Not all raw vegans are into these because of the corn. I adore them. I tend to make them differently every time, and there are plenty of google-able recipes out there. The only requirements are flax seeds and corn. I used some almonds, frozen corn, tomato, cilantro, onion, garlic, salt, and green peppers. I threw everything that wasn't flaxseed into the food processor for a few minutes. I emptied the mixture into a bowl and added the flaxseed. I let it soak for about an hour. Spread it out thicker than you think you should (it will get reeeeaaaally thin once fully dried) on to one of your smooth jerky/fruitleather sheets that come with your dehydrator (I've read tutorials about using bags from cereal but I've yet to try one) and let dry for a day or two. I wish I'd added more salt, but otherwise these turned out great.

Today, I made this raw hummus from the Raw Food Revolution Diet cookbook by Cherie Soria. She was at Vegetarian Summerfest this past summer, and I picked up her book there. A lot of the raw hummus recipes don’t use chickpeas at all, but this one uses sprouted chickpeas and zucchini. I sprouted some chickpeas a couple days ago. It was pretty easy. But, they have strong flavor, so they’re more of an accent to a dish, then the dish itself. But, the hummus turned out super yummy!
The plan was to shake the cream in the jar until it turned into butter, but honestly the seal on the jar wasn't so great and I ended up with crean EVERYWHERE. So instead I cheated and used a hand mixer. Once the butter was formed I rinsed it in cold water a couple times until the water ran clear.

I would like to make one without the split leg too.
It doesn't come out well in the photo, but there's a definite scum floating on top. It smelled awful, and I tasted it (-:
I flooded the mash tun with CO2 to keep the lacto fermentation as anaerobic as possible (there's much less scum than when I did it in 2009).
