Last year at this time temperatures were below freezing and snow was the scenic highlight - today, I noticed a pale pink haze among the winter-bare trees, and on coming closer, was so happy to see that first herald of spring - plum blossom!
Asian tradition calls plum blossom one of the "Three Friends of Winter" because it blooms earliest, even in snow.

gelatin.
1 envelope Knox Gelatine
2 to 4 tablespoons sugar *(optional)
Cook fruit in crock pot on low for 4 hrs.
In a medium bowl, mix Knox unflavored Gelatine with sugar*; add to hot fruit and stir until gelatine is completely dissolved. Pour into a two-cup bowl, mold or individual dessert dishes; chill until firm. Makes four servings.
When adding fruit (up to 1 1/2 cups), first chill the mixture until the consistency of egg whites. Fold in fruit and pour into 3 cup bowl. Chill until firm.
