an old school friend - who competes in Marathons & Triathlons - took me out for a 'quick' introductory 'jog'...20 mins for 1.5 miles of jog/walk... doesn't sound much I know, but I do NO exercise and haven't done for about 5+ years!!! I was better than I thought!!! well...at least I didn't die! But I was a little worn out to cook - so baked potato and nuked spag bol topping it was!!
A simple Garden Tagine today. Couscous with reconstituted currants, lemon zest, thinly sliced almonds and parsley, chicken drumsticks marinated in Ras El Hanout and yogurt, freshly picked yellow summer squash and a haphazard assortment of other veggies from our kitchen garden. The couscous soaked up the flavour from the roasting chicken and sweet onion wedges, and was soft, fluffy and flavourful after an hour in the Tagine. I fell in love with this pot one evening after tasting the most tender Lamb Tagine in a restaurant overlooking the Jemma el-Fnaa square in Marrakech and then again a fresh Sardine one in Essaouira. The euphoria of having the kids back in school has worn off and the malaise of homework and the PTA has set in. The premonition of free time has been a mirage.
Meal planning looks something like this at the beginning of the week:
Monday: braised veal with risotto
Tuesday: beef braised in...
With a variety of mushrooms (dried soaked and softened shiitake mushrooms, fresh portabello mushroom, brown and white button mushrooms and honshimeiji mushrooms), cook in butter and dress with chopped chives, flat-leaf parsley, lemon zest and season with a bit of salt, ground black pepper and a touch of lemon juice - MIX in the cooked al dente fettuccine, top with grated parmigiano reggiano cheese.... and DINNER is ready!

this recipes requires 15 min to cook and will feed 2 hungry impatient people
Ingredients
4 x eggs lightly beaten
2 x fresh tomatoes
2x capsicums
half a hot chilly
1 x onion finely chopped
1 slurp of olive oil
salt and pepper
sprig of coriander or parsley for garnish
Put onion in a fry pan with one cup of water and cook until onion is tender and translucent and water has evaporated.
Add olive oil, finely chopped tomatoes, capsicums and chilly and cook until tender and juices have evaporated,
Add eggs and stir until cooked.
Serve with a bottle of red wine, a decent slab of feta cheese, whole meal bread and a handful of olives.....

So, I've been eating my Breesus gumbo all week and thought I should try something different since I had the scent of delicious gumbo oozing from my pores. But what? Hmm. I found some Arnold's multi-grain thin sandwich bread, eggs, 3 strips of Wright brand bacon, grape jelly, Tony Chachere's cajun seasoning, and Country Crock spread. Time to go to work. This one includes two fried eggs, a strip of bacon in between, grape jelly topping, lightly buttered and lightly toasted bread. Wow!! The Big Dog says: I love me some me!

With a dollop of drème fraiche, that slid off the salmon and into the peas. I put a tad too much salt in the water for the peas, but it still tasted great. The salmon was just seasoned with salt & pepper, tossed in a pan, skin side down for 3 minutes in olive oil, then flipped for a like amount of time to cook through and develop a nice browned top. I served a nice rosé, which was perfect for a hot summer evening.
