My lunch: three eggs scrambled, three slices of cinammon/sugar toast, grapes and a plum.

 

I can do better, but this is still fairly healthy for me.

plump, sweet blueberries, crunchy British cox apples and juicy seedless grapes. This isn't just fruit salad.... this is M&S salad!

 

(the humour of this will be lost on anyone outside the UK & unfamiliar with Marks & Spencer) I had such a laugh taking this self portrait - which by the way, was taken at work at a team breakfast (don't worry it's a small team & everyone thought this was hilarious)

 

PS.: I happened to blink when I pressed the shutter release

...which is actually not a moss, but the sporophyte phase of a seedless vascular plant. This species (Selaginalla serpens) is native to the Caribbean.

not particularly sweet. Hmmm.

Maybe it's me -- but these sure don't seem to have much flavor. Sigh.

The logo is obscured by the flash, but it's a 365 organic melon, which was in our fridge for almost that long. We were planning on tossing out on the year anniversary of us moving into the apartment, but it had to go. There's a video too.

FRESH GRAPE SALSA

1 cup (250 ml) seedless green grapes, roughly chopped

1 cup (250 ml) seedless red grapes, roughly chopped

3 tbsp. (45 ml) chopped red onion

2 tbsp. (30 ml) chopped fresh cilantro

1 tbsp. (15 ml) seeded, chopped jalapeno pepper

2 tbsp. (30 ml) fresh lime juice

In a medium bowl combine grapes, onion, cilantro, jalapeno and lime juice. Cover and chill at least 30 minutes. Season with salt and pepper to taste. This can be served with just about anything.

 

SWEET POTATO, BLACK BEAN & SPINACH QUESADILLA

 

12 oz. small sweet potatoes (about 2) halved lengthwise

2 tbsp. olive oil

2 cloves garlic, finely chopped

1 tsp. ground cumin

1/2 tsp. ground cinnamon

1/4 tsp. cayenne

1 15-oz. can black beans, rinsed

1 bunch spinach, thick stems discarded. leaves roughly chopped (Doreen used a package of frozen spinach)

4 medium tortillas

6 oz. Monterey Jack cheese (or your own favorite)

Serve with lime wedges and salsa (see recipe above)

Process:

1. Heat broiler. Line a large broiler-proof baking sheet with foil. Place the sweet potatoes on a plate, cut-side down, and microwave on high until tender (5-7 minutes).

2. Heat the oil and garlic in a large skillet over medium heat until the garlic just starts to sizzle. Stir in the cumin, cinnamon and cayenne, and cook for 30 seconds.

3. Add he beans and 1/3 cup water and cook, tossing occasionally, until heated through, about 2 minutes. Add the spinach and cook, tossing until just beginning to wilt, about 1 minute; remove from heat.

4. Place the tortillas on the prepared baking sheet. Scoop the sweet potato from the skins and spread on one half of each tortilla. Top with the bean mixture and cheese, then fold over the tortillas to cover the filling (they will look over-stuffed). Broil until the top is golden brown and the cheese has melted, about 2 minutes. Serve with lime wedges and salsa if desired.

 

TOTAL CALORIES for both recipes: 472

Will see if Taiwanese lima comes back to life as well as my Thompson seedless, as frosts gave some exposure. 4-18-09 Taiwanese lima's sputtered out. Hopefully my plot neighbors table grape cutting will fill the space :).

3. Seedless? Why are there seeds in the logo?

We've watched Jilly go after the grape leaves as well as the grapes for about a year now. Once we watched her get so high up on her tip-toes she almost fell over - THAT's how hard she works to get at the grapes. She knows to hop over and inspect the area under the vines as fall approaches because the grapes that shrivel into raisins on the vine, fall to the ground where she can get them. Only recently did I learn that grapes are to most other animals highly toxic. While I don't intentionally feed them to Jilly, they have so far not proven to give her more than a tummy ache if she eats too many. (All the more reason for us to do a good job gleaning the vines.)

These are mandarin oranges as they grow here - the seedless ones have a greenish tint outside and are very small and tart. I love them!

A slice of seedless persimmon from spain, torchlight was used with a paper towel to cut down the glare and placed behind the sliced persimmon for this shot.

Raisins are dried grapes available packaged or in bulk. They are eaten out of hand or used as an ingredient in sweet and savory dishes. Dark seedless raisins have deep color and flavor, while golden seedless are pale and tangy.
