I harvested the garlic scapes (flower buds) from my garlic today and made pesto. Delicious!! It's a good idea to cut the scapes off because it makes the garlic put more energy into the bulb, so you get more garlic. Plus the scapes are absolutely delicious, it's worth growing garlic just for the scapes.
Garic Scape Pesto
- A couple handfuls of garlic scapes
- A couple handfuls of basil
- About 1/2 cup toasted pecans
- About 1/4 cup parmigiano-reggiano cheese
- A few TBSP olive oil
- Sea salt to taste
Combine all ingredients in a food processor and process until it reaches the desired consistency. Taste as you go, start off with a small amount of oil and add more to taste.
I have chopped these off the garlic plants, to encourage more energy to go into developing the bulb. And just so nothing goes to waste, I'll be making a fiery garlic pesto out of them.
