.

This is a strange italian grocery store. In the entry there are photos of the owner with several famous crooked politicians. The place is stacked tot he roof with exotic and toothsome stuf from all over the world.

This guy was so 'Bama I had to give the most toothsome grin I could.
