DESCRIPTION
A classic dessert takes an easy turn with Pillsbury® refrigerated pie crust.
INGREDIENTS
1 Pillsbury® refrigerated pie crust (from 15-oz box), softened as directed on box
1 package unflavored gelatin
1 cup sugar
1/2 cup fresh lime juice
1/4 cup water
4 pasteurized eggs, separated
1 teaspoon grated lime peel
2 drops green food color
1 cup whipping (heavy) cream
Sweetened whipped cream, if desired
DIRECTIONS
1. Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie pan. Bake 9 to 11 minutes or until lightly browned. Cool completely, about 30 minutes.
2. Meanwhile, in 1-quart saucepan, combine gelatin, 1/2 cup of the sugar, the lime juice, water and egg yolks. Cook over medium heat 6 to 7 minutes, stirring constantly, until mixture boils and thickens slightly. Remove from heat; stir in lime peel and food color. Pour mixture into large bowl. Refrigerate until mixture mounds slightly, about 45 minutes.
3. In large bowl, beat egg whites with electric mixer on high speed until soft peaks form. Gradually add remaining 1/2 cup sugar, beating until stiff peaks form. In small bowl, beat whipping cream until stiff peaks form.
4. Gently stir egg whites and whipped cream into cooled lime mixture. Spoon into cooled baked shell. Refrigerate until firm, about 2 hours. Serve topped with sweetened whipped cream. Store in refrigerator.

( or past your eyes ! ha ha ) Another close encounter in the New Forest . These two cows were head to head for ages . The herd was very lively when we arrived yesterday possibly due to dogs being walked . We found the New Forest full of visitors on this Mother's Day.
On my way back from Blomidon Provincial Park this past summer I couldn't help but notice this pastoral (or pasteurized) scene.

Lemon-Lime Popsicle:
Ingredients:
-Lemons
-Limes
-Juicer
-Dixie cups or ice cube tray(for pallet cleanser)
-Popsicle sticks or tooth picks(for pallet cleanser)
-Aluminum Foil
Directions:
Take the lemons and the limes and juice them. Since there is no sugar in the recipe make sure you use two parts lime for every one part lemon so its not too sour. Mix the juices together until well blended. Next take the juice and pour them into either the dixie cups or the ice cube tray. Cover them with aluminum foil so that you can stick your popsicle sticks or tooth picks in them. Now freeze them over night or until they are completely frozen.
Whether you are just looking for a tasty summer-time treat or looking for a way to cut back on food intake popsicles are the way to go. Both fun to make and fun to eat everyone enjoys a popsicle now and then. Have fun with your creations and remember sometime its good to let your minds roam free and try new things.

THIS LITTLE STORE IN DRESDEN is the “World’s Most Beautiful Milk Shop,” an official title bestowed upon it by the Guinness Book of World Records. That claim might be hard to verify, but there can’t be many contenders rivaling the sumptuousness of Pfunds Molkerei.
The milk shop was opened in 1880 by Paul Gustav Leander Pfund, and was fortunate to survive the heavy bombing during World War II that destroyed most of the city. Little has changed inside the shop since then, although much has changed outside, namely the inventions of refrigeration and pasteurization that have made milk easier to keep at home.
But today Dresdeners aren’t just walking into this splendid dairy shop for a tall glass of milk. Now, they come for the atmosphere. The entire interior is decorated with hand-painted Villeroy & Boch ceramic tiles. The shop is covered floor to ceiling with dancing angels, chubby babies, cows, and woodland creatures. It’s all accented in gold and blue, and lit by chandeliers, which might delude some into thinking this is a luxury jewelry shop, rather than one selling milk.
The wares inside haven’t changed much either. Pfunds Molkerei still sells milk and boasts one of the country’s finest cheese selections (though they were forced to limit it to a mere three state-sanctioned brands during the socialist years of East Germany). The cafe upstairs sells dairy-based delicacies, like tortellini with spinach and grated feta or pork in pepper cream sauce. The shop also offers chocolates, milk soaps, and cream-based liquors, though it can be hard to reach them through the hordes of German milk-lovers.

I wonder, the sunset have special meaning and massage for me. Suddenly I was noticed and see this sunset I pasteurized here to day , I saw the glue form my balcony and rush to my roof top , and Ironically I found the Bird was enjoying the twilight on to the other roof top, while I shoot the first one she was not noticed , but when I attempt for another and b4 she fly I click the second one,
Following the roof top on other side I noticed the other bird at a Far distance , also enjoying the twilight, I click that too, Although it has no meaning to some one , but when I related my emotion with Sajan’s twilight I find the nature has the massage for all creations , Be a Human / Animal or a bird, Nature is Universal to the other part of nature, there lies the existence of our creator, who created both The Nature and Habitant There in

Beautiful illustrations of various French cheeses as featured in Cook's Illustrated magazine/March & April 2007 issue. Here's to give you a little idea of what they are...
Bleu des Basques Brebis - is an artisan sheep’s milk blue cheese made in the Pyrenées mountains, a region of the French Basque country (near the border of Portugal.) These verdant hills here are full of the wildflowers and fresh grass that give the milk its complexity, subtlety, and lightness.
Crottin de Champcol - This is a simple pasteurized goat cheese from the Loire. (Did you know that "Crottin" in French means dung as in manure? The explanation is that old "Crottin" gets harder and browner and tends to look like horse dung or dung in general.)
Tome de Savoie - often made with skim milk after the cream has been used to make butter. It is a pleasant and unpretentious cheese with an approachable, mild flavor. This typical cheese from the Alps was originally made as a result to the lack of milk used for the Beaufort or other Gruyeres. They are produced in large flat wheels.
Valençay - named after a town in central France, it is shaped like a pyramid with the top cut off. Originally, the shape was perfectly pyramidal. Legend says...coming back from a calamitous campaign in Egypt, Napoléon stopped in Valençay. He saw the cheese and with anger took his sword to chop the top off. Valencay has a soft and delicate taste with nutty flavor.
Camembert - made from unpasteurized cow's milk, and is ripened by the moulds Penicillium candida and Penicillium camemberti for at least three weeks. Originating from the Normandy region, when fresh, it is quite crumbly and relatively hard, but it characteristically ripens and becomes more runny and strongly flavored as it ages.
Roquefort - a.k.a. the "king of cheeses" as many proclaim, Roquefort is at least one of the oldest and best known in the world. Roquefort has a creamy-rich texture and pungent, piquant, somewhat salty flavor. The name "Roquefort" is protected by law from imitators. For example, salad dressings made from blue cheese other than Roquefort cannot be labeled "Roquefort dressing."
Brie de Meaux - a nice white and sweet cheese with a slight greyish tinge under crusty white mould; very soft and savory with a hint of ammonia. The white mouldy skin is tasteless and edible.
Morbier - a semi-soft cows' milk cheese named after the small village of Morbier in Franche-Comté. It is ivory colored, soft and slightly elastic, and is immediately recognizable by the black layer of ashes separating it horizontally in the middle. It has a rind (skin) that is yellowish, moist, and leathery. The bottom layer consists of the morning milk and the upper layer is made of the evening milk.
Comte - a cooked and pressed cow's milk cheese, made only from the milk of the Montbeliard cow. It is the first French AOC (label of origin) cheese, guaranteeing the quality of the cheese. It is typically described as salty, mild, and fruity. Some cheese have strong hazelnut flavors, others have subtle hints of nutmeg. Paired well with either dry white or light red wines.
Epoisses (de Bourgogne) - a classic cow's milk cheese originating from Burgundy and has been made in the small town of Epoisses since the late 1700s. In order to develop the characteristic dark orange rind, this strong smelling cheese is washed with brine for several weeks then finished with wine or brandy. It's one of those stinky cheeses where its bark is worse than its bite.
St. Agur - a cow's milk cheese and fairly young, which yields a nice, smooth, creamy and mild flavor, something between a Gorgonzola and Roquefort (not as bold as an in-your-face Gorgonzola!) Perfect spread on pear or apple slices, or just on some French bread or raisin bread. Because of its creamy nature, it melts well in sauces or just on top of chops.
Wine and Juice Factory and Beer Factory were founded in 1925 and 1933 respectively. Pasteurized Milk Factory, yogurt, butter and cheese plants were opened. Ice Factory was able to produce 4 tonnes of ice daily.
The first zoo in Ankara was opened in the Atatürk Forest Farm. In 1933, they began to display some animals on a small garden behind the building of Farm Directorate.

Very soon, you will see this new look extend to the bottles on all merridale ciders, from Traditional and House, to Scrumpy and Cyser. Second and most noticeable is the glass bottle. While many ciders are pasteurized in minutes or even seconds at high heat, Merridale is pasteurizing the Monarch slowly taking closer to half an hour per bottle.

"Huangjiu, translated as yellow wine, is a type of Chinese alcoholic beverage made from water, cereal grains such as rice, sorghum, millet, or wheat and a jiuqu starter culture. Unlike baijiu, such liquors are not distilled and contain less than 20% alcohol. Huangjiu is usually pasteurized, aged, and filtered before their final bottling for sale to consumers. Some styles are aged for as much as 20 years and sold as premium products. The various styles of huangjiu may vary in color from clear to beige, yellowish-brown, or reddish-brown. Many famous Huangjiu brands are noted for the quality of water involved in the brewing process and some consider it to be the most important ingredient."

♨ FIRST: "Tyrolean dumplings ("Knödel")"♨
RECIPE
5 old rolls
100 g smoked speck
½ onion, chopped into small pieces
1 tbsp. butter
2 eggs
¼ ltr. milk
2 tbsp. flour
2 tbsp. parsley, chopped
salt, chives
1 ¼ ltr. beef stock
Cut the bread rolls into small cubes and put them into a bowl. Cut the speck into small pieces and add to the bowl. Heat butter and roast the chopped onion. Whisk the eggs into the milk. Add salt and parsley and pour over the bread. Leave to sit for 30 minutes. Add the flour, salt and onion – and if necessary, also some milk. Wet your hands and shape the dumpling. Put them into boiling salt water and leave for approximately 15 minutes. Serve in heated beef stock and decorate with chives. (The above amount makes eight dumplings.)

NOTES:
Teroldego Rotaliano is a red wine-specific DOC of the Trentino-Alto Adige wine region, in northern Italy. The wines are made from 100% Teroldego grapes grown on the Campo Rotaliano – a flat, roughly triangular plain of the Adige Valley in northern Trentino.
Teroldego is a dark-skinned variety which produces deeply pigmented wines with an intensely fruity character. It is grown almost nowhere in the world outside the Adige valley, and has become something of an icon for Trentino's wine industry. Although the wines are rarely 'fine' wines, they are soft-styled and need little age to make them palatable. It is hard to see why Teroldego is not more widely planted in the region; it is more flavorful than Schiava (the most common red variety here) and less earthily tannic than Lagrein.
The Campo Rotaliano sits at the junction between the Adige Valley and that of the smaller Noce river, a minor tributary. The communes here are Mezzolombardo, Mezzocorona and the village of Grumo, belonging to the San Michele all'Adige commune.

Skyr is an Icelandic cultured dairy product, a type of fresh cheese that has been strained, not unlike Greek yoghurt. It is said to have originally come from Norway, brought to Iceland by the Norwegian Vikings, but is currently unique to Icelandic cuisine.
Traditionally, skyr is made with pasteurized skimmed milk and live active cultures such as Streptococcus thermophilus and Lactobacillus bulgaricus. Then, "skyr condenser" — good skyr, used to ignite bacteria growth, and rennet was added, and the milk was left to coagulate. The skyr was then strained through fabric to remove the whey, called "mysa" in Icelandic, a by-product that Icelanders used as a thirst-quenching drink. Today it is made from non-fat milk.
Skyr, in its traditional preparation, has no added flavors beyond the ingredients mentioned above. Recently, Icelandic manufacturers of skyr have added flavors such as vanilla, berry, and other flavorings common to yoghurt to the final product, to increase its appeal. Skyr-based smoothies have become very popular.
Skyr is a very popular health product in Iceland and was recently introduced to the US in select Mid-Atlantic and New England gourmet stores. Varying slightly between brands, unflavored skyr is roughly 12% protein, 3% carbohydrate, and 0.5% fat. It is high in calcium.
Skyr may be used in a traditional Icelandic dish called hræringur (meaning "stirred" or "made by stirring") which consists of roughly equal amounts of skyr and porridge. It is often mixed with jam or fruit for a dessert, or with cereals for breakfast. Children often like brown sugar sprinkled on top. It will keep without refrigeration, making it a good high-protein food to take with you on a trip.

LAMMING MILLS is a railway point and former unincorporated community located on the Canadian National Railway line just northwest of McBride, British Columbia in the Cariboo Land District. It stands near a bend of the upper Fraser River and is connected by road to the Highway 16 section of the Yellowhead Highway. It was one of the oldest settlements in the Robson Valley. The site was originally established circa 1915 as the Mile 5.4 Cariboo Siding of the Grand Trunk Pacific Railway. It was relocated two miles northwest around 1920 to service a pole yard, and renamed "Craibenn Station" after railway section foreman D.A. Craig and yard owner J. Bennett. In 1943, brothers and sawmill owners Oscar and Ernie Lamming came to the McBride area and established a portable sawmill at the siding. By 1945 a small town had developed, occupied by the mill workers and their families, and a post office opened in April of that year which was known as the "LAMMING MILLS Post Office". The portable mill was replaced by a more permanent structure in 1946, and on 12 June 1946 the Canadian National Railway renamed the station to "LAMMING MILLS", with the name being adopted by the settlement. By the 1950s the town had a population of approximately 250 people living in 60 homes, with a church, school, community hall and general store also having been established. It declined over the next decade, however, with the mill closing in 1966 and most residents leaving following the closure of the post office on 31 December 1969.
Sawmill operators Ernest (1903-1984) and Oscar (1898-1991) Lamming moved to the Robson Valley in 1943. At its peak of production, around 1960, their mill shipped about 10 million board feet of lumber a year. Many of the 80-man crew lived in the nearby townsite, which grew to a population of about 250. It had its own school, church, post office (open from 1945 to 1969), community hall, and company store. Ever since they were boys in Sault St. Marie, Ontario, the Lamming brothers had worked in their father’s sawmill. In 1934 they started their own mill at Rocky Mountain House, Alberta. When timber became scarce, they were attracted to the Robson Valley by Adrian Monroe, who wanted to sell the logs and timber that remained after his mill burned down. Until 1946, a portable mill was used at various locations. In 1945 a new mill was started at Mile 5.4, with a six-car siding. The Canadian National Railway agent called the siding Lamming Mills in imitation of other mill towns. At one time, the brothers had three sawmills operating, at Dome Creek, Lamco Road, and Lamming Mills. Ernie worked at the sawmill until it closed in 1966, and for three years after ran a small mill next to Zeidler’s. In addition to the sawmills, Ernie and Oscar ran a hardware store, built and ran the Alpine Cafe (destroyed by fire), started the Lamming Garage (now the Village Esso), operated the LSL (Lamming-Stanley-Lamming) Construction Company, and ran a dairy that delivered pasteurized milk as far as Valemount. Ernie’s wife Wilma was in charge of all the office work, having in the 1950s six sets of books to keep. Oscar’s wife Nellie ran the store for years, and later was postmistress. Oscar set out to complete his first small museum at Lamming Mills as a Centennial project, and 1958 the first museum opened in a garage behind his house. In 1959 Oscar was presented with the Award of Merit as well as the Certificate of Merit, apparently from the British Columbia government. After a serious automobile accident in 1979, they returned to Canada and spent the winters in the Okanagan or on Vancouver Island. Ernie died in Kelowna after a sudden illness. As Donald Trump gets ready to return to the White House on Jan. 20, he must be prepared to tackle one issue immediately: the possibility that the spreading avian flu might mutate to enable human-to-human transmission.
I was the Biden administration’s chief science officer during Covid-19. I was a co-leader of Operation Warp Speed, which began in Mr. Trump’s first term to accelerate the development of Covid-19 vaccines. I worked on the purchase and rollout of hundreds of millions of doses and on developing antiviral treatments. One of my jobs was to assess the trajectory of the virus.
Now I am back at my job teaching at the medical school at the University of California, San Francisco. I have been monitoring the spread of bird flu, also known as H5N1, and discussing the situation with colleagues around the country. My concern is growing.
So far, there have been no reports of person-to-person spread of H5N1, though there have been at least 55 confirmed cases of bird flu in humans in the United States, almost entirely among poultry and dairy workers. Those infections are presumed to be primarily the result of contact with animals. In addition, a child in Alameda County in California with minor respiratory symptoms tested positive for H5N1 recently; it is unclear how the child became infected. There are probably other cases out there that are not being diagnosed.
All of those cases have been mild. But a teenager in British Columbia who was infected with the virus is now critically ill. In this instance, too, it is unclear how the person became infected. But the virus showed signs that it had mutated in a way that could make it easier to transmit to another person.
If this is the case, the virus might then get enough of a foothold to begin human-to-human transmission. Further mutations could evolve that would enhance attachment to human cells. Until the British Columbia case, the recent bird flu infections in humans in North America had been limited to the eyes and nasal passages. But H5N1 can become deadly when the virus attaches to the lining of the lungs in the lower respiratory tract.
This virus killed before. In 1997 an outbreak of H5N1 in poultry in Hong Kong resulted in 18 animal-to-human infections and six deaths, the first known fatal human infections. In 2003, H5N1 appeared in wild birds in Asia. Outbreaks followed in poultry and resulted in two deaths in people. As outbreaks continued to occur, the mortality rate surpassed 50 percent.
Here is where matters stand: The most recent risk assessment from the Johns Hopkins Center for Outbreak Response Innovation, issued on Nov. 19, listed the risk of infection to farm workers as high and the risk of infection to people in contact with affected farm workers and animals as moderate. The Johns Hopkins report said that “while the immediate risk to the general public and health care workers is still currently low, the long-term consequences of continued, uncontrolled transmissions presents a high risk to all populations.”
California has recently seen a significant rise in detections of H5N1 in dairy herds. Experts believe that animals at as many as half the dairy farms in the state are infected. That is why it is important to pasteurize milk, which kills the virus. (All milk sold across state lines is pasteurized; 30 states allow the in-state sale of nonpasteurized milk, which is labeled “raw.”) Two states, Colorado and Pennsylvania, have agreed to test pooled milk from all farms before pasteurization to monitor spread. Bulk milk testing should be mandatory in all states with dairy farms to determine the full extent of the infection on these farms and to allow us to contain the virus. As if to underline the importance of such a mandate, bird flu was detected in raw milk bought retail last Thursday from a dairy producer based in Fresno, Calif.
Without mandatory testing, bird flu will continue circulating at farms across the country, which substantially increases the risk that the virus mutates and evolves to allow a human-to-human transmission that will be hard to stop.
H5N1 has already shown a propensity to rapidly infect hundreds of herds and farms in the United States. Since March, 616 dairy herds in 15 states have been infected with H5N1. And since the onset of the outbreak in February 2022, H5N1 has been detected in poultry in 49 states, affecting a total of 111 million birds.
There has also been an increase in H5N1 detections in migratory and commercial birds in the European Union, Canada, Japan and South Korea, compared with 2023.
What’s also worrisome is that our arsenal to fight back might not be up to the task.
An analysis by the Centers for Disease Control and Prevention found that a mutation in people in Washington State who work as poultry cullers might reduce the effectiveness of oseltamivir, also known as Tamiflu, in treating influenza A, a type of flu that includes H5N1 and many other subtypes. And a mutation found in a recent California case could reduce the effectiveness of baloxavir marboxil, another drug used to treat influenza A.
In the case of monoclonal antibodies for use against the virus, there are none commercially available at present. These lab-produced antibodies are designed to mimic the body’s immune response and directly target the virus.
As for vaccines, there has been modest progress on candidates for mRNA vaccines, which stimulate the body’s immune system against a specific virus. The candidates could offer more effective countermeasures in response to worrisome mutations. Importantly, the companies that increased production of the mRNA vaccines during Covid-19 are developing bird flu vaccines.
Fortunately, the country already has five million doses of the influenza A (H5) vaccine on hand, and another five million doses will probably be ready by the end of the year. That is enough to cover the farmworker community. That vaccine is expected to have similar effectiveness to that of our seasonal flu vaccines, from 30 to 70 percent.
No one knows how many mutations will be required to set off human-to-human respiratory spread. That could require many mutations and may never happen. But we could also be just two or three mutations away. If the virus begins to transmit efficiently among humans, it will be very difficult to contain, according to the Johns Hopkins assessment, and “the likelihood of a pandemic is very high.”
The incoming Trump administration needs to be prepared.

The pomegranate (/ˈpɒmᵻɡrænᵻt/), botanical name Punica granatum, is a fruit-bearing deciduous shrub or small tree growing between 5 and 8 m tall.
In the Northern Hemisphere, the fruit is typically in season from September to February, and in the Southern Hemisphere from March to May. As intact arils or juice, pomegranates are used in cooking, baking, meal garnishes, juice blends, smoothies, and alcoholic beverages, such as cocktails and wine.
The pomegranate originated in the region of modern-day Iran and has been cultivated since ancient times throughout the Mediterranean region and northern India. It was introduced into America (Spanish America) in the late 16th century and California by Spanish settlers in 1769.
Today, it is widely cultivated throughout the Middle East and Caucasus region, north Africa and tropical Africa, the Indian subcontinent, Central Asia, the drier parts of southeast Asia, and parts of the Mediterranean Basin. It is also cultivated in parts of California and Arizona. In recent years, it has become more common in the commercial markets of Europe and the Western Hemisphere.
ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.
CULTIVARS
P. granatum has more than 500 named cultivars, but evidently has considerable synonymy in which the same genotype is named differently across regions of the world.[15]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.
CULTURAL HISTORY
Pomegranate is native to a region from Iran to northern India. Pomegranates have been cultivated throughout the Middle East, South Asia, and Mediterranean region for several millennia, and also thrive in the drier climates of California and Arizona.
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Jericho in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[citation needed] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian cuneiform records mention pomegranates from the mid-third millennium BC onwards.
It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.
SYMBOLISM
ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.
A pomegranate is displayed on coins from the ancient city of Side, Pamphylia.
Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.
IN THE QUR´AN
According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.
CHINA
Introduced to China during the Tang Dynasty (618-907 AD), the pomegranate (Chinese: 石榴; pinyin: shíliu) in olden times was considered an emblem of fertility and numerous progeny. This symbolism is a pun on the Chinese character 子 (zǐ) which, as well as meaning seed, also means "offspring" thus a fruit containing so many seeds is a sign of fecundity. Pictures of the ripe fruit with the seeds bursting forth were often hung in homes to bestow fertility and bless the dwelling with numerous offspring, an important facet of traditional Chinese culture.

The life of transhumance shepherds seems so idyllic, living in the great outdoors making their living in a sustainable way from the wilderness, hardy, healthy and robust individuals that are honest and hardworking. There is some truth in this, but the reality is far from easy or ideal. Shepherds make their living in two main ways, dairy products, milk and cheese and of course from the high quality fleeces shorn from their sheep. However, the only real winners are the middle men who buy these fleeces for pittance, then sell them for a much higher price to wool mills in the cities, where the end products are sold for ridiculous prices to western retailers. The retailers then make the biggest profit of all. You have to feel somewhat sorry for the shepherds when you see the difference in profit between the fleece and the jumper sold in the shop. Some shepherds would even argue that they make no profit at all which is why they live in abject poverty and are poorly educated. I would argue that the majority of shepherds are just surviving and only stay in the business as so many of them can barely read or write, so are unable to apply for better paid jobs in the cities and towns.
They really need a break and a turn in fortunes, but the story only gets worse. European Union regulations have been imposed on pastoral shepherds since Romania joined the union which require much higher standards of hygiene and packaging production, which is simply not affordable for most shepherds. This has been the final nail in the coffin for many of these proud men. For centuries shepherds have milked their sheep daily and produced cheese on site inside huts that they move when relocating to find fresh grazing. Their cheese was then sold directly to individual customers or on local markets by the shepherds or their wives, simply packed in the shaved bark of trees. The EU is trying to stop this practice on the grounds that their cheese is neither pasteurized or packaged properly, so therefore not healthy. Locals strongly disagree as they believe much of the microbes that they consume in traditionally prepared cheese actually boost their immune systems. Some shepherds are now selling their sheep milk to dairies, again for a low price where it is pasteurized, labelled and packaged in sterile conditions, but then many locals cannot afford to buy this EU approved cheese as this extra preparation increases the cost.

The pomegranate (/ˈpɒmᵻɡrænᵻt/), botanical name Punica granatum, is a fruit-bearing deciduous shrub or small tree growing between 5 and 8 m tall.
In the Northern Hemisphere, the fruit is typically in season from September to February, and in the Southern Hemisphere from March to May. As intact arils or juice, pomegranates are used in cooking, baking, meal garnishes, juice blends, smoothies, and alcoholic beverages, such as cocktails and wine.
The pomegranate originated in the region of modern-day Iran and has been cultivated since ancient times throughout the Mediterranean region and northern India. It was introduced into America (Spanish America) in the late 16th century and California by Spanish settlers in 1769.
Today, it is widely cultivated throughout the Middle East and Caucasus region, north Africa and tropical Africa, the Indian subcontinent, Central Asia, the drier parts of southeast Asia, and parts of the Mediterranean Basin. It is also cultivated in parts of California and Arizona. In recent years, it has become more common in the commercial markets of Europe and the Western Hemisphere.
ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.
CULTIVARS
P. granatum has more than 500 named cultivars, but evidently has considerable synonymy in which the same genotype is named differently across regions of the world.[15]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.
CULTURAL HISTORY
Pomegranate is native to a region from Iran to northern India. Pomegranates have been cultivated throughout the Middle East, South Asia, and Mediterranean region for several millennia, and also thrive in the drier climates of California and Arizona.
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Jericho in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[citation needed] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian cuneiform records mention pomegranates from the mid-third millennium BC onwards.
It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.

ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.

Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.

According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.
CHINA
Introduced to China during the Tang Dynasty (618-907 AD), the pomegranate (Chinese: 石榴; pinyin: shíliu) in olden times was considered an emblem of fertility and numerous progeny. This symbolism is a pun on the Chinese character 子 (zǐ) which, as well as meaning seed, also means "offspring" thus a fruit containing so many seeds is a sign of fecundity. Pictures of the ripe fruit with the seeds bursting forth were often hung in homes to bestow fertility and bless the dwelling with numerous offspring, an important facet of traditional Chinese culture.

It was a sunny morning in La Mancha, and Don Quixote
the illustrious knight without fear, sense, or a functioning compass awoke with a sudden revelation.
“Sancho!” he cried to his loyal squire, who was in the middle of trying to negotiate a breakfast egg out of a chicken.
“Today is the day we face the most cruel creatures of the Devil fire-breathing, steel clad, mechanical cows!”
Sancho Panza, who had already survived exploding windmills, talking oak trees, and one particularly aggressive goat, was less than enthusiastic.
“Señor, maybe we should just eat cheese today and stay calm. Cheese is peaceful.”
But Don Quixote could not be stopped. Armed with his rusty lance, a helmet that had once been a salad bowl, and a cape that looked suspiciously like a curtain, he mounted his faithful steed, Rocinante who was more suited for retirement than war.
They rode through the morning until they reached a large pasture. And there they stood: the “Automated Cows.”
Shiny machines, with blinking lights and a “mooo” that sounded more like “bzzz.”
In reality, it was a modern milking system installed by the local agricultural cooperative.
“Do you see them, Sancho?” Don Quixote pointed at the devices.
“These devilish beasts have replaced the poor real cows! It is our sacred duty to destroy them and restore the balance of nature!”
Sancho let out a deep sigh.
“Señor, those are machines. They only milk. They don’t fight. One of them just offered me a coffee.”
But Don Quixote was no longer listening. With a heroic cry somewhere between opera and asthma he charged.
Rocinante, surprisingly quick for a horse with back problems, galloped straight at the largest of the milking robots.
What followed was a scene of epic chaos, Don Quixote thrust his lance, got tangled in a milk hose, was slapped by a rotating brush, and landed backward in a vat of fresh milk.
Rocinante trotted along peacefully, seemingly having the time of her life.
Sancho, who had found a chair and a sandwich in the meantime, observed the spectacle and commented dryly,
“If he calls me crazy one more time, I’m pickling him in that bucket.”
Don Quixote emerged from the milk, gasping.
His armor dripped, his helmet was full of cream, and his dignity was probably lying somewhere near the cow brush.
“Sancho!” he called as he hauled himself out of the vat.
“The enemy is tough! It fights with invisible forces! I believe I’ve received a magical shower!”
“They call that pasteurization, Señor,” Sancho replied.
“I call it a miracle bath of the white dragon!” Don Quixote shouted and raised his lance triumphantly which was now nothing more than a bendy straw.
At that very moment, the farmer Ramón, owner of the field, arrived with a face full of disbelief.
“What the hell is going on here?! Who attacked my brand-new milking system?!”
“Fear not, noble citizen!” said Don Quixote proudly.
“I have freed you from the tyranny of these mechanical monsters! Cow freedom has been restored!”
Ramón looked at the steaming, tangled equipment, then at Don Quixote, then at Sancho, who was trying to pour himself a cola from a milking tube.
“You’re either a hero or a walking insurance claim,” Ramón said.
Sancho grinned. “Both. Depends on the time of day.”
In the end, Don Quixote was escorted off the pasture to the polite applause of the cows, mostly because they were terrified he might come back.
Sancho promised Ramón he would explain to his master what an electrical cable was, but honestly, he didn’t believe it himself.
And so they rode on a knight, a squire, a deeply annoyed horse, and the faint scent of whole milk in search of the next adventure.
Or at least a place where Don Quixote wouldn’t try to joust with agricultural equipment.

Sidral Mundet is a Mexican apple-flavored carbonated soft drink produced by FEMSA S.A de C.V and distributed in the United States by the Novamex company, which also distributes the Jarritos and Sangria Señorial soda brands.
Sidral Mundet was first bottled in 1902 by Don Arturo Mundet, who produced the cider-flavored beverage. Basing Sidral Mundet on the "limonada" or "gaseosa" drinks that were popular in Mexico at the turn of the 20th Century, he utilized the pasteurization technique to keep the drink sterile in the bottling process. Back in late October, I started three gallons of fresh apple cider from Noquochoke Orchards in Westport, MA in the fermenter. Now, nearly 6 months later, I have a case and a half of 12 oz. bottles of very drinkable, dry sparkling hard cider. Shot this glass of it tonight (and drank it while processing the shots.)

For the brewers out there:
Initial ferment:
3 US gallons of UV pasteurized sweet cider
10 oz. turbinado sugar
10 oz. grade A dark amber Vermont maple syrup
1 package Safale US-05 ale yeast (Fermentis)
1 1/2 tsp. yeast nutrient
When bottling:
2 tbl. vodka
2 cinnamon sticks, crushed
2 cloves
1/2 tsp. cardamom seed
2.2 oz. dextrose
I combined the sugar, syrup, and cider in my brew kettle and heated it slowly to 165°F, then held it there for 20 minutes. I probably didn't need to hold, as the cider was already pasteurized, but it did get the sugar dissolved more easily. Cooled in an ice bath to 70°F, transferred to my primary fermenter, added the yeast nutrient, and pitched the yeast directly. OG was 1.059.
Took 3 weeks in the primary with almost unnoticeable bubbling in the airlock. Racked to secondary at this point. At the same time as I racked to secondary, I made a spice tincture from the spices and vodka and let that sit in a jar to pull flavor out of the spices.
After 12 weeks in the secondary, the flavors had evened out pretty well. I racked off the trub into my bottling bucket, where I added the well-strained spice tincture and my dextrose. Bottled, capped, and let bottle condition for 4 weeks.
FG was 0.996, so the ABV (excluding whatever the vodka contributed) is about 8.4%.

In the Northern Hemisphere, the fruit is typically in season from September to February, and in the Southern Hemisphere from March to May. As intact arils or juice, pomegranates are used in cooking, baking, meal garnishes, juice blends, smoothies, and alcoholic beverages, such as cocktails and wine.

ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.

P. granatum has more than 500 named cultivars, but evidently has considerable synonymy in which the same genotype is named differently across regions of the world.[15]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.
CULTURAL HISTORY
Pomegranate is native to a region from Iran to northern India. Pomegranates have been cultivated throughout the Middle East, South Asia, and Mediterranean region for several millennia, and also thrive in the drier climates of California and Arizona.
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Jericho in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[citation needed] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian cuneiform records mention pomegranates from the mid-third millennium BC onwards.
It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.
SYMBOLISM
ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.
A pomegranate is displayed on coins from the ancient city of Side, Pamphylia.
Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.
IN THE QUR´AN
According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.
CHINA
Introduced to China during the Tang Dynasty (618-907 AD), the pomegranate (Chinese: 石榴; pinyin: shíliu) in olden times was considered an emblem of fertility and numerous progeny. This symbolism is a pun on the Chinese character 子 (zǐ) which, as well as meaning seed, also means "offspring" thus a fruit containing so many seeds is a sign of fecundity. Pictures of the ripe fruit with the seeds bursting forth were often hung in homes to bestow fertility and bless the dwelling with numerous offspring, an important facet of traditional Chinese culture.

ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.

It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.
SYMBOLISM
ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.
A pomegranate is displayed on coins from the ancient city of Side, Pamphylia.
Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.
IN THE QUR´AN
According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.
CHINA
Introduced to China during the Tang Dynasty (618-907 AD), the pomegranate (Chinese: 石榴; pinyin: shíliu) in olden times was considered an emblem of fertility and numerous progeny. This symbolism is a pun on the Chinese character 子 (zǐ) which, as well as meaning seed, also means "offspring" thus a fruit containing so many seeds is a sign of fecundity. Pictures of the ripe fruit with the seeds bursting forth were often hung in homes to bestow fertility and bless the dwelling with numerous offspring, an important facet of traditional Chinese culture.

Louis Pasteur December 27, 1822 – September 28, 1895) was a French chemist and microbiologist renowned for his discoveries of the principles of vaccination, microbial fermentation and pasteurization. He is remembered for his remarkable breakthroughs in the causes and preventions of diseases, and his discoveries have saved countless lives ever since. He reduced mortality from puerperal fever, and created the first vaccines for rabies and anthrax. His medical discoveries provided direct support for the germ theory of disease and its application in clinical medicine. He is best known to the general public for his invention of the technique of treating milk and wine to stop bacterial contamination, a process now called pasteurization. He is regarded as one of the three main founders of bacteriology, together with Ferdinand Cohn and Robert Koch, and is popularly known as the "father of microbiology".

Built on the site of the former convict hospital, which was constructed in 1824 and burnt out in 1878. This first hospital was only a 4 large rooms, with verandahs, and was a simple structure. It was initally for male prisoners and soldiers but later treated assigned servants and settlers.
It is likely from early survey plans of Bathurst, that part of this site would have been used for the convict hospital, out buildings i.e. wash house, stables and store, it is likely that other areas may have been used for kitchen vegetable gardens.
Dr George Busby was appointed as the Government Medical Officer to the Bathurst Hospital in 1828, replacing the former Medical Officer Dr William Richardson. By the late 1830s Dr Busby had a practice that included many of the squatters and settlers of the district.
From 1842 to 1870 Dr George Busby, the former Government Medical 'Officer, managed the hospital in association with a community committee.
The hospital was funded largely by public subscription and to a lesser extent by Government support. By 1856 the situation had improved with the Government donating 500 pounds towards hospital expenses. From 1846 the funds were augmented from fines imposed by the local court on individuals found guilty of drunkenness.
With the increase of traffic through Bathurst on the way to the goldfields during the 1850s, the hospital was under considerable financial and resource strain to cope with the increase in demand for medical services.
In 1862 James Rutherford, the general manager of the coaching firm of Cobb & Co relocated the business to Bathurst. The Cobb & Co factory was established in Bentinck Street just north of the hospital site. When one of the Cobb & Co employees was injured in an accident near Forbes the man was brought to Bathurst however was refused admission at the hospital as he was from out of town. James Rutherford attended the next meeting of the hospital committee. He was advised that the hospital was in financial difficulties and likely to close. Rutherford, along with Messrs McPherson and Wilton set to work. They arranged a fund-raiser event at O'Connell and at Bathurst, cleared the hospital debt and had sufficient contributed funds left to build a dispensary at the hospital. James Rutherford was elected Chairman of the Bathurst hospital board in 1867 and retained various executive positions on the board until his death in 1911.
In 1876 an appeal was launched for a new hospital and tenders were called for the construction of a hospital in Durham Street.
A tender for the new hospital designed by architect W. Boles was accepted in February 1878 and construction of the present hospital commenced September 1878. In December 1878 the old hospital burnt down.
The Bathurst Dairy Co-op:
The dairy industry developed as a small, individual, family based intensive industry. By 1878 Sweden's Dr Gustav de Laval had produced a commercial separator that was to revolutionize dairy product processing industry.
The Bathurst Co-operative Dairying Co Ltd was formed in late 1901. The Bathurst Daily Times of 29 August 1901 reported an enthusiastic and well attending had been held at the Town Hall and it had been agreed to establish a co-operative, Temporary offices were to be obtained in the AH & P Association Rooms.
Shareholders were already pledging support and the future looked promising. The editor of the local paper reminded his readers that the success of the co-operative required not only the financial support of local businessmen but also the practical interest of the farmers.
Provisional directors were appointed to the Bathurst Co-operative Dairying Co Ltd. They were Messrs J Lee jnr, P Furness, W Dowling, George Machattie and Dr Machattie. Mr J McPhillamy was appointed as the solicitor for the new company.
In 1902 the Bathurst Co-operative Dairying Co called tenders for the construction of the new butter factory. After due consideration the tender of Mr AE Ennis was accepted for 967 pounds. The new butter factory had opened on Saturday 10 October 1902.

The operation of the butter factory and the co-op continued to expand.
The Bathurst Butter Factory survived one of the worst droughts the country had seen in 1907, and within a decade had diversified its operations to include the freezing of thousands of rabbits each week for the London market. In 1926 the company started manufacturing ice. By this time it had changed its name to the Bathurst Dairying Co.
A new pasteurizing plant was installed in 1938. In 1956 when the Milk Board assumed control of the area Dairy Farmers' was the sole supplier of pasteurized milk in Bathurst and met the needs of almost all the local consumers, through 14 vendors and wholesale runs to 49 shops.
The 1980s were a time for further change within the industry as corporate structures and takeovers gained momentum. By 1984 the idea of rationalising Bathurst/OrangelDubbo milk market was taking shape and Dairy Farmers bought Central Western Dairy Ltd of Dubbo in a bid to position the company in the central and western area distribution scheme.
The Bathurst factory continued to operate as a milk receival factory and for the production and distribution of cream, plain and flavoured milk. The Moove brand of milk was packaged at Bathurst, as was Dairy Farmers plain milk brands.
It was during this era that the local management decided to promote the Bathurst Dairy Farmer's site by painting the Dairy Farmers logo on the top of the site's prominent tower building. The concept was to replicate a milk carton, however the sign writing was a little restrained compared to the concept.33 The tower, however, remains as an impressive feature within the Bathurst streetscape - the sign writing complimentary to the traditional sign writing used on brewery towers.
On 1 January 1990 Dairy Farmers became part of the newly formed Australian Co-operative Foods Ltd - a merger company controlling 75% of the States milk production.
Walkers Brewery:
George Ranken erected Bathurst's first brewery at Kelloshiel about 1857. It was later destroyed by fire. A brewery was established in Bathurst in Morrissett Street. The business was later purchased by Walker & Co who then moved the brewery operation to HC Matthews former grain mill site located in Howick Street. In April 1908 Walker & Go purchased the swimming baths land off Princess Street, and on part of this land erected a new brewery. During the 1920s a brewery operated from land in Howick and Bentinck streets.
James Walker & Co purchased the site (described as 178 Howick Street) from Machattie & Co in 1908. By 1932 the site had been transferred from Walker & Co Ltd to Douglas Vincent Walker and the Executor of Frederick Charles Green. (Douglas Walker was the son of James Walker, while FC Green appears to have been a partner with the Walkers in their Bathurst and Orange brewery operations).
Walkers Pale Ale was popular in the district. James Walker was prominent in public affairs during his period of residency in Bathurst and was mayor on several occasions.
It seems likely that the tower building located upon the Dairy Farmers site at Bathurst was built by Walker as a brewery.
Successful brewing required good supplies of high quality water. In the case of the butter factory, and now the brewery, was a need for a regular and high quality water.
The soap factory:
Part of the current Dairy Farmers site was once used as a soap factory. Following the liquidation of Walker's brewery business the site was purchased by Horace Harry, Grace and Max Leighton Edgell, a local Bathurst family, who established a soap factory upon the former brewery site. Trading as Macquarie Soap the business operated from the site until 1950 when the land was sold to local grazier John Fullerton-Smith.
Staff of the Dairy Farmers factory in the 1980s referred to the tower as the `soap tower', giving credence to the theory that the former brewery site was adapted for use as a soap factory, before being integrated into the current Dairy Farmers factory operation.

The pomegranate (/ˈpɒmᵻɡrænᵻt/), botanical name Punica granatum, is a fruit-bearing deciduous shrub or small tree growing between 5 and 8 m tall.
In the Northern Hemisphere, the fruit is typically in season from September to February, and in the Southern Hemisphere from March to May. As intact arils or juice, pomegranates are used in cooking, baking, meal garnishes, juice blends, smoothies, and alcoholic beverages, such as cocktails and wine.
The pomegranate originated in the region of modern-day Iran and has been cultivated since ancient times throughout the Mediterranean region and northern India. It was introduced into America (Spanish America) in the late 16th century and California by Spanish settlers in 1769.
Today, it is widely cultivated throughout the Middle East and Caucasus region, north Africa and tropical Africa, the Indian subcontinent, Central Asia, the drier parts of southeast Asia, and parts of the Mediterranean Basin. It is also cultivated in parts of California and Arizona. In recent years, it has become more common in the commercial markets of Europe and the Western Hemisphere.
ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.
CULTIVARS
P. granatum has more than 500 named cultivars, but evidently has considerable synonymy in which the same genotype is named differently across regions of the world.[15]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.
CULTURAL HISTORY
Pomegranate is native to a region from Iran to northern India. Pomegranates have been cultivated throughout the Middle East, South Asia, and Mediterranean region for several millennia, and also thrive in the drier climates of California and Arizona.
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Jericho in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[citation needed] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian cuneiform records mention pomegranates from the mid-third millennium BC onwards.
It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.
SYMBOLISM
ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.
A pomegranate is displayed on coins from the ancient city of Side, Pamphylia.
Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.
IN THE QUR´AN
According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.
CHINA
Introduced to China during the Tang Dynasty (618-907 AD), the pomegranate (Chinese: 石榴; pinyin: shíliu) in olden times was considered an emblem of fertility and numerous progeny. This symbolism is a pun on the Chinese character 子 (zǐ) which, as well as meaning seed, also means "offspring" thus a fruit containing so many seeds is a sign of fecundity. Pictures of the ripe fruit with the seeds bursting forth were often hung in homes to bestow fertility and bless the dwelling with numerous offspring, an important facet of traditional Chinese culture.

The pomegranate (/ˈpɒmᵻɡrænᵻt/), botanical name Punica granatum, is a fruit-bearing deciduous shrub or small tree growing between 5 and 8 m tall.
In the Northern Hemisphere, the fruit is typically in season from September to February, and in the Southern Hemisphere from March to May. As intact arils or juice, pomegranates are used in cooking, baking, meal garnishes, juice blends, smoothies, and alcoholic beverages, such as cocktails and wine.
The pomegranate originated in the region of modern-day Iran and has been cultivated since ancient times throughout the Mediterranean region and northern India. It was introduced into America (Spanish America) in the late 16th century and California by Spanish settlers in 1769.
Today, it is widely cultivated throughout the Middle East and Caucasus region, north Africa and tropical Africa, the Indian subcontinent, Central Asia, the drier parts of southeast Asia, and parts of the Mediterranean Basin. It is also cultivated in parts of California and Arizona. In recent years, it has become more common in the commercial markets of Europe and the Western Hemisphere.
ETYMOLOGY
The name pomegranate derives from medieval Latin pōmum "apple" and grānātum "seeded". Perhaps stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as "apple of Grenada" - a term which today survives only in heraldic blazons. This is a folk etymology, confusing Latin granatus with the name of the Spanish city of Granada, which derives from Arabic.
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning "of a dark red color". This derivation may have originated from pomum granatum describing the color of pomegranate pulp or from granum referring to "red dye, cochineal".
The French term for pomegranate, grenade, has given its name to the military grenade.
DESCRIPTION
A shrub or small tree growing 6 to 10 m high, the pomegranate has multiple spiny branches, and is extremely long-lived, with some specimens in France surviving for 200 years. P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm long and 2 cm broad. The flowers are bright red and 3 cm in diameter, with three to seven petals. Some fruitless varieties are grown for the flowers alone.
The edible fruit is a berry, intermediate in size between a lemon and a grapefruit, 5–12 cm in diameter with a rounded shape and thick, reddish skin. The number of seeds in a pomegranate can vary from 200 to about 1400. Each seed has a surrounding water-laden pulp — the edible sarcotesta that forms from the seed coat — ranging in color from white to deep red or purple. The seeds are "exarillate", i.e., unlike some other species in the order, Myrtales, no aril is present. The sarcotesta of pomegranate seeds consists of epidermis cells derived from the integument. The seeds are embedded in a white, spongy, astringent membrane.
CULTIVATION
P. granatum is grown for its fruit crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted-bark multiple trunks and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can be tolerant of moderate frost, down to about −12 °C.
Insect pests of the pomegranate can include the pomegranate butterfly Virachola isocrates and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit. Pomegranate grows easily from seed, but is commonly propagated from 25– to 50-cm hardwood cuttings to avoid the genetic variation of seedlings. Air layering is also an option for propagation, but grafting fails.
VARIETIES
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit. The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the island of Socotra. It differs in having pink (not red) flowers and smaller, less sweet fruit.
CULTIVARS
P. granatum has more than 500 named cultivars, but evidently has considerable synonymy in which the same genotype is named differently across regions of the world.[15]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.
CULTURAL HISTORY
Pomegranate is native to a region from Iran to northern India. Pomegranates have been cultivated throughout the Middle East, South Asia, and Mediterranean region for several millennia, and also thrive in the drier climates of California and Arizona.
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Jericho in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[citation needed] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian cuneiform records mention pomegranates from the mid-third millennium BC onwards.
It is also extensively grown in South China and in Southeast Asia, whether originally spread along the route of the Silk Road or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain. The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.
The ancient city of Granada in Spain was renamed after the fruit during the Moorish period and today the province of Granada uses pomegranate as a charge in heraldry for its canting arms.
Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America), but in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."
The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771: he had them from George Wythe of Williamsburg.
CULINARY USE
After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. Freezing the entire fruit also makes it easier to separate. Another effective way of quickly harvesting the seeds is to cut the pomegranate in half, score each half of the exterior rind four to six times, hold the pomegranate half over a bowl, and smack the rind with a large spoon. The seeds should eject from the pomegranate directly into the bowl, leaving only a dozen or more deeply embedded seeds to remove. The entire seed is consumed raw, though the watery, tasty sarcotesta is the desired part. The taste differs depending on the variety or cultivar of pomegranate and its ripeness.
Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic tannins contained in the juice. Pomegranate juice has long been a popular drink in Europe, the Middle East and is now widely distributed in the United States and Canada.
Grenadine syrup long ago consisted of thickened and sweetened pomegranate juice, now is usually a sales name for a syrup based on various berries, citric acid, and food coloring, mainly used in cocktail mixing. In Europe, Bols still manufactures grenadine syrup with pomegranate. Before tomatoes, a New World fruit, arrived in the Middle East, pomegranate juice, molasses, and vinegar were widely used in many Iranian foods, and are still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).
Pomegranate seeds are used as a spice known as anardana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian subcontinent markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in a deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are regarded as quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.
In the Caucasus, pomegranate is used mainly for juice. In Azerbaijan, a sauce from pomegranate juice narsharab, (from Persian: (a)nar + sharab, lit. "pomegranate wine") is usually served with fish or tika kabab. In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç. Pomegranate syrup or molasses is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.
In Greece, pomegranate (Greek: ρόδι, rodi) is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast. In Cyprus and Greece, and among the Greek Orthodox Diaspora, ρόδι (Greek for pomegranate) is used to make koliva, a mixture of wheat, pomegranate seeds, sugar, almonds, and other seeds served at memorial services.
In Mexico, they are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.
IN TRADITIONAL MEDICINE
In the Indian subcontinent's ancient Ayurveda system of traditional medicine, the pomegranate is frequently described as an ingredient in remedies.
In folk medicine pomegranate has been thought a contraceptive and abortifacient when the seeds or rind are eaten, or when as a vaginal suppository.
NUTRITION
A 100-g serving of pomegranate seeds provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K and 10% DV for folate (table).
Pomegranate seeds are an excellent source of dietary fiber (20% DV) which is entirely contained in the edible seeds. People who choose to discard the seeds forfeit nutritional benefits conveyed by the seed fiber and micronutrients.
Pomegranate seed oil contains punicic acid (65.3%), palmitic acid (4.8%), stearic acid (2.3%), oleic acid (6.3%), and linoleic acid (6.6%).
RESEARCH
JUICE
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and/or gallic acid binds with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.
The red color of juice can be attributed to anthocyanins, such as delphinidin, cyanidin, and pelargonidin glycosides. Generally, an increase in juice pigmentation occurs during fruit ripening.
The phenolic content of pomegranate juice is adversely affected by processing and pasteurization techniques.
PEEL
Compared to the pulp, the inedible pomegranate peel contains as much as three times the total amount of polyphenols, including condensed tannins, catechins, gallocatechins and prodelphinidins.
The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used evolving research results for product promotion. In February 2010, the FDA issued a Warning Letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease benefits.
SYMBOLISM
ANCIENT EGYPT
Ancient Egyptians regarded the pomegranate as a symbol of prosperity and ambition. According to the Ebers Papyrus, one of the oldest medical writings from around 1500 BC, Egyptians used the pomegranate for treatment of tapeworm and other infections.
ANCIENT GREECE
The Greeks were familiar with the fruit far before it was introduced to Rome via Carthage. In Ancient Greek mythology, the pomegranate was known as the "fruit of the dead", and believed to have sprung from the blood of Adonis.
The myth of Persephone, the goddess of the underworld, prominently features the pomegranate. In one version of Greek mythology, Persephone was kidnapped by Hades and taken off to live in the underworld as his wife. Her mother, Demeter (goddess of the Harvest), went into mourning for her lost daughter, thus all green things ceased to grow. Zeus, the highest-ranking of the Greek gods, could not allow the Earth to die, so he commanded Hades to return Persephone. It was the rule of the Fates that anyone who consumed food or drink in the underworld was doomed to spend eternity there. Persephone had no food, but Hades tricked her into eating six pomegranate seeds while she was still his prisoner, so she was condemned to spend six months in the underworld every year. During these six months, while Persephone sits on the throne of the underworld beside her husband Hades, her mother Demeter mourns and no longer gives fertility to the earth. This was an ancient Greek explanation for the seasons. Dante Gabriel Rossetti's painting Persephona depicts Persephone holding the fatal fruit. The number of seeds Persephone ate varies, depending on which version of the story is told. The number ranges from three to seven, which accounts for just one barren season if it is just three or four seeds, or two barren seasons (half the year) if she ate six or seven seeds.
The pomegranate also evoked the presence of the Aegean Triple Goddess who evolved into the Olympian Hera, who is sometimes represented offering the pomegranate, as in the Polykleitos' cult image of the Argive Heraion (see below). According to Carl A. P. Ruck and Danny Staples, the chambered pomegranate is also a surrogate for the poppy's narcotic capsule, with its comparable shape and chambered interior. On a Mycenaean seal illustrated in Joseph Campbell's Occidental Mythology 1964, figure 19, the seated Goddess of the double-headed axe (the labrys) offers three poppy pods in her right hand and supports her breast with her left. She embodies both aspects of the dual goddess, life-giving and death-dealing at once. The Titan Orion was represented as "marrying" Side, a name that in Boeotia means "pomegranate", thus consecrating the primal hunter to the Goddess. Other Greek dialects call the pomegranate rhoa; its possible connection with the name of the earth goddess Rhea, inexplicable in Greek, proved suggestive for the mythographer Karl Kerenyi, who suggested the consonance might ultimately derive from a deeper, pre-Indo-European language layer.
In the 5th century BC, Polycleitus took ivory and gold to sculpt the seated Argive Hera in her temple. She held a scepter in one hand and offered a pomegranate, like a 'royal orb', in the other. "About the pomegranate I must say nothing," whispered the traveller Pausanias in the 2nd century, "for its story is somewhat of a holy mystery." In the Orion story, Hera cast pomegranate-Side (an ancient city in Antalya) into dim Erebus — "for daring to rival Hera's beauty", which forms the probable point of connection with the older Osiris/Isis story.[citation needed] Since the ancient Egyptians identified the Orion constellation in the sky as Sah the "soul of Osiris", the identification of this section of the myth seems relatively complete. Hera wears, not a wreath nor a tiara nor a diadem, but clearly the calyx of the pomegranate that has become her serrated crown.[citation needed] The pomegranate has a calyx shaped like a crown. In Jewish tradition, it has been seen as the original "design" for the proper crown. In some artistic depictions, the pomegranate is found in the hand of Mary, mother of Jesus.
A pomegranate is displayed on coins from the ancient city of Side, Pamphylia.
Within the Heraion at the mouth of the Sele, near Paestum, Magna Graecia, is a chapel devoted to the Madonna del Granato, "Our Lady of the Pomegranate", "who by virtue of her epithet and the attribute of a pomegranate must be the Christian successor of the ancient Greek goddess Hera", observes the excavator of the Heraion of Samos, Helmut Kyrieleis.
In modern times, the pomegranate still holds strong symbolic meanings for the Greeks. On important days in the Greek Orthodox calendar, such as the Presentation of the Virgin Mary and on Christmas Day, it is traditional to have at the dinner table polysporia, also known by their ancient name panspermia, in some regions of Greece. In ancient times, they were offered to Demeter[citation needed] and to the other gods for fertile land, for the spirits of the dead and in honor of compassionate Dionysus.[citation needed] When one buys a new home, it is conventional for a house guest to bring as a first gift a pomegranate, which is placed under/near the ikonostasi (home altar) of the house, as a symbol of abundance, fertility, and good luck. Pomegranates are also prominent at Greek weddings and funerals.[citation needed] When Greeks commemorate their dead, they make kollyva as offerings, which consist of boiled wheat, mixed with sugar and decorated with pomegranate. It is also traditional in Greece to break a pomegranate on the ground at weddings and on New Years. Pomegranate decorations for the home are very common in Greece and sold in most home goods stores.
ANCIENT ISRAEL AND JUDAISM
Pomegranates were known in Ancient Israel as the fruits which the scouts brought to Moses to demonstrate the fertility of the "promised land". The Book of Exodus describes the me'il ("robe of the ephod") worn by the Hebrew high priest as having pomegranates embroidered on the hem alternating with golden bells which could be heard as the high priest entered and left the Holy of Holies. According to the Books of Kings, the capitals of the two pillars (Jachin and Boaz) that stood in front of Solomon's Temple in Jerusalem were engraved with pomegranates. Solomon is said to have designed his coronet based on the pomegranate's "crown" (calyx).
It is traditional to consume pomegranates on Rosh Hashana because, with its numerous seeds, it symbolizes fruitfulness. Also, it is said to have 613 seeds, which corresponds with the 613 mitzvot or commandments of the Torah.[61] This particular tradition is referred to in the opening pages of Ursula Dubosarsky's novel Theodora's Gift.
The pomegranate appeared on the ancient coins of Judea. When not in use, the handles of Torah scrolls are sometimes covered with decorative silver globes similar in shape to "pomegranates" (rimmonim). Some Jewish scholars believe the pomegranate was the forbidden fruit in the Garden of Eden.[60] Pomegranates are one of the Seven Species (Hebrew: שבעת המינים, Shiv'at Ha-Minim) of fruits and grains enumerated in the Hebrew Bible (Deuteronomy 8:8) as being special products of the Land of Israel. The pomegranate is mentioned in the Bible many times, including this quote from the Songs of Solomon, "Thy lips are like a thread of scarlet, and thy speech is comely: thy temples are like a piece of a pomegranate within thy locks." (Song of Solomon 4:3). Pomegranates also symbolize the mystical experience in the Jewish mystical tradition, or kabbalah, with the typical reference being to entering the "garden of pomegranates" or pardes rimonim; this is also the title of a book by the 16th-century mystic Moses ben Jacob Cordovero.
IN EUROPEAN CHRISTIAN MOTIFS
In the earliest incontrovertible appearance of Christ in a mosaic, a 4th-century floor mosaic from Hinton St Mary, Dorset, now in the British Museum, the bust of Christ and the chi rho are flanked by pomegranates. Pomegranates continue to be a motif often found in Christian religious decoration. They are often woven into the fabric of vestments and liturgical hangings or wrought in metalwork. Pomegranates figure in many religious paintings by the likes of Sandro Botticelli and Leonardo da Vinci, often in the hands of the Virgin Mary or the infant Jesus. The fruit, broken or bursting open, is a symbol of the fullness of Jesus' suffering and resurrection.
In the Eastern Orthodox Church, pomegranate seeds may be used in kolyva, a dish prepared for memorial services, as a symbol of the sweetness of the heavenly kingdom.
IN THE QUR´AN
According to the Qur'an, pomegranates grow in the gardens of paradise (55:68). The Qur'an also mentions pomegranates three times.(6:99, 6:141, 55:68)
AFGHANISTAN
Pomegranate, a favorite fall and winter fruit in Afghanistan, has mainly two varieties: one that is sweet and dark red with hard seeds growing in and around Kandhar province, and the other that has soft seeds with variable color growing in the central/northern region. The largest market for Afghan pomegranates is India followed by Pakistan, Russia, United Arab Emirates and Europe.
ARMENIA
The pomegranate is one of the main fruits in Armenian culture (the others being apricot and grapes). Its juice is famous with Armenians in food and heritage. The pomegranate is the symbol of Armenia and represents fertility, abundance and marriage. For example, the fruit played an integral role in a wedding custom widely practiced in ancient Armenia: a bride was given a pomegranate fruit, which she threw against a wall, breaking it into pieces. Scattered pomegranate seeds ensured the bride future children. In Karabakh, it was customary to put fruits next to the bridal couple during the first night of marriage, among them the pomegranate, which was said to ensure happiness. It is likely that newlyweds also enjoyed pomegranate wine. The symbolism of the pomegranate is that it protected a woman from infertility and protected a man's virility. Both homemade and commercial wine is made from pomegranate in Armenia. The Color of Pomegranates (1969) is a movie directed by Sergei Parajanov. It is a biography of the Armenian ashug Sayat-Nova (King of Song) which attempts to reveal the poet's life visually and poetically rather than literally.
AZERBAIJAN
Pomegranate is considered one of the symbols of Azerbaijan. Annually in October, a cultural festival is held in Goychay, Azerbaijan known as the Goychay Pomegranate Festival. The festival features Azerbaijani fruit-cuisine mainly the pomegranates from Goychay, which is famous for its pomegranate growing industry. At the festival, a parade is held with traditional Azerbaijani dances and Azerbaijani music. Pomegranate was depicted on the official logo of the 2015 European Games held in Azerbaijan. Nar the Pomegranate was one of the two mascots of these games. Pomegranates also featured on the jackets worn by Azerbaijani male athletes at the games' opening ceremony.
IRAN AND ANCIENT PERSIA
Pomegranate was the symbol of fertility in ancient Persian culture.[citation needed] In Persian mythology, Isfandiyar eats a pomegranate and becomes invincible. In the Greco-Persian Wars, Herodotus mentions golden pomegranates adorning the spears of warriors in the phalanx. Even in today's Iran, pomegranate may imply love and fertility.
Iran produces pomegranates as a common crop.[citation needed] Its juice and paste have a role in some Iranian cuisines, e.g. chicken, ghormas and refreshment bars. Pomegranate skins may be used to stain wool and silk in the carpet industry.
Pomegranate Festival is an annual cultural and artistic festival held during October in Tehran[citation needed] to exhibit and sell pomegranates, food products and handicrafts.
PAKISTAN
The pomegranate (known as "anār" in Urdu) is a popular fruit in Pakistan. It is grown in Pakistan and is also imported from Afghanistan.
INDIA
In some Hindu traditions, the pomegranate (Hindi: anār) symbolizes prosperity and fertility, and is associated with both Bhoomidevi (the earth goddess) and Lord Ganesha (the one fond of the many-seeded fruit). The Tamil name maadulampazham is a metaphor for a woman's mind. It is derived from, maadhu=woman, ullam=mind, which means as the seeds are hidden, it is not easy to decipher a woman's mind.

They're both pasteurized, and I'm not sure if their cows are antibiotic-free, yet I'm pleased to find better alternatives to questionable commercial milk in supermarkets.
Completed and opened in 1892, The Victoria Hospital for Sick Children was the second home of a dedicated hospital for children which originally occupied a small home rented for sixteen years. Compulsory milk pasteurization, pablum and incorporated X-Rays can all trace to this hospital. In 1951 the hospital moved into its new and current building. Today it is home to Canadian Blood Services.

Heineken is a Dutch 5% abv pale lager made by Heineken International since 1868. It is the flagship product of the company, and is made of purified water, malted barley, hops, and yeast. The beer is force carbonated. This product is a sponsor of UEFA Champions League and the Heineken Cup.
Heineken is made of water, barley, hops, and yeast. In 1886 H. Elion finished the development of the Heineken A-yeast. This is the yeast that is still used for the beer.
The brewing process is the following. First the water is purified in water tanks. Then the barley is malted in the barley tank. After one and a half days the germination starts by soaking the barley. After seven or eight days the malted barley is dried in a mill and seed roots are removed. The malt and the water are mixed and boiled in the mash copper and become wort. The wort is filtered in the filtering copper. The hops are added to the wort in the wort copper and the wort is boiled again. The hops give the beer the bitter taste. All solid particles are removed from the wort in the whirlpool. The wort is cooled and the yeast is added in the fermentation tank. The yeast converts sugars into alcohol and carbon dioxide by fermentation. After seven days the wort has become green beer which has 4.5% alcohol. The green beer matures in lagering tanks for four to six weeks, reaching 5% alcohol by volume. It is then force carbonated. The yeast is removed in the filter tank with the natural silicon kieselguhr. The beer is bottled and pasteurized to kill the microorganisms.

The pomegranate (Punica granatum) is a fruit-bearing deciduous shrub in the family Lythraceae, subfamily Punicoideae, that grows between 5 and 10 m (16 and 33 ft) tall. Rich in symbolic and mythological associations in many cultures, it is thought to have originated from Afghanistan and Iran before being introduced and exported to other parts of Asia, Africa, and Europe.[4][5][6]

It was introduced into Spanish America in the late 16th century and into California by Spanish settlers in 1769.[7] It is widely cultivated throughout West Asia and the Caucasus region, South Asia, Central Asia, north and tropical Africa, the drier parts of Southeast Asia, and the Mediterranean Basin.[7] The fruit is typically in season in the Northern Hemisphere from September to February, and in the Southern Hemisphere from March to May.[8][9]
The pomegranate and its juice are variously used in baking, cooking, juice blends, garnishes, non-alcoholic drinks, and cocktails.
Etymology

The name pomegranate derives from medieval Latin pōmum 'apple' and grānātum 'seeded'.[10] Possibly stemming from the old French word for the fruit, pomme-grenade, the pomegranate was known in early English as apple of Granada—a term which today survives only in heraldic blazons. This is a folk etymology, confusing the Latin granatus with the name of the Spanish city of Granada, which is derived from an unrelated Arabic word.[11]
Garnet derives from Old French grenat by metathesis, from Medieval Latin granatum as used in a different meaning 'of a dark red color'. This derivation may have originated from pomum granatum, describing the color of pomegranate pulp, or from granum, referring to 'red dye, cochineal'.[12]
The modern French term for pomegranate, grenade, has given its name to the military grenade.[13]
Pomegranates were colloquially called wineapples or wine-apples in Ireland, although this term has fallen out of use. It still persists at the Moore Street open-air market, in central Dublin.[14][15]

The pomegranate is a shrub or small tree growing 5 to 10 m (16 to 33 ft) high, with multiple spiny branches. It is long-lived, with some specimens in France surviving for 200 years.[7] P. granatum leaves are opposite or subopposite, glossy, narrow oblong, entire, 3–7 cm (1+1⁄4–2+3⁄4 in) long and 2 cm (3⁄4 in) broad. The flowers are bright red and 3 cm (1+1⁄4 in) in diameter, with three to seven petals.[7] Some fruitless varieties are grown for the flowers alone.[16]

The pomegranate fruit husk is red-purple with an outer, hard pericarp, and an inner, spongy mesocarp (white "albedo"), which comprises the fruit's inner wall where seeds attach.[17] Membranes of the mesocarp are organized as nonsymmetric chambers that contain seeds which are embedded without attachment to the mesocarp.[17] Pomegranate seeds are characterized by having sarcotesta, thick fleshy seed coats derived from the integuments or outer layers of the ovule's epidermal cells.[18][19] The number of seeds in a pomegranate can vary from 200 to about 1,400.[20]
Botanically, the fruit is a berry with edible seeds and pulp produced from the ovary of a single flower.[18] The fruit is intermediate in size between a lemon and a grapefruit, 5–12 cm (2–4+1⁄2 in) in diameter with a rounded shape and thick, reddish husk.[7]
In mature fruits, the juice obtained by compressing the seeds yields a tart flavor due to low pH (4.4) and high contents of polyphenols,[21] which may cause a red indelible stain on fabrics.[22] The pigmentation of pomegranate juice primarily results from the presence of anthocyanins and ellagitannins.[21][23]
Cultivation
P. granatum is grown for its vegetable crop, and as ornamental trees and shrubs in parks and gardens. Mature specimens can develop sculptural twisted bark, multiple trunks, and a distinctive overall form. Pomegranates are drought-tolerant, and can be grown in dry areas with either a Mediterranean winter rainfall climate or in summer rainfall climates. In wetter areas, they can be prone to root decay from fungal diseases. They can tolerate moderate frost, down to about −12 °C (10 °F).[24]
Insect pests of the pomegranate can include the butterflies Virachola isocrates, Iraota timoleon, Deudorix epijarbas, and the leaf-footed bug Leptoglossus zonatus, and fruit flies and ants are attracted to unharvested ripe fruit.[25]
Propagation
P. granatum reproduces sexually in nature but can be propagated using asexual reproduction. Propagation methods include layering, hardwood cuttings, softwood cuttings and tissue culture. Required conditions for rooting cuttings include warm temperatures within the 18 – 29 °C (65 – 85 °F) range and a semi-humid environment. Rooting hormone increases rooting success rate but is not required.[26] Grafting is possible but impractical and tends to yield low success rates.
Varieties
P. granatum var. nana is a dwarf variety of P. granatum popularly planted as an ornamental plant in gardens and larger containers, and used as a bonsai specimen tree. It could well be a wild form with a distinct origin. It has gained the Royal Horticultural Society's Award of Garden Merit.[27][28]
The only other species in the genus Punica is the Socotran pomegranate (P. protopunica), which is endemic to the Socotran archipelago of four islands located in the Arabian Sea, the largest island of which is also known as Socotra. The territory is part of Yemen. It differs in having pink (not red) flowers and smaller, less sweet fruit.[29]

P. granatum has more than 500 named cultivars, but has considerable synonymy in which the same genotype is named differently across regions of the world.[17]
Several characteristics between pomegranate genotypes vary for identification, consumer preference, preferred use, and marketing, the most important of which are fruit size, exocarp color (ranging from yellow to purple, with pink and red most common), seed-coat color (ranging from white to red), the hardness of seed, maturity, juice content and its acidity, sweetness, and astringency.[17]
Production and export
The leading producers globally are India and China, followed by Iran, Turkey, Afghanistan, the US, Iraq, Pakistan, Syria, and Spain.[30] During 2019, Chile, Peru, Egypt, Israel, India, and Turkey supplied pomegranates to the European market.[31] Chile was the main supplier to the United States market, which has a limited supply from Southern California.[31] China was self-sufficient for its pomegranate supply in 2019, while other South Asia markets were supplied mainly by India.[31] Pomegranate production and exports in South Africa competed with South American shipments in 2012–18, with export destinations including Europe, the Middle East, the United Kingdom, and Russia.[32] South Africa imports pomegranates mainly from Israel.[32]
History

The pomegranate is native to a region from modern-day Iran to northern India.[7] Pomegranates have been cultivated throughout the Middle East, India, and the Mediterranean region for several millennia, and it is also cultivated in the Central Valley of California and in Arizona.[7][33][34] Pomegranates may have been domesticated as early as the fifth millennium BC, as they were one of the first fruit trees to be domesticated in the eastern Mediterranean region.[35]
Carbonized exocarp of the fruit has been identified in early Bronze Age levels of Tell es-Sultan (Jericho) in the West Bank, as well as late Bronze Age levels of Hala Sultan Tekke on Cyprus and Tiryns.[36] A large, dry pomegranate was found in the tomb of Djehuty, the butler of Queen Hatshepsut in Egypt; Mesopotamian records written in cuneiform mention pomegranates from the mid-third millennium BC onwards.[37] Waterlogged pomegranate remains have been identified at the circa 14th century BC Uluburun shipwreck off the coast of Turkey.[38] Other goods on the ship include perfume, ivory and gold jewelry, suggesting that pomegranates at this time may have been considered a luxury good.[39] Other archaeological finds of pomegranate remains from the Late Bronze Age have been found primarily in elite residences, supporting this inference.[38]
It is also extensively grown in southern China and Southeast Asia, whether originally spread along the Silk Road route or brought by sea traders. Kandahar is famous in Afghanistan for its high-quality pomegranates.[40]
Although not native to Korea or Japan, the pomegranate is widely grown there and many cultivars have been developed. It is widely used for bonsai because of its flowers and for the unusual twisted bark the older specimens can attain.[41] The term "balaustine" (Latin: balaustinus) is also used for a pomegranate-red color.[42]

Spanish colonists later introduced the fruit to the Caribbean and America (Spanish America). However, in the English colonies, it was less at home: "Don't use the pomegranate inhospitably, a stranger that has come so far to pay his respects to thee," the English Quaker Peter Collinson wrote to the botanizing John Bartram in Philadelphia, 1762. "Plant it against the side of thy house, nail it close to the wall. In this manner it thrives wonderfully with us, and flowers beautifully, and bears fruit this hot year. I have twenty-four on one tree... Doctor Fothergill says, of all trees this is most salutiferous to mankind."[43]

The pomegranate had been introduced as an exotic to England the previous century, by John Tradescant the Elder, but the disappointment that it did not set fruit there led to its repeated introduction to the American colonies, even New England. It succeeded in the South: Bartram received a barrel of pomegranates and oranges from a correspondent in Charleston, South Carolina, 1764. John Bartram partook of "delitious" pomegranates with Noble Jones at Wormsloe Plantation, near Savannah, Georgia, in September 1765. Thomas Jefferson planted pomegranates at Monticello in 1771; he had them from George Wythe of Williamsburg.[44]

Pomegranate juice can be sweet or sour, but most fruits are moderate in taste, with sour notes from the acidic ellagitannins contained in the juice.[23] Pomegranate juice has long been a common drink in Europe and the Middle East, and is distributed worldwide.[45] Pomegranate juice is also used as a cooking ingredient. In Syria, pomegranate juice is added to intensify the flavor of some dishes such as kibbeh safarjaliyeh.
Grenadine syrup, commonly used in cocktail, originally consisted of thickened and sweetened pomegranate juice,[46] but today is typically a syrup made just of sugar and commercially produced natural and artificial flavors, preservatives, and food coloring, or using substitute fruits (such as berries).

Before tomatoes (a New World fruit) arrived in the Middle East, pomegranate juice, pomegranate molasses, and vinegar were widely used in many Iranian foods; this mixture still found in traditional recipes such as fesenjān, a thick sauce made from pomegranate juice and ground walnuts, usually spooned over duck or other poultry and rice, and in ash-e anar (pomegranate soup).[47][48]
Pomegranate seeds are used as a spice known as anar dana (from Persian: anar + dana, pomegranate + seed), most notably in Indian and Pakistani cuisine. Dried whole seeds can often be obtained in ethnic Indian markets. These seeds are separated from the flesh, dried for 10–15 days, and used as an acidic agent for chutney and curry preparation. Ground anardana is also used, which results in deeper flavoring in dishes and prevents the seeds from getting stuck in teeth. Seeds of the wild pomegranate variety known as daru from the Himalayas are considered high-quality sources for this spice.
Dried pomegranate seeds, found in some natural specialty food markets, still contain some residual water, maintaining a natural sweet and tart flavor. Dried seeds can be used in several culinary applications, such as trail mix, granola bars, or as a topping for salad, yogurt, or ice cream.

In Turkey, pomegranate sauce (Turkish: nar ekşisi) is used as a salad dressing, to marinate meat, or simply to drink straight. Pomegranate seeds are also used in salads and sometimes as garnish for desserts such as güllaç.[49] Pomegranate syrup, also called pomegranate molasses, is used in muhammara, a roasted red pepper, walnut, and garlic spread popular in Syria and Turkey.[50]
In Greece, pomegranate is used in many recipes, including kollivozoumi, a creamy broth made from boiled wheat, pomegranates, and raisins, legume salad with wheat and pomegranate, traditional Middle Eastern lamb kebabs with pomegranate glaze, pomegranate eggplant relish, and avocado-pomegranate dip. Pomegranate is also made into a liqueur, and as a popular fruit confectionery used as ice cream topping, mixed with yogurt, or spread as jam on toast.
In Mexico, pomegranate seeds are commonly used to adorn the traditional dish chiles en nogada, representing the red of the Mexican flag in the dish which evokes the green (poblano pepper), white (nogada sauce) and red (pomegranate seeds) tricolor.

The edible portion of raw pomegranate is 78% water, 19% carbohydrates, 2% protein, and 1% fat (table). A 100 g (3.5 oz) serving of pomegranate sarcotesta provides 12% of the Daily Value (DV) for vitamin C, 16% DV for vitamin K, and 10% DV for folate (table), while the seeds are a rich source of dietary fiber (20% DV).[53]

Juice
The most abundant phytochemicals in pomegranate juice are polyphenols, including the hydrolyzable tannins called ellagitannins formed when ellagic acid and gallic acid bind with a carbohydrate to form pomegranate ellagitannins, also known as punicalagins.[23] The red color of the juice is attributed to anthocyanins,[23] such as delphinidin, cyanidin, and glycosides of pelargonidin.[55] Generally, an increase in juice pigmentation occurs during fruit ripening.[55]
Peel
Pomegranate peel contains high amount of polyphenols, condensed tannins, catechins, and prodelphinidins.[56][57] The higher phenolic content of the peel yields extracts for use in dietary supplements and food preservatives.[58]
Seed
Pomegranate seed oil contains punicic acid (65%), palmitic acid (5%), stearic acid (2%), oleic acid (6%), and linoleic acid (7%).[59]
Health claims
Despite limited research data, manufacturers and marketers of pomegranate juice have liberally used results from preliminary research to promote products.[60] In February 2010, the FDA issued a warning letter to one such manufacturer, POM Wonderful, for using published literature to make illegal claims of unproven anti-disease effects.[61][62][63]
In May 2016, the US Federal Trade Commission declared that POM Wonderful could not make health claims in its advertising, followed by a US Supreme Court ruling that declined a request by POM Wonderful to review the court ruling, upholding the FTC decision.[64][65]
