It's my 5th Rock City barn so far on this trip. This one looks like it won't be standing much longer. We passed it on our way back to Helen. It was an exhausting ride. Sid kept us safe with his riding skill and watchful eye.
We walked to a restaurant where we had bratwurst, knockwurst, saurkraut and German potato salad with German beer. I'm exhausted and heading for bed (yawn).

The Kohlmarkt in Vienna is known for being this long long row of vendors with foods and spices and crafts from all over the world. But I was most amazed by this gigantic barrel of saurkraut. However it might be spelled.
Since 2015 or so the subject of the biological micro-habitat on the inside and outside of one's body, the micro-biome where micro-organisms thrive, has attracted more and more authors, researchers, and members of the public who pay attention to diet and health. Fungi, bacteria, and viruses live on skin surfaces and from top to bottom of the G.I. tract. This photo of Korean pickle, in this case cubed radish (kkakdokgi), is a reminder of the many foods that are alive with fermenting micro-organisms; cf. blue cheeses, saurkraut, sourdough, uncured salami, and so on.
In some cases the fermentation transforms the raw ingredients into something new (grains into alcohol, fruits into wine). In other cases the result produces a desired flavor (moldy cheese) or texture (natto fermented soybeans).

Obviously, I didn't space things out as well as I should have. The haruki turnips (second row from right) will be eaten soon and thus removed for more breathing room. Chervil (that unwieldy green ball of weediness front and center) has turned out to not be very tasty so that may be ripped out soon too. Can't wait for that sorrel get a little bigger! So good.
Next weekend we are making saurkraut, I have my crock pot and weights and bowl, just need to find a pounder, we'll figure somethingn out. You can see how big the bowl is by the size of Shizandra next to it. It holds 30 quarts.
Started this batch 8 days ago and it is delicious! Made from red cabbage, white cabbage, celeriac, carrots and some caraway seeds.
