I veganized and added to this recipe from Sashertootie who took it from allrecipes.com:
1 cup vegetable margarine
1 cup packed brown sugar
1 cup raw sugar
Egg Replacer for 4 eggs
1 1/2 cups all-purpose flour
2 teaspoon baking powder
1/2 teaspoon salt
2 cups peeled and finely shredded Garnet Yam
1 tablespoon orange juice
2 tablespoons pineapple juice
2 tablespoons light rum
1/2 cup Craisins
Confectioners' sugar for dusting
1. Preheat the oven to 350 degrees F Grease a 9x13 inch baking dish.
In a large bowl, cream together the margarine, brown sugar, and raw sugar until smooth. Beat in the egg replacer a little at a time, then stir in the rum, pineapple and orange juice. Combine the flour, baking powder, and salt; stir into the batter just until blended. Fold in the shredded yam and craisins. Spread the batter evenly in the greased baking dish.
Bake 1 hour or until done.
Cut.
