Pico De Gallo, simple to make, refreshing salad? condiment? Accoutrement? to any number of Latin dishes.
This is made using fresh cilantro and roma tomatoes I simply plucked from my garden, lime juice, jalepeno, salt, and onions. Fantastic!

Pico De Gallo's tamale was good, but not great. While we did order the smaller version, there wasn't much filling yet plenty of corn meal. The refried beans were some of the best we've had. We LOVE #picodegallo and finally found the perfect recipe for #canning some to enjoy through the winter months. During the summer we can enjoy #freshpico whenever we want since we grow our own tomatoes, peppers and onions. But #preserving is a great way to enjoy these bounties year round. Otherwise known as pork tacos. The recipe was in last month's issue of Everyday Food magazine. I did add a lot more toppings to these than the recipe called for...but where's the harm in that?
A tasty shrimp soup I made to go with my shrimp soft taco. I threw the remaining shrimp leftover that Laura pan cooked in onions and seasonings, a ton of Pico de Gallo salsa, and misc seasonings. I had some black pepper water crackers to go with it, and a sweet green tea I made up last night for the grilling at Josh's house.
The key component was the chipotle pepper seasoning in cube form, though I used some other good stuff as well. The oil you see is some of the olive oil used to cook the chicken and onions originally.

I made fresh Pico de Gallo today and it was so good. Seriously, the aromas alone when making this is almost enough to satisfy. I actually went to the grocery store today and got all the ingredients to make pico de gallo. It is one of the easiest things to make on earth, but I don’t really spend much time in the kitchen, so this deserves a blog post.
I threw this together to go with the carnitas I made for dinner. So simple and delicious & it was the first use of the cilantro I have growing on the deck.

Rice bowls have become one of the essential dish for any bistro/cafe in Singapore these days, building upon the idea of Japanese Dons, but fusing it with local touches at times.
Not sure where the special sauce went to....was it that yellow dollop in the photo? Whatever it was, it was too little to be significant perhaps....?
The pan-fried salmon was a tad on the over-done dried side unfortunately and I didn't quite enjoy pairing pan-fried salmon with kimchi - this combo seems to draw out the earthiness of these ingredients - instead preferring perhaps pickled radishes or pickled ginger to keep to the Japanese theme instead for some brightness....or deviating, maybe even some western-style pickled gherkins? Local Achar would work too I reckon.
