I've been wanting to make suet cakes for the longest time but I had trouble finding suet for them. Finally I broke down and bought a 5 gallon pail of pastured beef tallow from US Wellness Meats (I know 5 gallon is a lot). We'll be using some of this in our cooking, and some of it will be added to the homemade pet food. It will also be used to make suet cakes for our little feathered friends. We love providing suet because we get a lot of woodpeckers at our feeder by having it. A lot of other birds love it as well and it provides a good source of fat and energy for them during the cold winter months.

One of our other favorite fresh summer tastes is pesto. I usually make a batch and we enjoy it on; homemade pasta, pizza, toast, vegetables, etc. My pesto recipe is very simple, I use walnuts or pecans instead of pine nuts because I always have some in the freezer.

 

FRESH SUMMER PESTO

1/4 cup of walnuts

2 cloves of garlic, sliced

1 1/2 cups of fresh basil leaves

1/3 cup good olive oil

3 T. butter

1/4 cup romano cheese

salt & pepper to taste

 

Add walnuts, garlic and basil to food processor and process until finely chopped. Drizzle with 1/3 cup of good olive oil and process until combined, add 3 Tablespoons of butter and pulse until blended. Empty contents into bowl and stir in cheese and salt and pepper to taste. Allow to rest for a few hours before serving.

Dutch processed cocoa powder mixed with strained raspberry puree, then left to dry out overnight. Perfectly berry-laced flavour, unsweetened!

Ever since Mr Chiots and I mentioned that we were building a teardrop camper people keep asking for photos. We were joking the other day that no one really believes that we're doing it, much less that we'll have it finished this month. Here's some proof for all you who keep wanting to know how it's going and keep asking for photos.

 

Mr Chiots has been spending a few hours almost every evening out in the garage cutting, sanding, wiring, measuring, nailing and putting together the little camper. The garage is filled with formaldyhyde free plywood, aluminum for skinning and various shapes and sizes of lights and other things needed for the build. We're building it out of all no/low VOC & natural materials.

Eighteen pounds of sauerkraut, that's how much I made 10 days ago. People keep asking me, "What are you going to do with all that?". I'll give a few jars away to friends, but we'll eat most it. It will be on our plate every meal until it's gone. The chiots will get some each morning as well. Scott Thomas is a designer, an inventor, a thinker and an innovator. He counts President Obama among his clients, and served as Design Director for the Obama campaign. Scott recently curated and edited a book called Designing Obama, a publication that documents the presidential campaign's use of art, design and a grassroots approach to publicity and propaganda. Rad.

 

Scott filled this Scout Book with sketches for that next big thing he's working on. I'm thoroughly impressed with his planning and plotting.

Ina Weise is a young lady with quite a bit of creative experience under her belt. She is currently an intern at The Post Family, but before calling Chicago home, she studied in Austria, Poland, and her native Germany. Her command of geometric shapes is astonishing, and her work spans mediums from textiles to printmaking to apparel to installation. Her installation at the Post Family's Family Room Gallery will close this week; if you're in Chicago, stop in to celebrate the closing of her show The Following of One Thing After Another.

 

Ina explores circles in this pocket notebook, incorporating pen, pencil, cut paper, collage, xerox transfer and woven paper.

These Scout Books are HOT!

 

Mt. Hood Community College’s Integrated Media Program recently had it’s yearly Portfolio Show featuring the work of 18 graphic design students and 12 digital photography students of the class of 2010. They handed these Scout Books out to more than 500 attendees of the show and encouraged them all to vote on their favorite portfolio. The book was also used to take notes on each participant and served as a great take-away.

Thorsten Keller is a media designer in Hamburg and keeps this beautiful blog all about the city's architecture, design, and photography! He includes a calendar on his blog where artists and galleries can add in their own significant dates and interesting activities going on around the city. Very cool. Keller's notebooks turned out beautifully as well!

I've blogged about my home canned tomato soup many times. It's one of my most popular posts, people are always writing asking the recipe and telling me how much they love the soup. It's one of the few things I can every year without fail. The first year I canned only 30 pints of it and it was gone way too soon. Last year I did 31 quarts and 7 pints and we only have 2 quarts left.

 

I use an old Squeezo to make my soup, this one was handed down to me by my mom. It's the one we used for applesauce & tomatoes growing up. It's a relic but still works great, and I love that it doesn't have any plastic parts. I love pulling it out, I even use the same block of wood on the counter that we used growing up.

These cookies aren’t you typical gingerbread men/women. If you don’t like spicy things, you will not like this version. This recipe has as least double the spices of most recipes and I always use blackstrap molasses to make the flavor even stronger. If you’re a fan of spicy gingerbread you will really appreciate the flavor in this version.

I got this book (Jam It, Pickle It, Cure It) from the library and I've made a few recipes from it. I've been making a lot of these things for years so they weren't new. I was really suprized by the homemade ketchup - I usually hate homemade ketchup but this is great. Of course I changed the recipe a bit.

You want to strain your finished maple syrup to get all the maple sand or sugar sand out of it. I ordered a piece of organic wool felt to use, but it hasn't arrived yet, so I'm using some cheesecloth.

When you grow you own strawberries they’re so much better than what you get at the store, you don’t want to overpower them with too much sugar. I make homemade shortcake with real butter, whole grain flour, crystallized ginger and just a small amount of sugar. This lets the sweetness and flavor of homegrown sun ripened strawberries be the star of the meal. The shortcakes are cooked until crispy on the outside and soft on the inside. When cooled we crumble them in a bowl, top with strawberries macerated with maple syrup and a dash of vanilla. Then we top it all off with some raw milk.
