Peel and cut 4 large carrots into 1” rounds. Halve two medium onions; slice them 1/8” thick. Thinly slice 4 medium garlic cloves. (All this, along with 2 Tbsp. tomato paste and 5 oz. salt pork, will be added to the stew at once.)

Well, according to John it was more like "paste" but he "likes paste."
This is an open letter to all recently married men in the world. Do not tell your young bride that anything she cooks has the texture of paste or is in any way related to paste. Unless you want a) something thrown at you or b) a long and meaningful talk while she's crying in the bathroom or c) a quickie Mexican divorce.
