I grew up watching Rosanne, one of my all-time favourite shows. And I grew up watching them moan over, shift around on their plate, and occassionally eat, meatloaf. It represented poor food, and secretly I really wanted to try it.
So, here I am on the weekend, relaxing with the latest and best-ever Gourmet Traveller, and I spot a recipe for meatloaf. It's meant to be.
It was delicious. Made with the best ingredients, wrapped in prosciutto and boiled eggs in the middle, it looked quite the glamour retro dish. And with a simple salad on the side, it made the perfect meat and three veg dinner.
At work we came up with a theme of meatloaf as the main dish. We had a great selection of food.

My brother always gets the meatloaf. He judges places by their ability to produce meatloaf. It's not a bad theory, actually, but I was dying for an open face sandwich.

Good gravy, that's good gravy. I wish I'd had it put on the mashed potatoes, but the potatoes were great on their own, and better dipped in it. The meatloaf was very good as usual. I'm glad classes are in session again so the cafe will be using the steam tables more often.

I experimented with time-lapse, the splatter-patterns on the oven window and other images, but ultimately I went with the simple shot of 'loaf right as it finished in the oven. My Canon 50mm 1.4 does such nice things to glass containers.
from a Martha Stewart recipe I found in a magazine. i think it's one of the best meatloafs I've ever had.
it was a nice change of pace from the usual recipe - this one was a combination of ground round, ground veal and ground pork.

Three small differences in mine: 1) I used about 5 pieces of bread since mine was too wet. I think I overprocessed the veggies which added a lot of liquid and 2) I ran out of dry mustard, so used stone ground wet mustard instead. Worked just as well! 3) I found I had to cook for longer than 30 minutes - mine actually took about 45/50 minutes.
My whole house smells like the 1950s thanks to this delicious and EASY meatloaf.
Easy Meatloaf
Recipe from AllRecipes.com
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
1 tbsp Worcestershire sauce
Salt and pepper to taste
Other spices to taste (I used Italian seasoning)
Sauce
4 tablespoons brown sugar
3 tablespoons prepared mustard
2/3 cup ketchup
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine the meat, egg, onion, milk, Worcestershire sauce and bread crumbs.
3. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan.
4. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour half over the meatloaf, and reserve the other half.
5. Bake at 350 degrees F (175 degrees C) for 1+ hour or until the internal temperature reads 160 degrees F.

(Meatloaf Effigy design = Me. Sculpted by my lovely wife. In case you need the general 411, the Meatloaf Effigy is a little dude purportedly made of, uhhh, meatloaf. Why did I create him? I was maybe drunk, or bored, or both. There's just no telling.)
Over the weekend my Mom made this delightful soup from a leftover Meatloaf. I placed some soup in a bowl on the stovetop area with some of the fresh ingredients. I wish I had a bowl of it right now!

Time to eat! I can only eat five of the Korean Meatloaf patty's and all the sliced fried potatoes. The Korean Meatloaf gets ketchup and the potatoes get Miracle Whip...it was so good!
