I've been dabbling in eating a raw vegan diet for the last couple of months, and now I'm ready to get serious. For 30 days I'm going to commit in a way I haven't committed before. I don't plan to be 100%, but 75-80 would be nice. I'm following 80-10-10 (a book by Doug Graham), a lowfat vegan diet with fruit and greens as the foundation. My secret weapon? The green smoothie. This one is my favorite:

3-4 bananas

1 C water

2 C baby spinach

Blend it up in the Vitamix and YUM. Great way to start the day.

My sister took this photo of me on one of those Mac Photo Booth things while I was standing around, bombarding the Apple store employees with questions about Macs and iPod nanos. I wasn't even posing for this photo. It is clear I have no idea what the hell is going on.

 

As of this afternoon, I am now the proud - if slightly confused - owner of a brandnew, spiffy-looking MacBook. This is my very first laptop, as well as the first Apple product I've ever owned.

 

I was just scrolling through my 'comments I've made' page, and had to laugh at this one - 36 hours after I asked Fathima for advice on Macs, I didn't even wait for her reply before I went ahead and splurged on one.

 

The first things I did when I got home:

1. Figure out how to connect to the internet

2. Download Firefox

3. Download flickr-uploader

 

Alright, then. Time to rock it up, rockstars!

Note: I actually ate this texture, and it was just as good as it looks! I highly recommend Schwan's Wild Berry Frozen Yogurt. The creamy yogurt is flavored with ribbons of blackberry, raspberry and black raspberry goodness. It's low fat, yummy and really cool to look at. Have fun with it!

January photo Challenge

 

My fridge, freezer and pantry are always stocked. Lots of good recipe's comin' up this week. I try and plan out my meals for the week and do one big shop over the weekend to prepare for dinners and lunches. My grocery bill was big this week. I am also buying more and more organic which costs more, but I think is better for my peeps.

Roasted Cherry Brownies with Black Fudge Frosting

Best coconut cake I have ever eaten.

Light and Creamy coconut cake

 

To bake cake: (you may substitute yellow cake mix and follow directions on box)

2 egg whites or one egg (whole egg makes it yellower)

1/3 cup Benechol or Smart balance spread

4 oz. unsweetened applesauce cup

1 1 /2 cup self rising flour

2/ 3 cup splenda or sugar

1/4 cup lowfat or skim milk

1 tsp vanilla

Mix well,, bake in square 8X8X2 " pan sprayed with oil, bake at 350 degrees for 20-25 min (or until knife comes out clean from center of cake)

 

To mix your glaze:

Take one can of cream of coconut (keep can) pour into saucepan.(this can usually be found with alcoholic drinks) Fill the can 1 inch below the rim of the can with milk. Add 1 tablespoon of corn starch. Stir and add to saucepan. Stirring continuously, bring to boil at medium heat until thickens. When cooled, return half of the mixture to the can. When cooled somewhat, cover and freeze for next cake (or you can double the recipe). (another option is use coconut milk, add your own splenda or sugar, milk and corn starch)

 

When the cake is ready, remove from oven. Using chopstick tip or fork or skewer, poke holes into the entire cake. Pour the glaze over the entire warm cake. Cool cake completely.

 

For topping:

Cut across half of the frozen fat free (& sugar free if available whipped topping, scooping out into a bowl for thawing. (you may zap it, but be careful not to do it more than a few seconds) If you like lots of coconut, mix in some coconut with the whipped topping to taste, If not spread the thawed whipped topping alone to frost. (you may make fresh homemade, if you like, about 10 oz.) Then sprinkle the frosting with coconut. Cover and refrigerate until serving. cut into squares. Serves 9-16 squares.

Lowfat cottage cheese, blackberries, a black bean empanada, and edamame. It was way too hot to cook tonight, but luckily I had all this stuff in the fridge and freezer.

This time of year, when you hit the last warm days of summer and gardens are bountiful, my idea of the perfect lunch is tomato and cucumber sandwiches and a good mystery novel. In this case, appropriately, The Savage Garden by Mark Mills- a new writer to me and very enjoyable.

Serving this in martini glasses makes an elegant finish to any special night - I made this for the first time for my Mother's Day gift (a full-out dinner) to cap off the meal with something light after she had my Summer Pasta With Broccoli Rabe And Croutons.

 

Everything was made in the morning: the custard chilled in the glasses and the compote was added late afternoon. The granola was added right before serving, to keep the crunch.

This time I'm all about the watermelon rind - we had a lot left over from school and I couldn't wait to play with it in as many ways as possible! This chutney has pears, American saffron (AKA Calendula*), cloves, peppers, ginger and garlic along with the peeled rind - no shortage of flavour!

*American saffron can also refer to safflower, however calendula petals are less expensive and (IMHO) more effective at recreating the delicate nature of true saffron

The bigger the garnish, the closer to god. :) I was trying to make a "cupcake of the crystal skull", but it was REALLY hard to work with the molten sugar. I was unable to make it skull-like.

Baked in a casserole for 2 hours, this melange of spicy trimmings from a leg of lamb (the meat that was too close to the bone for mom to bother with back at Easter), Thai chili, garlic, carrot and onions is meltingly tender and rich - but deceptively low in fat!

Pumpkin Spice Biscotti are a spicy, crunchy snack whenever the fall feeling strikes!

  

This ant is extracting honeydew from the alimentary canal of an aphid. The ants watch over the aphids, protecting them from predators. In exchange, the ants get to "farm" the aphids. They stroke the sides of the aphids until the aphids excrete a clear fluid called honeydew. The ants carry this fluid back to their nests where they use it in their breakfast cereals, cheeses, and lowfat vanilla mocha lattes.

 

This relationship is known as a service-resource relationship. The aphids provide the resource in exchange for a service, the way cows voluntarily live on dairy farms and let us protect them from… uh, never mind. In this photo are a couple of gray aphid exoskeletons. These aphids have perished for whatever reason.

Good for a light vegan lunch, stacks of broiled eggplant and tomatoes, basil and vegan parmesan get just a sprinkle of salt and pepper before being finished with balsamic and served warm.
