Well, let's see: turkey leg, turkey breast, gravy, veggies, home-made stuffing. Yep, looks like Thanksgiving to me.

Recipe from and shot for: Sunfood
1 cup cremini or white mushrooms, chopped
¾ cup celery, finely chopped
½ cup onion, finely chopped
2-3 cloves garlic, finely chopped
1 cup pecans, coarsely chopped
¼ cup raisins
¼ cup goji berries
1 apple, finely chopped
1 tsp maca powder
2 tsp fresh thyme, chopped
2 tsp fresh sage, chopped
2 tsp fresh rosemary, chopped
3 Tbsps fresh chopped parsley
3 tbsps olive oil
2 Tbsp Nama Shoyu or Bragg Aminos (optional)
pinch of Kalahari Desert salt
pinch of Black pepper
Add all ingredients into a large bowl, mix together gently, and enjoy!
Our stuffing: Sauté bell peppers, onions, and if you like mushrooms, tons of mushrooms together. While they're softening, sauté orzo in canola oil unitl it starts to brown. Once that happens, toss in the pepper mix with the orzo and cover it with water. Bring it to a boil, then bring down to simmer until all the water is gone; test it, and add more water if needed to soften the orzo.

Places and Spaces of the Gender Conference Community is a mapping project that examined the community of academics, thinkers, artists, and designers who comprise the 2011 Gender, Sexuality and Urban Space Conference at MIT.
Information was collected by surveying the conference participants, asking for their locations, the names, and locations of three mentors in their field, and three “queer spaces.” The project was subsequently released via a series of three “snapshots” which included a quote from a memorable queer space.
This project was completed by Stephen Kennedy, JD Sassaman, Daniel Simon, Ann Solomon, and Dominick Tribone from QuBE (Queers in the Built Environment) in collaboration with Jonathan Crisman from Little t. There may be lots of sweets that people look forward to eating at Thanksgiving, but my preference is a carb-rich treat my wife makes only at this time of year - her special stuffing (and no, she does NOT put it in the turkey to cook it.
As you can see from the photo, along with the bread cubes, she includes celery, onion, raisins, cranberries and apples, along with her special selection of herbs and spices. For liquids she uses chicken stock and apple cider. It is placed in a casserole dish and baked at 350F until the edges just start getting crispy (about 45 minutes). And it is usually the first leftover to get eaten, although she usually makes a double batch!

RECIPE (Just recently given to me by my wife):
Two bags of toasted bread cubes
one cup raisins
one cup cranberries
one medium yellow onion, medium diced
four ribs of celery, chopped in 1/2 cm
four tbsp butter or margarine
two granny smith apples, chopped
one box of chicken stock
one snack size box apple juice (8-10 oz)
one tsp each of salt, pepper, sage and poultry seasoning
Sauteé onions and celery in butter until the onions become translucent.
Add apples, raisins and cranberries, sauteé until apples become soft.
Add sauteé mix,chicken stock, toasted bread cubes in a large mixing bowl.
Add salt, pepper, sage, poultry seasoning and mix well
Transfer to a casserole dish, bake at 350F for 45 minutes, or until edges get crusty.

After carving this is how much meat one goose gives. It certainly isn't a turkey :) I heeded the advice of food writers and made sure to make lots of stuffing and lots of gravy to fill up my guests' plates. Many of the recipes I read also said to actually stuff the stuffing into the goose. I know people have been doing it for forever, and geese are not as prone to nasties as chickens, but I just couldn't bring myself to do it. In the end, I'm glad I didn't because the stuffing wasn't completely full of goose fat so was a relatively decent foil to the greasy meat.
This recipe made 8 or 10 cups of stuffing but that turned out to be a goodly amount for the meal. It meant that we had lots to offer dinner guests that evening, and plenty of leftovers as well. Next time around I might even increase the bread cubes, add some more onion and just make a little more.
Of course, use sourdough or soaked flour bread if that is important to you. I used white bread, which is lower in phytates than whole wheat, and figured the whole meal was nutritious enough to call it good :)
Apple Chestnut Stuffing for a Goose
Serves 6-8
*7 cups cubed rosemary bread (or good quality white bread, but then add rosemary along with the other herbs)
*1 onion, diced
*3 celery ribs, chopped
*heart and liver from one goose, optional, or use chicken giblets. (I chose not to use the gizzard because it was so tough, but you might)
*1/2 cup butter
*1 tbs dried, ground sage, or 3 tbs chopped fresh sage
*1 tsp or so salt and pepper
*1 tsp dried thyme or 1/2 tsp fresh thyme
*1 tsp dried rosemary if you didn't use rosemary bread, or more fresh.
*2 granny smith apples, diced (recipe called for 2 cups, I just used two apples)
*1 can of chestnuts, rinsed and broken (can was probably 13 or 14 oz, or maybe
2 1/2 cups chestnuts. It was an odd sized can but the recipe could absorb considerbly more or less chestnuts depending on what you have avaliable)
*1/2 cup or so goose steaming liquid or chicken broth
Either dry the bread cubes over night or toast them in a low oven until quite dry and slightly golden.
Sautee the onions and celery in the butter until soft, 7 to 10 minutes. Add the chopped giblets, sage, thyme and salt and pepper and cook another three to five minutes or until the giblets are cooked through.. Add the apple and the chestnuts and cook another 3 minutes or until the apple is just starting to get soft.
Combine the vegetables with the bread and mix thoroughly. Moisten the mixture with a little goose juice and pack into a crock pot or large casserole dish. I cooked mine in the crock pot on high for about two hours, but suspect it would take just around an hour in the oven to make sure everything is hot and the edges are starting to get a bit crispy. Some recipes used an egg to bind everything together but I found that occasional mashing and stirring of the stuffing the crock pot allowed it to bind a bit so it wasn't just bread cubes mixed with vegetables.

Also called "dressing" by some old timers. This is my favorite part. Cooked in the bird, with a little bit of sausage in there for flavor.
CEA were employed to pack and lash 77 units of Mud Skips, Cargo Baskets and Gas Racks into 14, 40ft HC containers, the cargo received was too wide to fit in to the containers in the conventional way and would have to be turned on its side. CEA would ready the containers for load out and transport them to port where the cargo would be shipped to Nigeria to be used in the offshore Oil & Gas sector.
PROCEDURE
Two wooden beams were placed on the floor in each of the containers, the cargo, on its side would be placed on these to ensure no damage occurred to the panels during loading, transportation and unloading. Lifting slings that would be used upon arrival in Nigeria were attached to each piece of cargo before packing.
A CEA reach stacker lifted each of the containers and placed them on to their sides upon wooden blocks. CEA fabricated specialised roller units to facilitate the loading, two units were placed underneath the front section to support the cargo while being loaded by forklift from the rear.
Mantiou 3.5 t forklift’s and 5 t pallet trucks loaded the cargo into the containers, both fork lifts and pallet trucks were covered with protective materials to prevent any damage to the cargo.
After all Mud Skips, Cargo Baskets and Gas Racks were loaded the CEA team lashed and secured them in place. Wooden chocks and stoppers were installed to further ensure no movement while transportation and shipping.
All necessary supporting documents were provided inside each container. A third party inspection team checked all loaded cargo and sealed the containers with the appropriate shipping tags. The containers were loaded on to flatbed trailers and transported to port to await shipping.
