Made modifications to the serving idea since I was taking this to someone else's house: replaced sauce and cream with a simple chocolate ganache (1/3cup cream boiled and poured over 2/3 to 1 cup of chopped-up chocolate). There wasn't quite enough time to let it all set (2-3h would have been better), but the slightly gooey ganache still worked out ok. The orange slices were difficult to slice through though. Need to find a way to slice the garnishing without totally destroying the cake.
*Not claiming that this is a Mexical cake; epicurious named it as such. To be more accurate, the flavours are inspired by spiced mexican hot chocolate.

Clematis 'Rouge Cardinal' (Red Cardinal) 2020 photo - Queen of the Vines Clematis, KLEM-uh-tiss, Mature size: 8-12’, red, 4-6 in, USDA Hardiness Zone 5, In Garden Bed f4,07,0 for 6.1 YEARS (Mejer). Planted in 2014.
Missouri Botanical Garden: 'Rouge Cardinal' is a deciduous, large-flowering, semi-woody climbing clematis vine (Jackman group) which typically grows 8-12' and features red flowers (4-6" diameter) with brownish-yellow stamens. Blunt, recurving sepals. Profuse summer bloom. Simple to trifoliate medium green foliage darkens as the summer progresses. Synonymous with and sometimes sold as 'Red Cardinal'.
west slope. Planted both of the Clematis from Meijers on the West slope w/o a trellis or support. Moved to f4 fenceline in 2014. Cleared area in 2020, doing much better this year.

I started my Simple Joy photog challenge a year ago this month. Little did I know that I would need this challenge to help keep me hunting for joy within a joyless season.
It doesn't seem it but there is still joy roaming around for us to see and be thankful for. I think about Anne Frank and how her young life was lived in one of the most joyless times in history. I found this quote from her that helped put things into perspective for me, “I don't think of all the misery, but of the beauty that still remains.”
How in the world did she see beauty in what she was experiencing? Yet, somehow, she chose to focus on the beauty that remained of all the ugliness that went on during her lifetime. This has renewed my desire to get back into doing my weekly Simple Joy photo challenge.
This morning I noticed some leaves scattered around my lawn. It was only when I got down to their level that I noticed that each blade of grass had tiny rain drops clinging to them. Sometimes it takes a change of perspective to change our attitude and show us something new and beautiful to be thankful for.
