Root - cooked. Boiled and eaten like salsify. Fleshy, sweet and succulent. Wholesome and nutritious. A peppery taste. The taste somewhat resembles salsify or parsnips. Young shoots - raw or cooked. Mucilaginous, with a peppery flavor, they are best used sparingly. Another source suggests that the shoots should not be eaten. Flowers - sweet. Used in salads or as a garnish. Young seedpods - cooked. Steamed. The seed contains 28% of a drying oil. It is edible and a very good source of gamma-linolenic acid, an essential fatty acid that is not found in many plant sources and has numerous vital functions in the body. The seed, however, is very small and difficult to harvest, it has to be done by hand. Overall yields are low, making the oil very expensive to produce.

 

CAUTUION: Lowers the threshold for epileptic fits (avoid). Caution if on anticoagulants. Combining with phenothiazine's (allopathic medication) can trigger seizures. Adverse effects: may cause headaches and nausea on an empty stomach. Diarrhea with high doses. Seizures in schizophrenic patients on phenothiazine's (allergy antihistamines).

 

MEDICINAL USES: Anticholesterolemic, Antipruritic, Astringent, Hypotensive, Miscellany, Sedative,

 

The bark and the leaves are astringent and sedative. They have proved of use in the treatment of gastro-intestinal disorders of a functional origin, whooping cough and asthma. A syrup made from the flowers is also an effective treatment for whooping cough. The bark is stripped from the flowering stem and dried for later use, the leaves are also harvested and dried at this time. Evening primrose oil has become a well-known food supplement since the 1980's. Research suggests that the oil is potentially very valuable in the treatment of multiple sclerosis, pre-menstrual tension, hyperactivity etc.. It is also taken internally in the treatment of eczema, acne, brittle nails, rheumatoid arthritis and alcohol-related liver damage. Regular consumption of the oil helps to reduce blood cholesterol levels and lower the blood pressure. The seed is a good source of gamma-linolenic acid, an unsaturated fatty acid which assists the production of hormone-like substances. This process is commonly blocked in the body, causing disorders that affect the uterine muscles, nervous system and metabolism. The poulticed root is applied to piles and bruises. A tea made from the roots is used in the treatment of obesity and bowel pains.

 

OTHER USES: Cosmetic, Dye, Yellow, Miscellany, Oil

 

The oil from the seed is added to skin preparations and cosmetics. It is often combined with vitamin E to prevent oxidation. A yellow dye is obtained from the flowers. A finely ground powder made from the flowering stems is used cosmetically in face-masks to counteract reddened skins.

School district, chef and farmer unite to feed a healthy future

 

Chefs and farmers have something in common. Both are passionate about high-quality, healthy foods. When the two join forces, everyone wins – especially when consumers are students in the Bondurant-Farrar Community School District. Literally feeding a healthy future is what this collaborative arrangement is all about.

 

David Walker, nutrition and custodial director for Bondurant-Farrar, secured two Local Food for Schools grants – one for fruits, vegetables and produce and one for proteins – through the Iowa Department of Education and the Iowa Department of Agriculture and Land Stewardship (IDALS) Local Food for Schools grant program.

 

The Food for Schools grant to purchase proteins allowed Walker to expand his ability to buy local food beyond just produce. So, he contacted Prudent Produce food hub in Elkhart who contacted Shivers Farms, a nearby family farm specializing in beef production. A beneficial collaboration for all was born, and for Bondurant students, beef doesn’t come any more local than five miles up the road.

 

The district's enrollment is approximately 2,725 K-12 students. It serves breakfast and lunch daily to about 400-plus students in each of five different schools in the district.

The LA County Library’s annual Lunch at the Library program returns, providing free, nutritious meals to kids and teens 18 and under during the summer months.

A non profit organization Food not Bombs prepared a delicious, nutritious good for homeless in Houston. Monday, Wednesday and Friday at 8pm and Sunday at 7pm at 521 Lamar St., 77002 (The Houston Downtown Public Library Courtyard).

I was told that the organization feed usually 100-150 hungry people that show in that location.

On the Jyoogasaki Trail by the Pacific Ocean, we found lovely views of the ocean, cool and refreshing breezes, a pedestrian suspension bridge, a song called “Jyoogasaki Blues” carved into a dark stone, and smaller rocks balanced precariously on larger ones. These gathered stones were not glued down to be held up. (Trust me: I picked one up easily in surprise and was unable to balance it again within the short amount of time I had.) I was most astounded by the configurations where two small rocks were stacked on top of each other. This must be an exercise of concentration.

Honey Vanilla Quinoa Pudding is a honey-sweetened pudding made with quinoa cooked in a creamy custard base of rich coconut milk and egg yolks. Quinoa a highly nutritious plant seed, first domesticated in the Andes Mountains of Peru thousands of years ago. It was a cultural and culinary food of high significance to the ancient Incas, being one of their most important food sources. It is still an important food source and cash crop there today. Quinoa is a complete protein, and is also very high in iron, fiber, health-protecting flavonoids like quercetin and kaempferol, and minerals, like manganese, magnesium, and phosphorous. It is now grown in many other countries that have growing conditions similar to the Andes. This recipe came about when my brother-in-law, an agrologist, experimented with growing quinoa in the northern mountains in British Columbia, Canada.

 

Recipe

 

½ cup (120ml) quinoa, rinsed well

 1 cup water

3 teaspoons pure vanilla extract, divided

1 can (14 oz/398ml) premium coconut milk or 1¾ cups (420ml) light cream

 2 large egg yolks

pinch salt

1 teaspoon cornstarch

3 tablespoons liquid honey, plus more for serving

fresh diced berries mixed with a little honey, for serving

Rinse the quinoa well, and combine it with the water and 2 teaspoons of the vanilla in a small saucepan. Bring to a boil, then reduce the heat to a simmer, cover the saucepan, and cook the quinoa for 15 minutes or until all the water has been absorbed.

In a bowl, whisk the coconut milk with the egg yolks, remaining 1 teaspoon vanilla, salt, cornstarch and 3 tablespoons honey until smooth. Pour this over the cooked quinoa, and heat the mixture over medium-high heat, stirring often, until it comes just to a boil and is thickened.

Let cool slightly before serving. Serve warm or at room temperature, but not chilled. Top with a little fresh or cooked sweetened fruit or berries, or just drizzle with additional honey to serve, or do both.

Makes about 3 cups (6 half-cup servings or 4 three-quarter cup servings).
