This is what you want: carmelization. The flesh of this blue hubbard, for instance, is a deep burnt orange. If you look at the sheet pan in the background, in the spot where the hubbard half was, you can see a puddle of carmelized sugars. That's serious flavor development. That is what you want.

Acorn squash will be baked and served with hiziki sea vegetable sauteed with onion and splashes of tamari and mirin.

What is this? I thought I might have watermelon growing. The other one is bigger than this! It's as big as a large water mellow, but NOT a watermelon!
