Country style pork ribs, onion, bbq sauce

I ended up mixing a small can of diced fire-roasted tomatoes with some red wine vinegar, a wee bit of brown sugar, garlic, paprika, cayenne, black pepper, and salt in the crock. I then rolled the beef shoulder roast in it, and topped it with onions and carrots. It will now marinate in the fridge overnight (the liquid almost reaches the top of the roast and I put some of it on top of it). I added frozen green beans during the last 1/2 hour.

I love food from a slow cooker but I need me some fresh veggies, so for the leftovers I did the following.

 

Serves 2

 

1/2 to 1 c of leftover pork, chilled and shredded with forks

1/4 red onion diced

1 roma tomato diced

1 avocado diced

1/2 c or so of chopped fresh cilantro or parsley

1 to 2 limes to taste

Olive oil to taste (I like a 1 to 1 ratio with lime but that might be too zesty for some)

Salt and pepper to taste

 

Basic salad of your choice (I used romaine, carrots, radishes, snap peas)

  

In a mixing bowl, combine pork, onion, tomato, avocado, and herbs. Squeeze on juice of one lime and add a tbs of olive oil. Mix and taste. Add more lime and olive oil as needed, keeping in mind that you should have a bit of extra liquid to flavor the remainder of the salad. Season with salt and pepper.

 

Let sit for 30 mins, if possible, to allow flavors to meld.

 

Prepare salad and place meat mixture in the middle.

The already prepped chicken, in this case the boneless, skinless chicken thighs are place in a layer over the sliced onions.

This recipe is gluten free, dairy free, Whole30 and Paleo if you serve it with cauliflower rice, instead of real rice! This juicy and tasty slow cooker chicken curry is cooked in a coconut milk sauce. You can serve it with rice, cauliflower rice, pasta or mashed potatoes. It will take around 5 hours to prepare. Suggestion: use chicken tights and not breasts, since slow cookers tend to dry out chicken breasts.

Fresh basil was added to the mix and then all was poured over the chicken thighs.

This crockpot is still going strong...my parents bought it when I was a kid. A young kid. I'm guessing, six or seven...I remember them using it to make stews and whatnot. And it's still going strong!

 

Note the little table of cooking times on the lower part...and call me crazy, but I really like this color.

In prepping the chicken thighs I cut off excess fat and look for pieces of bone and or cartilage and remove them.

This was delish !!!

Sainsburys low fat Rogan Josh 89p some over ripe tom's and a diced red onion and a fresh leg of lamb bone not removed .

5hrs on low .

Now it's time to clean up after myself (*sigh*) and then hurry up and wait for 4–5 hours.

I use a 3-somethingish Quart slow cooker for this...

 

Add all ingredients (works best if your meatballs are frozen; this month's Martha Stewart Food has an excellent turkey meatball recipe for freezing!) in the crock of the slowcooker, throw in the bbq sauce and then enough water to just barely cover all ingredients.

 

Cook on low 6-9 hours (this is a pretty forgiving recipe, you kind of can't go wrong!)...

  

Other yummy things to add are...

* zucchini

* lima / butter beans

* red kidney beans

* some red wine or beer, if you can find a beer that matches well with your bbq sauce.

* brandy ~ which I haven't personally tried, but my dad insists is great if you are using Bulls Eye bbq sauce.

 

Things I don't recommend are...

* chickpeas (I love chickpeas, just not in this recipe)

* eggplant (why you would add eggplant to this, nobody knows, but just don't do it. Trust me.)

  

I've made this a lot. It's kind of an adaptation of a Moosewood recipe, and also a Schwan's recipe from one of their magalogs. I love it because it's really simple, and it's so much better than regular beef stew (IMO).

The milk mixture is added to the dry bread. Press the bread down into the liquid so every piece is wet.

A homemade recipe I created to use goya (bitter melon).

Cut 6 leeks (white and light green parts only), slice thinly, and wash thoroughly.
