I love the pineapple cakes from SunnyHills - to me, they are the official souvenir of Taiwan (pineapple cakes in general, not necessarily the SunnyHills ones). In the past, I've gone in, bought my treats, then exited to my waiting cab. Took a seat this time for a cake and a cup of tea.

One of my friends was kind enough to bring these pineapple cakes back from her Taipei trip for me to eat. Did I mention I LOVE food souvenirs?!
The exterior is like a buttery shortbread while the filling is dried sweet pineapple.

Ingredients
1/2 cup or 1 stick of butter
1 1/2 cups light brown sugar
1 (20 ounce) can crushed pineapple (drain & save the pineapple juice)
jar maraschino cherries
1 (18.25 ounce) package Pillsbury yellow cake mix
Chopped Pecans (optional)
Directions
Melt the butter over medium high heat in the iron skillet. Remove from the heat and sprinkle the brown sugar evenly to cover the butter. Next, scatter the crushed pineapple all over the butter and brown sugar. Place maraschino cherries on different sections of the pineapple. Scatter chopped pecans. Prepare the cake mix as directed by the manufacturer, substitute some of the pineapple juice for some of the liquid in the directions. Pour the batter over the pineapple/cherry layer.
Bake as directed by the cake mix directions. Cool for 10 minutes, then carefully turn out onto a plate. Do not let the cake cool too much or it will be stuck to the pan.
A pineapple upside-down cake to celebrate the first UCSA board meeting! This family recipe is actually not very difficult, but I nearly failed it the first time I made it, partly because of a bad oven(!). The recipe enables you to practice your caramel skills and to surprise your guests with pineapple, which is not one of the most common fruits to use in cakes. The recipe is my mum’s, contact me if you want me to send it to you!
When I was a child, I wasn't fond of pineapple cake. Then again, the US bought pineapple cakes back then can't come anywhere close to the reknowned brands in Taiwan, which this is one of. And maaaaan is it good.
