Rotterdam:
Black Smoke in Rotterdam focuses on open-fire barbecue. It occupies a unique location in the monumental Van Nelle Factory, a UNESCO World Heritage Site. The restaurant's industrial decor is fitting for the location. Guests can sit at the "Hot Seats" right next to the open kitchen, where they can watch the pitmasters at work.
The restaurant specializes in "Hell's Kitchen"—instead of traditional cooking methods, everything is prepared over an open flame. The kitchen is equipped with American smokers, South American asado grills, Indian tandoori ovens, and Japanese hibachi grills. There are no gas knobs, only wood and coal to control the temperature. The bar is also known for its creative cocktails.

Pitmasters all have their own "secrets" for preparing meat, some will even use a binder on pork ribs. Some would rather wash their eyes in the hottest pepper sauce available. Binders serve two purposes. The first purpose is to provide a level of moisture to the meat. Another purpose is to help seasoning stick to the meat.
There are as many choices for binders as you can think of. Some of the more common choices for binders are mustard, duck fat, liquid smoke, honey, or fruit juices. Again, these are only a few of the choices. You can use anything pleasing to your palate, any viscosity, any flavor. Keeping in mind that a binder should help rub sticks to meat, I wouldn't use anything too liquidly because it may run off when turning.
When using a binder on pork ribs, I season the meat with a mild dusting of my favorite rub black dynamite. Next comes a liberal coating of mustard followed by another dusting of rub. The family joke is they look like they have measles.

The 12th annual Big Apple Barbecue Block Party (BABBP) rolls into town this coming weekend, bringing pitmasters and barbecue styles from across the nation to Manhattan. Started way back in 2002 by Danny Meyer and erstwhile Blue Smoke pitmaster Kenny Callaghan, the event has had a seminal impact on barbecue in the city, giving many New Yorkers their first taste of authentic barbecue. This year the lineup includes pitmasters from eight states as well as an unprecedented number of local participants.
