Mint Oreo Truffles

 

Ingredients

1 pkg. Double Stuf Oreos – Cool Mint Flavor – (1 lb. , 1 oz. pkg.)

• use 22 cookies with cream centers included

• use 10 cookies with cream centers discarded

1 pkg. (8 oz.) cream cheese, room temperature

chocolate bark or candy coating*

  

Directions

Finely crush the cookies in a food processor or a ziploc bag with a rolling pin.

Stir in softened cream cheese. Use the back of a large spoon to help mash the two together completely.

Roll the mixture into 1″ balls and place on wax paper covered cookie sheet.

Place covered in freezer or refrigerator for a few minutes to help retain shape when dipping in melted chocolate.

Melt chocolate as directed on the package and then dip balls into chocolate, tap off extra and set aside on wax paper covered cookie sheet to dry.

Refrigerate and enjoy!

 

A very near look to this mint. A very green photo, but I love the detail.

This plant was growing near the lake shore. It likes moist places... and also smells lovely if you happen to step on it or brush it as you pass.

Sun tea is refreshing summer drink often made in my area of southern New Mexico.

 

Even though glass gallon-sized sun tea makers/containers are commonly sold in this area, IMHO they make way too much for one person to conveniently consume in a few days. Plus, in my view, the gallon size takes up too much room in the refrigerator.

 

Preparation is simple. Fetch a convenient size jar with lid, in this case a quart canning jar with a recycled lid off another container. Fill with water, put in tea bags to suit the taste (two regular size tea bags per quart does it for me), put on the lid, and let it heat up in the full sun for about 4 hours or so. When sufficiently done, remove the tea bags, add other flavorings/sweeteners to suit (note the mint in the background, which I harvest routinely ;-} ), and refrigerate.

 

I like this stuff a lot better than sodas, and it's cheap too.

 

Yes, you can use green tea or other varieties that you like. And a tea ball works with this setup, too

The trip to Colorado was, really, not precisely a vacation. It concerned business both emotional and financial, but we didn't want it to be "all-business."

 

So, we tried to eat out somewhere different every night (despite the seemingly untrounceable rule of "Everything is 45 minutes from everything else").

 

Here, the Rivers Restaurant in Glenwood Springs, Colorado.

 

I ate elk.

 

Not an odd thing; I've eaten it many times in the past. We even raised elk at one point (angry, surly beasties, far more temperamental and grumpy than the whitetail deer we raised).

 

Delicious, nevertheless.

First thing I made with my new Decotti set. Doesn't it look delicious?? :) Mint green macaroon with whipped cream and rhinestones and faux berries. I was surprised by how HUGE it is. Like 3 inches in diameter.
