Once standing on 103 Tam Kung Road (K.I.L. 4046), this small factory had been treating fresh milk from cows by pasteurize process to kill TB germs etc. in the early days. It was left derelict for many years due to unknown reasons.

 

Recent redevelopment of the adjoining lots had triggered off its value in contributing to a combined development plan, the unique plant was finally demolished in October 2009.

Thanks to Dick for letting me take photos in his shop. This antique store is packed with all sorts of fascinating American history. Dick told me that they have been open for nearly 40 years.

 

Every time I walk into this antique store I like to watch reactions to this type of merchandise. I think it is important that Elaine and Dick preserve this sort of Americana to show current and future generations how racism used to be an acceptable norm in the United States. If a corporation where to market "Chocolate Eyes Drinks" today they would be publicly harranged. If you need a modern day example, just look at how many advertisers pulled their ads off of Glenn Beck's show after his inflamatory and racially charged rhetoric.

Holland is famous of it's cheese production. A complete classic Dutch cheese weighes some 12 kilogrammes. Cheese consists of proteins and fat from milk, usually the milk of cows, buffalo, goats, or sheep. It is produced by coagulation of the milk protein casein. Typically, the milk is acidified and addition of the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have molds on the rind or throughout. Most cheeses melt at cooking temperature.

 

Hundreds of types of cheese are produced. Their styles, textures and flavors depend on the origin of the milk (including the animal's diet), whether they have been pasteurized, the butterfat content, the bacteria and mold, the processing, and aging. Herbs, spices, or wood smoke may be used as flavoring agents.

It's now been roughly 6 months since I started this project making home-made vinegar, and now have enough of it to start bottling it a little bit at a time. This is important since the acetobacter, after having initially consumed the alcohol and conveted it into acetic acid, will eventually oxidize the acetic acid to form carbon dioxide and water if left on its own, weakening the resulting vinegar.

 

So I bottled it today, and the lack of oxygen should kill the acetobacter and stop the entire process. The alternative is to pasteurize it, which may harm the resulting flavor. In the bottle it will begin its slow aging process, after which it should mellow out quite a bit.

 

This bottle was filled with the "fresh" vinegar from the vinegar crock, which I replenished with more than an equivalent amount of leftover red wine. The vinegar crock will continue to produce fresh vinegar, dropping in acidity a bit with each new addition of wine, only to reacidify as it consumes the added alcohol. In this manner, and as the total volume in the vinegar crock grows, its acidity will fluctuate less and less, and I will be able to draw off yet another bottle worth of vinegar to age in due time.

 

Actually I had already started using the fresh vinegar straight from the vinegar crock; it is stronger than what you can commercially find, but more flavorful as well!

George Frederick Hilderbrand ( Fred) . I bought two of these Hildebrand milk caps on eBay almost a year ago. I was talking to David Hildebrand ( see baby in photo) who had already done an article on his family farm and he sent me these wonderful photos. The article dealt with the history of the farm but not the dairy business. The Hildebrands bought an existing farm in 1929 for $7000 and in 1934 added more land and built the big barn, which is probably when they started selling milk in bottles. David has a faint memory from when he was about three in the early 1940's of his father and grandfather bottling milk in the milk house. He believes they stopped soon after that as they were selling raw milk and the pasteurizing laws were clamping down on this. They did continue their " egg run " delivering eggs , mostly to the same people they had delivered their milk to. After that they sold their milk to Thistle Dairy of Fredericton. He doesn't think the bottles were marked in anyway .

The enormous 80 pound wheels of Laguiole are made from unpasteurized cow's milk and aged for 6-12 months. It is produced by a sole cooperative, Jeune Montagne, on the Aubrac plateau and was given AOC status in 1961. The cheese takes it's name from the village of Laguiole, where the famous knives are also made. It's texture is very moist, but crumbly and the flavor is buttery, tangy and rich.

 

The little ash covered Pyramide de Chèvre was pure bliss! Made of unpasteurized goat's milk, it's chalky white, nutty interior melts in your mouth and turned the red wine we were drinking into ambrosia. It's size and shape resembles a Valençay, but was made locally by a fromager here in the Languedoc.

 

Brique de Brebis, made by Lou Pérac brand, is pure sheep's milk cheese shaped into a little brick. It is a pasteurized cheese from the Aveyron and available in most major supermarchés. The creamy interior oozes out when you cut through it's edible rind, making it perfect for spreading on bread.

St. André is a soft ripened triple crème cheese. This means that the butterfat content is around 75%. This high butterfat content is achieved by adding cream to the already rich milk. The cheese is carefully placed in draining molds and lightly pressed, then aged for 3 weeks with the help of it's white surface mold.

Preferred Citation note 96PA101: [identification of item], Collection on Lafayette Studios, University of Kentucky Archives. Biographical/Historical note Robert J. "Bob" Long and his wife, Ida Nelson Long, opened Lafayette Studios in 1923, operating it out of the New Johns Building at 108 Walnut Street (now Martin Luther King Boulevard) in Lexington, Kentucky. Bob and Ida Long already had a few years experience in still and moving image photography and Bob Long worked as a projectionist at the newly opened Kentucky Theatre on East Main Street. In 1925, they expanded their business and moved the studio space to 311 West Main Street. By the early 1930s, the Longs bought out their main competitor, Starman Studios. Around this time, Bob Long left his job at the Kentucky Theatre and focused on building Lafayette Studios into Lexington's most successful photographic studio. In the late 1930s, the Longs moved again, this time to the Starman Studio space, at 301 West Main Street. By 1941, they moved again, settling into 141-143 North Limestone; it was to be the studio's home until 1984. In 1959, the Longs sold Lafayette Studios to Chester Wainscott and Goy Goforth and retired. After 1962, Wainscott became the sole owner and operator until the studio closed in 1985 at its final location of 111 South Limestone. Scope and Contents note This finding aid lists the 1930s images produced by Lafayette Studios (6,543 items; dated 1930-1939). The Lafayette Studios photographs consists of 17,269 photographic negatives (52.0 cubic feet, 115 boxes) in the 8x10, 5x7, and 4x5 formats and both nitrate and acetate base materials are present. Scenes of commercial real estate in downtown Lexington predominate, but civil and social groups are represented, as well as photographic orders filled at the request of private individuals that cover a wide array of subject matter. Arrangement note The collection is arranged by Lafayette Studios-assigned invoice number, listed in the guide as the item number for each image. The numbers are in a rough chronological order. Multiple images in an invoice group are represented by the invoice number, followed by an alphabetical qualifier: a, b, c, etc. The numbers are not contiguous and the many gaps in the collection represent missing invoice/work orders. University of Kentucky Archives has no information on the content or fate of the missing invoice groups. Most invoice groups (represented as whole numbers) contain more than one image. Curds are a dairy product obtained by curdling (coagulating) milk with rennet or any edible acidic substance such as lemon juice or vinegar, and then allowing it to set. The increased acidity causes the milk proteins (casein) to tangle into solid masses, or curds. The remaining liquid, which contains only whey proteins, is the whey. In cow's milk, 80% of the proteins are caseins. Milk that has been left to sour (raw milk alone or pasteurized milk with added lactic acid bacteria or yeast) will also naturally produce curds, and sour milk cheese is produced this way. Producing cheese curds is the one of the first steps in most cheesemaking, the curds are pressed and drained to varying amounts for different styles of cheese and different secondary agents (molds for blue cheeses, etc.) are introduced before the desired aging finishes the cheese.

 

In the Indian subcontinent, the words "curd" or "curds" are used to refer to "yogurt". In the Indian subcontinent, another word "paneer" is used to denote a dairy product discussed in this article.

 

USES

Curd products vary by region and include cottage cheese, curd cheese (both curdled by bacteria and sometimes also rennet), farmer cheese, pot cheese, queso blanco, and Indian paneer (milk curdled with lime juice). The word can also refer to a non-dairy substance of similar appearance or consistency, though in these cases a modifier or the word curdled is generally used.

 

In England, curds produced from the use of rennet are referred to as junket, with true curds and whey only occurring from the natural separation of milk due to its environment (temperature, acidity).

 

Cheese curds, drained of the whey and served without further processing or aging, are popular in some French-speaking regions of Canada, such as Quebec, parts of Ontario, and Atlantic Canada. In Quebec, Eastern Ontario and the Eastern provinces such as New Brunswick, cheese curds are popularly served with french fries and gravy as poutine. In some parts of the U.S., especially in Wisconsin, they are breaded and fried, or are eaten straight.

 

In Turkey, curds are called keş and are very commonly used as an aphrodisiac and for breakfast served on fried bread and are also eaten with macaroni in the provinces of Bolu and Zonguldak.

 

In Mexico, the chongos zamoranos is a dessert prepared with milk curdled with sugar and cinnamon.

 

FORMATION

Lactobacillus is a kind of bacteria which can convert a sugar into an acid by means of fermentation. Milk contains a sugar called lactose, a disaccharide (compound sugar) made by the glycosidic bonding between glucose and galactose (monosaccharides). When milk is heated to a temperature of 30-40 °C and a small amount of old curd added to it, the lactobacillus in that curd sample starts to grow. These convert the lactose into lactic acid, which imparts the sour taste to curd.

dsc00065, Cheddar Cheese Sauce Mix

Made some goat cheese tonight, and turned it into open-faced sandwiches for dinner tonight. The sandwiches are some toasted multigrain bread with a healthy schmear of the goat cheese, topped with some spicy pickled red bell pepper, avocado, tomato, and salt and pepper. These went great with the last of the bottle of pinot grigio I opened last night.

 

Here's the recipe for the goat cheese.

 

Ingredients

1 qt. goats milk (I used full-fat pasteurized milk, I try to avoid the ultrapasteurized stuff mostly because the majority of recipes say to)

1/4 c. fresh lemon juice

heavy pinch salt

 

Directions

Put the milk into a medium saucepan, and heat over low/medium-low heat until it reaches 180°F. This will take a good 10-15 minutes. Remove from heat, and stir in the lemon juice to curdle the milk (it'll happen very quickly, and the curds will be very small.)

 

Line a colander with 3-4 layers of cheesecloth. Place over a large bowl, and ladle in the curdled milk gently, letting the whey (the clear, yellowish liquid) drip into the bowl. Once all of the milk has been ladled in, form a bundle from the cheesecloth, squeeze gently to force out more of the whey, then tie off the corners of the bundle and suspend it over a bowl with a chopstick or wooden spoon. Let whey drain for about 2 hours.

 

After the whey is drained off, remove the cheese from the cheesecloth, add salt (and optionally some herbs; I added 2 tbl. of chopped chives to this batch) and stir to combine.

 

I typically use this as a spreadable cheese, but it will hold its shape if you form it into a log or some other mold. Store in the refrigerator for up to a week to ten days, if it lasts that long.
