I had a lot of crushed pineapple leftover from 1406 Thanksgiving so half of it went toward these adorable little cakes. And, at only about 50 calories each, why not indulge? These are light and airy and perfect with a little powdered sugar sprinkled on top!

happy valentine's day. this is from a pineapple upside-down cake that we made yesterday--i got creative with the maraschino cherries. mmm...think i'll go have a piece now.

What is something you did with your camera or editing that made this photograph successful? i edited the background to be darker so the object can stand out better.
What is one Element of Design that you see in this photograph? i see texture on the outside skin of the pineapple.
What is one Principle of Design that you see in this photograph? the skin always looks like a pattern.
Why do you like this photograph so much? i love everything about this photograph, the stand that the object is standing on is perfect.

Pineapple (Ananas comosus)
The fruit is known as nenas among the Malays, a name derived from its scientific name ananas. The Malaysian pineapple has come a long way since it was first introduced from South America. Although there are many varieties of pineapples, the most important commercial varieties are the nenas hijau (green pineapaple), nenas merah (red pineapple), nenas Sarawak and nenas Morris. The last two are for raw consumption while the former are meant for canning. The Malaysian pineapple can be made into a refreshing drink, used in fruit cocktail and made into preserves and jam.

This is the pineapple I grew in Tallahassee, Florida from the cut off top of a fresh pineapple. I have had the plant for 2 years. We noticed the beginnings of the pineapple in March 2005 and harvested it on Sept. 5, 2005. It was slightly larger than my hand. This is the second time I have grown pineapples. I should get 2 more harvest from the original plant and in two years a pineapple from the top I havested this time. The plant is the pineapple the fruit is called a ratoon.

I was so pleased with how the shot came out that I send it via email off to Kassondra at Flax 4 Life, and she agreed we should shoot the whole line together!
Here's a larger version of my fav from the shoot... Pineapple Coconut with Ginger, Kassy calls them Hawaiian... they smell wonderful, though my allergies will not allow me to partake.
We just missed the annual Pineapple Festival on Eleuthera - but we sure enjoyed the leftovers. I've never had such tender and sweet pineapple before.
I had a need to bake a Pineapple Upsidedown Cake after watching an episode of Bewitched where Samantha didn't know how to make one when she met Darren's mother for the 1st time. Aunt Clara saved the day and made a perfect one!
