A large muddy male elephant (Loxodonta africana) has just finished blowing grass and dirt up onto its back for protection from the sun and is now eating grass and leaves. This shot was captured just as the vegetation, including a small white flower in his trunk was being shoved into his mouth. Best larger to see the flower and the bits of vegetation falling form his mouth.

I missed yesterday in my 365. I can't believe it, but so it is... and I carry on with my 364 :/

 

We put in raised beds a few years ago to keep the rabbits from eating my strawberries. Mama bunny didn't get the memo and is now building a nest in my strawberry patch. She seems to be in a big hurry racing to and from the box in the pouring rain to get things ready.

(115/366) I made some sausage meat stuffing to accompany today's roast chicken dinner. I often make a vegetarian option with grated apple rather than sausage meat.

 

Recipe :-

 

1 large onion diced

4 chestnut mushrooms diced

Sausage meat or a large apple grated

Tablespoon of whole grain mustard (you could substitute Cranberry sauce)

Large knob of butter

Drizzle of Irish Rapeseed oil

Tablespoon of garlic puree (we love garlic)

Dried sage, salt, black pepper

Combine all the ingredients by hand in a large bowl. Grease a suitable dish/tray & fill with the stuffing. Don't pack it down too hard. Cover loosely with tin foil & bake for 30 mins in a medium oven.

It’s time to overeat and make meals of the leftovers. So far, I’ve eaten far too many sweets!

 

Stuffing season kicked off with a Friendsgiving. I wore a fitted skirt to avoid overeating, but still ended up with a full stomach. I’m not sure whether to blame the turkey or recent late nights, though, for my post-dinner nap.

Here we have my newest backyard visitor - a chipmunk. I think chipmunks are totally adorable, so I'm really excited to have one right in my backyard!

 

I spotted him one afternoon cleaning up the seeds under my bird feeders. The following day, I caught him stuffing squirrel food in his cheeks! He would load up, run off into the woods to where I presume his stash is, and come back to do it all over again a few minutes later. I thought he would be afraid of the large grackles and doves that eat the squirrel food too, but he's quite brave and will actually chase those birds away from "his" food :)

Chicken thighs with pork and apple stuffing

I havnt uploaded anything for a week, ive been that busy, wrapping presents, decorating the tree, making cards, stitching my stocking, having a few christmas tipples and stuffing my face at christmas meals out, sleeping it off, spending time with friends & family as i am working this crimbo so wont see them!

 

I did take my Panasonic to do these shots but the blinkin battery ran out as i forgot to charge it after a night out this weekend, luckily i took this camera with me too!

recipe from Miss Rachel's Pantry

Ingredients :- Wild mushrooms (Meadow Waxcap & Wood Blewit), breadcrumbs, home grown leeks, grated apple from our orchard, Thyme & Sage from our herb trough, salt & black pepper. I used golden Irish rapeseed oil infused with home grown garlic to bind it all together. Most went to stuff a pork loin wrapped in bacon we're having for Sunday dinner but seeing as I made too much (as usual) I've put the rest into a dish to cook separately. Can't wait!
