How good can Indian food be in Guatemala? Pushkar served one of the best kabobs I’ve ever had in my life.
This seems consistent across all cuisines in Guatemala. I have rarely had a bad kabob in any type of restaurant. However, Pushkar was the absolute best.

While it doesn’t stray too far from Indian food, if this restaurant was in my hometown of SF, CA, I’d classify it as Cal-Indian … Indian food but more upscale and slightly modernized.

“I think what I offer is more Anglo-Indian. The English bastarized (not a swear word) the Indian cuisine to suit their own taste. So that's kind of where my food comes from. I try to keep it simple but in turn give it a higher quality. It's not what a traditional Indian would cook at home. “
In addition to the usual Indian dishes there are also a few Indian-inspired items such as the aubergine burger which is two thick slices of eggplant filled with curried potato, sweet chile sauce, fresh cilantro, yogurt and melted mozzarella.
That interview stated they would try to do regional dishes. The current the online menu has Goan fish fry listed.

Pushkar is a town in the Ajmer district in the Indian state of Rajasthan. It is situated about 10 km (6.2 mi) northwest of Ajmer and about 150 kilometres (93 mi) southwest of Jaipur. It is a pilgrimage site for Hindus and Sikhs. Pushkar has many temples. Most of the temples and ghats in Pushkar are from the 18th century and later, because many temples were destroyed during Muslim conquests in the area. Subsequently, the destroyed temples were rebuilt. The most famous among Pushkar temples is the red spired Brahma Temple built during the 14th century CE. Pushkar is located on the shore of Pushkar Lake, considered sacred by the Hindus particularly in Shaktism. The Pushkar lake has many ghats where pilgrims bathe. Pushkar is also significant for its Gurdwaras for Guru Nanak and Guru Gobind Singh. One of the bathing ghats is called Gobind ghat built by the Marathas in the memory of Guru Gobind Singh.
Pushkar is famous for its annual fair (Pushkar Camel Fair) featuring a trading fete of cattle, horses and camels. It is held over seven days in autumn marking Kartika Purnima according to the Hindu calendar (Kartik (month), October or November). It attracts nearly 200,000 people. In 1998, Pushkar hosted about 1 million domestic (95%) and international tourists over the year.
Pushkar is one of five pilgrimage sites for devout Hindus. There are 52 ghats in Pushkar Lake. Ghandi's ashes were strewn here.
Pushkar is located eighty miles southwest of Jaipur in Rajasthan, India. It is surrounded on three sides by hills and on the fourth by the edge of the Marusthali Desert. Fifty thousand camels, cattle and their owners come together during the full moon week in October or November to celebrate Kartik Poornima or Tripuri Poornima.
The Imperial Gazetteer of India reported 100,000 in attendance in 1909. Today, that number is 250,000. The fair has rides, dancers, folk music, magic shows, and horse and camel races. There are stalls to sell finery and jewelry for camels, and humans. There are stalls to sell clothing, spices, sugar cane, mobile phones, and anything imaginable. This little village of 15,000 becomes the center of camel, horse, and cattle trading for five days every year.
Walking around on the Pushkar Camel Fair in India is absolutely an overwhelming experience. Once you are surrounded by thousands of camels and their traders it is as if you have entered another world. There are so many beautiful animals, bright colours and interesting faces that you just don't know where to look. But when you get a little used to the chaos, you will find plenty of amazing photo opportunities.
