My mother, wife and I went for a drive to Minter Gardens, located near Vancouver, BC. An enjoyable time was had by all.

This was the evening’s second entrée. It was also classic and lovely. The sauce was excellent, lamb nicely finished and the minted green pea timbales loose, almost fluffy and mousse like (think loose set, slightly starchy custard).

Mint growing from the crack between the house and the patio--I had a pot of 'Kentucky Colonel' spearmint in the area last year, so it must have seed itself here. If it takes off (and being mint, it should), it's make a nice green buffer at the base of the wall.

David Burston, known affectionately by all as Mint. He was the promoter of the Next Big Thing gigs at the Joiners during my time in Southampton in the late '80s to early '90s and he had an uncanny knack of bringing bands-on-the-up to a tiny venue on the toilet circuit. This photo was probably taken early 1994 - judging from the Oasis flyer above his head. Sadly passed away in 2007. These photos are a tribute to him because he made it all possible...

I made these heart-shaped for the love of Valentine's Day. Also I thought it upped the cuteness. I don't have any photos from dipping because it was a mess and I didn't have a photo assistant. Dipping tip: I needed twice as much melted chocolate and I found mixing a tablespoon or two of coconut oil into it helped both the flavor and the ease of coating the cookies.

March - October. England, Wales, Southern Scotland. Small brown moth, usually has a single yellow spot on forewing. Found in gardens, grasslands, open woodland and marshland. Usually occurs near mint or thyme.
There was a self full of Danbury Mint items. Some pieces were so far back that I could not get any pictures

This mint just appeared in a pot with another plant (winter savory) - it must have self-seeded from who knows where. As mint has a reputation for spreading fast and pushing out any other plant that grows alongside it, I thought I had better separate it and put it in a pot of its own. I'm looking forward to using it in various ways over the summer!
