in palma de mallorca, in front of a food truck that glows with warmth on a city evening, people queue for crepes and waffles. the scent of sweet treats fills the air as locals and visitors alike gather for a taste of street cuisine, sharing the simple joy of outdoor dining in the heart of the city.
Today has been busy with cooking in the morning and fixing bicycles in the afternoon. So I was well starving come tea time. My ADHD app told me to 'stop and capture the moment ' so this is it.
It's a variation on a Venetian spring soup recipe. I didn't have everything but this is what I made for a very comforting, filling, quick and cheap meal.
Pasta
Frozen peas
Some basil pesto
Parsley
Oregano
Garlic
Homemade yogurt
Grated cheese
Balsamic vinegar
Lemon juice
Cook the pasta
Cook the peas in the microwave
Add everything except pasta to the peas and stir. Microwave for 2 mins
Drain pasta and add to sauce and stir
Serve and devour. Buon apetito

Peanut Butter & Jelly Sandwich with a cold glass of milk...so good.
Made a sandwich using a pantry item…peanut butter. When I had gone shopping a week ago, this was the only peanut butter on the empty shelf…all the way in the back of the bottom shelf. It was meant for me. 😊
Just realized I've spammed you with trees but not my usual food shot. So here are my first ever cinnamon rolls cooked in an air fryer. They were a little dry so i knocked up a swift chocolate sauce from cupboard leftovers. Made a passable afternoon coffee break and only 400 calories for the lot. Took 30 minutes including baking time. And there are another 8 on the cooling rack, ready for the week 😁
This dish uses leftover chicken from last night's dinner that has been de-boned and cut into small pieces, then tossed with a spicy-savoury sauce right before serving.
It's based on a recipe from Sichuan cuisine, but I toned down the typical spiciness quite a bit by replacing the chili oil and pepper with Lao Ganma brand chili crisp.
I'm back at work today and it came a little unexpectedly, so I had to rustle up a quick low-effort bento because there wasn't really time to buy any fresh ingredients.
This is yesterday's leftover rice fried up together with frozen ham and vegetables plus an egg. There's also some sliced tomatoes and olive, plus an orange for dessert.

I was feeling lazy and the grill was hot... So I quickly threw together a couple of shrimp skewers and burned, oops, sorry, grilled a sweet potato. Quick, easy, yummy! (and, unfortunately, cold by the time I managed to finish taking pictures...) www.thehealthyfoodie.net
Small bento assembled from leftovers and frozen staples.
Day-old rice with green soybeans and carrot flower cutouts, yakisoba, spicy fried tofu from yesterday's dinner, and plain cucumber and olives to fill up that last empty corner.
This was super satisfying for a quick supper.

2 cups soy yogurt
1 tbsp pepper
2 tsp cumin
1 tsp lemon zest
1/2 tsp celery seed
Mix all ingredients- line a strainer with cheesecloth and fold the mixture into the strainer, wrap up and refrigerate 48 hours.
Use as a spread- you can put other veggies and herbs in as well...just mince them up first - experiment!
For the tomato I stewed them about 15 min and then strained, added EVOO and herbs-basil, rosemary and thyme and refrigerated 48 hours also.

Ingredients for one sandwich: Add amounts to your preference.
•1 bagel, split lengthwise (toasted-optional)
•cream cheese, softened
•thinly sliced tomato
•thinly sliced red onion
•sliced smoked salmon
•capers
PREPARATION:
1)Cut bagel in half, lengthwise.
2)Toast bagel. (optional)
3)Spread cream cheese on toasted bagel halves.
4)Place sliced tomatoes on cream cheese.
5)Place sliced red onion on tomatoes.
6)Place slices of smoked salmon on tomatoes.
7)Place capers on salmon.
8)Top with the other bagel half.
Enjoy!

Day 1, Monday 7th June
Got up early and packed the rest of my things. Set off for Gatwick at ~12.30pm & met up with Jon & Marina soon after arriving ~ 2.30pm, (met up at Point J) Soon after Angie walked in followed by Chris. We sat in Costa for a few (...hours) then went to "Czech Inn" at EasyJet desk. We went through security both Angie and Chris got searched and had to take their shoes off, but I didn't aha :)
We met Jon and Marina past security where we had a quickmeal, I had a chicken nugget meal in McDonalds, served by "Emily" (who looked like a model) and all of her other model McDonald companions, no idea why they all look good? :S)
We soon rushed off to Gate 4 where we queued to get on the plane. Unfortunately we could not all sit together, Marina and Jon sat together at the front with Angie, Chris & I at the back. I sat in the window seat, intending to photograph the clouds, but Chris kept photoing inside the plane which led to the stropy woman telling us off for taking photos. The flight went quickly with a "smooth landing" as we kept saying/ Chris ripped a page out of the flight magazine, LOL. When we arrived at the airport we collected our luggage very quickly. However the next hour was spent ringing the hostel guy and dciding how to get into Prague city centre as the shuttle bus had finished for the night, Chris wandered off to use a payphone to ring the guy (10.30pm local time). Eventually we got a large taxi, that dropped us off at the wrong address (Zitna and not Jecna!" on the walk from Zitna to Jecna we encountered about 10 sex shops, all of which had dildos and other such artifacts in the window!
Eventually we got to 32 Jecna and our contact was there, he took us to our apartment. We went down a weird alley and in a door to a room with a lift. The lift was a little unsual by the guy needing to use a magnetic key, I went up in the lift with the guy and asked him about getting a ticket to see lots of attractions but he claimed most of the attractions are free including the castle and Cathedra!! :D We shall see. He then opened the door and we walked in and WOW! The "hostel", apartment was stunning. It has a terrace, an amazing view a decent table and chairs, TV (with 3K+ German/Austrian Tv programs) I took the bed by the terrace up the stairs, with Jon and Chris taking two beds in the "Lounge" with a nice red sofa there too. Marina and Angie took the double in the room next to the bathroom. The guy left soon after showing us the local area on a map and giving us free beers!!

So for years my husband have been nagging me to get a waffle maker (Costco has one for $49)... I thought it was silly and was a waist of counter space. I finally gave in and I'm SO glad I did! This thing is amazing! You just pour the batter in and push a button! Clean up is super simple and so much cheaper than eating out.
Being the geeks that we are we had to decipher on the cost of our meal while we were eating.
Waffles for 2:
Red Mill Organic Waffle Mix $3.50 for the bag... we used about $0.50
Strawberries $7.89 for the flate... we used $1.25
Organic Whipping Creme $3.89... we used about $.0.50
Maple syrup $8.90... we used $0.75
Total cost: $3.00 for 2 servings of waffles.
Our initial costs were a bit high at about $24.00... but you can bring that down by buying canned peaches instead of strawberries... and the cheaper brand of maple syrup. We always try to do the organic route, which costs a bit more.

An oven heated meal needs a change once in a while from water. Brought back memories as a teen. No comments on my age are necessary.

1-2 Costco frozen salmon filet(s), thawed
cracked pepper and soy sauce
preparation time: 12 minutes
Stir frying is great on all counts. I usually do it a couple of times a week..

Veggie burger patties, Brown rice cooked with 1 beef bouillon cube, and steamed broccoli :) Slept late and didn't have time to eat before the gym, so this is my one meal today - I'll have a piece of fruit for a snack, then a protein shake later tonight. :)

Yesterday we took a trip to Cleveland with friends and went to the market to stock up on olives & aritsan cheese. We enjoyed dinner out at The Pub in Rocky River and then met again at their home for a snack and to watch National Lampoon's Christmas Vacation . What a wonderful quick light meal: cheese, olives, marinated mushrooms, sun dried tomatoes, freshly baked sourdough and a few bits of leftover ham.
