Blogged here Making Sprouted Whole Wheat Flour at Nika's Culinaria

Unsprouted grains have phytic acid en.wikipedia.org/wiki/Phytic_acid that is mitigated by sprouting.

As humans are not ruminants, we do not have phytase, the enzyme to break down phytic acid.

"Phytic acid is a strong chelator of important minerals such as calcium, magnesium, iron, and zinc, and can therefore contribute to mineral deficiencies in people whose diets rely on these foods for their mineral intake, such as those in developing countries.[6][7] It also acts as an acid, chelating the vitamin niacin, which is basic, causing the condition known as pellagra. [8] In this way, it is an anti-nutrient.[1] For people with a particularly low intake of essential minerals, especially young children and those in developing countries, this effect can be undesirable." source en.wikipedia.org/wiki/Phytic_acid

The flour shown in this photo series will not cause our bodies to become deficient in all these nutrients.

The pulp is stirred in a large stone tub and the worker uses the screen to shake and stir the paper pulp until a layer is left on it. This technique of hand making paper is a tradition carried out since 100 B.C.

This is how I've made Guru beads. It's a really noisy and dangerous method. I don't recommend it for use around children or people inexperienced with Dremel tools. Even for he experienced, I don't recommend it. I'm merely showing this method to explain how I do it.
