During the weekend, Kim's partner Sean went fishing and caught several snapper. So sweet of them to give me some fillets. I had one for dinner tonight. Fish dipped in beaten egg, coated with crumbled toasted bread (my alternative to breadcrumbs) pan-fried in butter and fresh dill, drizzled with the juice of preserved lemon - and accompanied with hot potato, carrot, zucchini salad. Absolutely superb! Thanks, kids. You can go fishing any time!
