The fabled KFC Double Down has made it to Korea - as the "Zinger Double Down." Double Downs and Harley Cafes? It's time to clamp down on all this decadent western tomfoolery. ;-)
I was feeling lazy and the grill was hot... So I quickly threw together a couple of shrimp skewers and burned, oops, sorry, grilled a sweet potato. Quick, easy, yummy! (and, unfortunately, cold by the time I managed to finish taking pictures...) www.thehealthyfoodie.net

Ketsup! Ok, now it's ready and I'll go watch a really horrible early 40's adventure movie that didn't seem to have a plot. Part of the 50 scifi collection.
Saw this stove at a yard sale, and just HAD to have it. Unfortunately, It was in Denver, and I live in California, and we were traveling by air on this particular trip.
No problem - I stored it in my brother's garage from July to November when we drove back for Thanksgiving Dinner. Presto-chango, the Stove arrives in our driveway in California.
We loaded it off into our garage, where it still sits to this day (4 years later).
Yesterday we took a trip to Cleveland with friends and went to the market to stock up on olives & aritsan cheese. We enjoyed dinner out at The Pub in Rocky River and then met again at their home for a snack and to watch National Lampoon's Christmas Vacation . What a wonderful quick light meal: cheese, olives, marinated mushrooms, sun dried tomatoes, freshly baked sourdough and a few bits of leftover ham.

With Pot Noodles, what's the point in cooking books. HVL 48 to camera left 1/32, would have liked to spend some more time getting more steam and reducing that light reflection, but Xfactor had just started.
I'm totally in love with the earthy flavors of mushrooms, and cooking them with pasta is SIMPLE and yet allows these earthy flavors to come right through!
10.6.2014: I love rice dishes because they're hearty and simple. And also because I'm Asian. We tend to have rice everyday which sometimes leads to leftover rice. Generally, you can reheat the rice in the microwave the next day and it's good to go. But sometimes you end up rice that's been in the refrigerator for a couple of days and there's only so much you can do with it. You can either make fried rice (after you warm it up to room temp in the microwave. Never make fried rice with cold rice - it doesn't turn out good and sticks horribly to the pan). Or make a quick "risotto". I like making mine with mushrooms or broccoli or mushrooms and broccoli. You can use whatever veggies you like: carrots, celery, mushrooms, broccoli, cauliflower, etc. So here's the super fast recipe:
Left over rice Mushroom Risotto:
Mushrooms, cut into cubes
Small diced onions
Minced garlic or Garlic power, to taste
Chicken broth
Salt and pepper to taste
In a small pan, sauté onions until translucent. Add mushrooms and seasonings cook until done with lid on to keep the liquid from the mushrooms from evaporating. After the mushrooms are cooked through, add the room temp leftover rice. Then pour enough broth to just cover the rice. Stir to break up the rice and make sure you have enough broth. After you stir, keep on medium heat until the rice have soaked in almost all of the liquid. Take off heat and it's done! Serve with parmesan cheese on top.
Ever get the "what do I make for dinner" blues? My delicious Summer Corn Salad can help. First, grill corn (I use a grill pan, my secret weapon in the kitchen). Slice kernels off and throw in a bowl. Second, chop up grape tomatoes, cucumber, avocado, red onion and cilantro. Last step? Toss it all with Paul Newman's tangy Lite Lime dressing. Super Quick and Super Delicious. Try it and let me know!

1/14/2014: I'm keeping up my goal of eating more veggies. This was a quick meal of small mushroom sandwiches, Hot Italian sausage and steamed asparagus. I'm really into the mushroom sandwiches lately.

So, I've been eating my Breesus gumbo all week and thought I should try something different since I had the scent of delicious gumbo oozing from my pores. But what? Hmm. I found some Arnold's multi-grain thin sandwich bread, eggs, 3 strips of Wright brand bacon, grape jelly, Tony Chachere's cajun seasoning, and Country Crock spread. Time to go to work. The one on the right includes two fried eggs, a strip of bacon in between, grape jelly topping, lightly buttered and lightly toasted bread. The one on the left includes a two egg salami omelet--that's right, salami!--sliced in half and stacked with two slices of bacon in between, on lightly buttered and lightly toasted bread. That Big Dog is one bad boy!
What? What's that in the back? Oh, that's just a cranberry scone, but I didn't make that. Believe me, this is all very healthy ... probably like, what, 200 total calories and 3 or 4 grams of fat? Sounds about right to me ... ;-)
This is a quick and easy (and filling) recipe using basic ingredients.
Make a tomato sauce using two onions cut up fine, a box or can of tomatoes (this recipe makes enough for about 3 people but is very amenable to adding or subtracting ingredients depending on your preferences), a good squeeze of tomato puree, salt, pepper, sugar (or honey), mixed herbs to taste, about half a pint of vegetable stock. Cut the sausage into bite sized chunks (any sausage will do, Polish sausage with paprika is delicious but a pack of chipolatas cut up is also good). If you're using uncooked sausages, fry the chunks in a little oil until they're browned. If you're using cured sausage you can omit this step. Add the sausage to the tomato sauce and simmer for twenty minutes/half an hour to reduce the sauce to the desired consistency. Meanwhile, cook your pasta of choice.
Pour the sauce over the cooked pasta (penne or macaroni is less messy than spaghetti if you care about these things) and serve with grated cheese and chopped herbs if liked.
