Danu's 32nd birthday dinner

This is the second time I've made meatloaf cupcakes. This time I used a mini muffin tin and real potatoes. See iron stef for more details

This was the aforementioned delicious dinner that a friend was gracious enough to make on Sunday evening. Meatloaf stuffed with mozzarella cheese, brown rice with tomatoes, zucchini, a delicious Greek salad, and red wine.

Soooo tasty.

I used a large baking dish and have the oven pre-heated to 350 degrees. You can form a loaf and bake it on a flat bakikng pan, but I like doing it this way. I better put it in the oven now...
