22,851 It's the last serving of the meatloaf I made when Susie prepared two bowls of ground beef, one to season for herself and one for me to spice up. I added oatmeal, tomato sauce, jalapenos, juice from the pickled jalapenos jar, leftover Italian dressing from Sorrento's, Tapatio, mustard, feta cheese, grated mexican cheese, garlic.... and that's all I remember. Best. Meatloaf. Ever.

I'm used to heavy, meaty, beefy and spiced meatloaf topped with ketchup/tomato sauce. I wasn't used to this. It wasn't bad, but it definitely wasn't the "best meatloaf I'll ever have". I had to scrape off the gravy and put on ketchup to really enjoy it.

It is 100 degrees outside....and I cooked for Larry.

2 lbs extra-lean ground beef (93/7 or better), 1/3 C tomato ketchup, 1 t soy sauce, 2 eggs, and 6 slices of bacon fried crisp and then thoroughly blotted and crumbled, go into the stand mixer on speed 2.

Turkey meatloaf made with onion, celery, thyme, sage, rosemary, chives and topped with cranberries. It was great, I did not get an after photo. It was so good we didn’t have any left.
