No oil, no butter, super moist and very easy to make.
2 cups flour
1 1/2 cups sugar
2 eggs
2 tsp baking soda
1 can (20oz) crushed pineapple with juice
1 cup minced nuts..I used almonds
Mix all ingredients and bake at 350F for 45 minutes in a 9x13 pan
Sprinkle with icing sugar when cool

I have made this with and without the cream cheese icing and its delicious both ways...
Please read the notes after the recipe before you try it ...

CAKE:
2 c sugar
2/3 c vegetable oil
2 lg eggs
1 can crushed pineapple (20 oz can) in its own juice or heavy syrup( I used heavy syrup) DO NOT DRAIN..
2 c all purpose flour
1 tsp baking soda
1 tsp salt
1/2 C- nuts( I left out )
ICING:
1 pkg cream cheese, softened (8 oz)
1 stk margarine or butter, softened
1 tsp vanilla extract
2-3 c powdered sugar(I used maybe 2-1/2 cups since I wanted a softer gooey cream cheese icing on this cake)
Directions
1. For the cake: Mix ingredients together by hand and pour into a lightly greased 13x9 baking pan.
2. Bake at 350 degrees for 40 -50 minutes (cake may appear underdone because it is so moist). You want it baked until just done but not uncooked it will slightly brown on top
3. Remove cake from oven and cool completely before adding the icing.
4. For the icing: Beat the cream cheese and margarine or butter together. Add vanilla. Gradually add the powdered sugar, beating between each addition until smooth.
5. Spread on cooled cake. Refrigerate any leftovers or before serving if not serving until later.
NOTES>>>>This seems to bake at somewhat different times each time it's made so please make sure it's done but not over done as it's a super moist cake!
You must know your oven on this one !!
If it's to under cooked it will fall in the middle as it cools and be doughy in the center.
The texture of this cake has a coarse sticky sponge-like crumb. It is very rustic and may remind one of a less dense fruit cake. It is very different than other cake textures!
Homemade yellow butter cake with chocolate ganache filling, and white chocolate buttercream icing. The pineapple was made from homemade chocolate rice krispy treats (recipe below) and iced with white chocolate buttercream.
To make White Chocolate Rice Krispy treats replace 1/2 cup (6 oz) with Bakers, Guittard Choc-Au-Lait, or Merckens white chocolate. Any brand that contains cocoa butter and not oil. This recipe taste so much better than the store bought.

Recipe for Chocolate Rice Krispy Treats:
3 tbs real unsalted butter
2 cups marshmallows (brand name)
3 cups rice krispies cereal
1/2 (6oz) bag of chocolate wafers ( Peters or Merchens)
3/4 confectioners sugar ( powedered sugar)
Melt butter in large bowl, melt chocolate in 30 second intervals stirring welling after each time. Add butter and chocolate together. Melt marshmallows for 60 seconds, stir well. Add butter, chocolate, and confectioners sugar to marshmallows, stir well.
After mixing all together it is best to add this into the pan you are using while it is still warm. Lay saran wrap on the pan first or spray so that the treats will not stick.
Great to place into Wilton Bear Pan, any 3-D pan. Adding a few good coats of chocolate coating will cover the lumps well. This will give you a smooth finish to cover with fondant, chocolate paste, etc.

The pineapple house and the drum board are covered with fondant and then painted with edible gel coloring. Edible decorations are than added to complete the look. Spongebob and Patrick figurines are hand molded out of edible sugar paste (fondant and gum paste).
A piece of this cake should be three times this size, at minimum.

Maraschino cherries are soaked in the petroleum derivative "FD&C Red 40" and corn syrup and are unhealthy, but pineapple slices are a good source of manganese so it all cancels out somewhat.
