My first pumpkin carving (other than the triangle-eyed ones I did as a kid). Of course my first one was of me cause I'm a friggin narcissist.

Mini Pumpkin, Cherry and Apple Empanadas prior to baking... They came out delicious!!

Never remember what pumpkin cheesecake recipe I used last time so...

Pecan crust:

1 1/2 c flour

1 stick butter

1/3 c brown sugar ? or more. Taste it.

1/3 c finely chopped pecans

salt, cinnamon, ginger

Bake.

Cheese part

24 oz cream cheese

1 c + sugar (brown and white)

3 eggs + 1 yolk or 2 yolks

1/2 c sour cream

1 1/2 c pumpkin

2 T flour (not really necessary)

2 t cinnamon

1 t ginger

mucho nutmeg

So, my first attempt at pumpkin carving didn't turn out wonderful. But it didn't completely flop.
