Natural Leven Multi-grain Bread

 

This was the first of the "fortified" breads that I've made according to recipes of Peter Reinhart. Reinhart believes that 65% of the grain ratio should be wheat flour in order to prevent brick-ish loaves. I'd say, from this first loaf, that his ratio is perfect. This one was dense, had perfect crumb, but wasn't gummy or heavy at all. The sweetener (both honey and brown sugar) and buttermilk (I used homemade yogurt) allowed for a soft crust bread that still had a bit of chew to it.

 

I baked it in a pot, and altered the heat - starting with the oven (and the pre-heated pot) at 475, and dropping it to 365 as soon as I put the bread in the covered pot. It baked 30 minutes with the lid on, then an additional 15-20 without it.

 

Using my starter, I made Reinhart's Firm starter, let it ferment and then refrigerate overnight. Afterwards, the Firm starter makes the dough which ferments about 4 hours before shaping, then about 4 hours after shaping. Then, the loaf goes into an overnight proof in the cool of the refrigerator.

 

An hour before baking, the loaf comes out of the cold to warm up a bit. There wasn't a whole lot of rise in the final loaf, but it didn't deflate from over-proofing, so I was more than excited.

 

Reinhart also believes in adding larger particles of grain, as not to "muddy" the color in the finished loaf. This bread had polenta added instead of cornmeal, wheat bran, rolled oats, and a touch of cooked brown rice. I could easily taste the crunchiness of the polenta, which I have to say was my favorite part.

A viisit to the "Lavoir Public" (public wash house) with my Praktica VLC3 and its normal lens Pentacon electric Multi-Coated 1:1.8 f=50mm.

 

Incidentally I saw the day before that it would be possible to visit a small part of this strange and intriguing building constructed in 1934 in Lyon, France, a sort of "sento" combining public bathes and washing facility. At that time, there were no washing machines nor bathroom at home and the public bathes and wash house promoted a new hygienic area in the 30's. The building is closed now to the public but several projects exists for its reconversion to cultural and artistic activities. I just saw the light inside but it was the closure time. I don't know why, but I thought it could be interesting to come back the day after with a Kodak Tri-X film known to give a beautiful contrast in such light.

 

The Kodak Tri-X 36-exposure film was exposed for 400 ISO and developed using Tetenal UltraFin at dilution 1+10 for 9 min at 20°C. The film was exposed following the readings of the Praktica camera or a Minolta Autometer III fitted with a 10° finder privileging the shadow zones.

After process the film was digitalized using a Sony A7 body and a Minolta Slide Duplicator with a Minolta Auto Bellows III with a lens Minolta Bellow Macro Rokkor 50mm f/3.5.

 

About the camera :

 

This Praktica VLC of the 3rd generation (VLC3, 1978-1981) was manufactured by VEB Pentacon Dresden, Germany. It came with orignal Pentacon accessories including, a shade hood for its normal lens Pentacon "electric Multi-coated" 1:1,8 f=50mm, a waist finder, a straight magnification finder, and the regular pentaprism. There are also 6 different finder screens, the Pentacon hot shoe for a flash, lens and body caps, and a Praktica ever-ready case.

 

The camera has a CdS photometric circuitry powered by an unusual 4.5V battery that I replaced by a set of 3 LR44 alkaline batteries in series. As the ASAHI PENTAX Spomatic SP, the bridge circuit is insensitive to the voltage difference. To be independent of the finders, the cell is functioning behind the mirror as in the Topcon Super D or the Miranda Auto Sensorex EE.

 

This Praktica operates at full aperture using an electrical transmission of the aperture using 3 contacts on the M42 lens mount. It could however operates any non electric M42 lenses at real aperture too by acting on the rotary switch at the top left. As for the other Praktica of the L series the shutter is made of vertical steel curtains making the X-flash synchro at about 1/125 s.

 

Overall Pentacon produced 85 000 Praktica VLC between 1974 and 1981 among about 3 millions of Praktica "L" (LLC MTL TL L etc).

Some time ago my daughter got funky glasses that distort colors and multiply the image seen through them. Here's one weird example. You can see the keyboard and all screen edges... on top of the screen.

The wind did wonders for the Forest Hill posters. I love how the lower left sheet with the faux peely-uppy bit is one of the only pieced that isn't actually peeling up.

day three of the creativity bootcamp and today's word was multi layered.i had all kinds of fabulous,surrealistic idea's in my head about portraying the different layers of myself by combining multiple images into one ghostlike pic of cloned mini- me's but my tripod and the lighting were not agreeing with me : ( : (

 

so i thought what the heck i'll go further where i started yesterday and make a whole series of static selfies with a vintage look cause i really enjoy to delve deeper into old world developping techniques and really would like to take this style to another level during this course
