I'd love to have abs like that.

No matter the flavor, I do not recommend ice cream with "no sugar added" or "1/2 the fat." Ice cream is not the place to reduce your consumption of sugars and fats!

One of the things I miss the most about my mom, is her amazing (lowfat) breakfast. Real breakfast.

inspired by a delicious photo from Jonathan Craddock.. i wanted to duplicate his exact recipe but use only vegan ingredients in place of the cheese, milk and butter.. why vegan? because it gave me a free pass to help myself to as much of the mac & cheese as i'd like! :)

 

cheese (the real deal) is a weakness of mine.. for that reason, i'll never be able to go 100% vegan.. just today, i tasted the most delicious wasabi cheddar! mac & cheese is rather rich and i wanted to take pleasure in eating it without all the guilt.. this vegan version was a total success.. Jonathan, thanks again for the inspiration and recipe!

Total: 395 calories

Although you can not "see" it, this milkshake was made with low fat milk. And because I prefer it cold but not ice cold, no crushed ice was added.

For the 4th of July, I modified this recipe from Vegan Cupcakes Take Over the World. It's the Sexy Lowfat Vanilla recipe (because I sometimes need to fit into that tube-top) with added lemon zest and extract. Then I followed the instructions for the Strawberry tall cakes (that is cutting out the center of the cupcake, stuffing it with fresh berries, putting the cap back on and frosting the whole lot!)

 

I'll post pix of that process if anyone is interested, and if I can find them. :)

At a shop like Wilson's, a sense of abundance is the name of the game. Not only does the store carry large quantities of items, but they also carry a large variety. In addition to the milks noted above, there's half-and-half, low fat chocolate milk, one percent milk, two percent milk, buttermilk, and lowfat buttermilk. There are glass bottles, plastic bottles, and paper cartons. And don't get me started on the eggs. The choices are mind-boggling. Brown eggs, white eggs, big eggs, small eggs, free range and high omega-3, and these are just the beginning. You go into a place like this to buy one or two items and you come out with arms filled with shopping bags. Still, it's probably cheaper--and more fun--than vitamin supplements.

DIY fish tacos with 3 fish patties (these i made with snapper, mixed wild rice and rolled oats mixed in for added nutritional benefit!), corn tortillas and homemade tartar sauce (just lowfat mayo with pickle relish) in container.

 

Radish, broccoflower and marbled shoyu quail egg too. Cottage cheese with edamame and carrot flower. His kabocha has ginger dressing on it. And a fruit section with strawberries, grapes and apple slices.

INGREDIENTS:

 

1 container (6 oz) Yoplait® Light Fat Free strawberry yogurt

1/2 cup frozen (thawed) reduced-fat whipped topping

4 strawberries, cut in half

 

DIRECTIONS:

 

1. Place mini paper baking cup in each of 8 mini muffin cups. Spoon slightly less than 2 tablespoons yogurt into each cup.

 

2. Top each with small dollop of whipped topping. Cover with foil or plastic wrap. Freeze at least 1 hour. Top with strawberry half just before serving.

This is a very simple but delicious rustic one pot dish. Cook over a campfire or slightly less adventurously in a tagine, claypot or casserole. Its low in fat but high in flavour. Chocolate Raspberry Tart with White Chocolate Cream from Cooking Light.

 

This was OK. I could think of a million ways to improve it.

1. Add more white chocolate to the cream, or totally remove the white chocolate.

2. Use *real* chocolate in the cream

3. Mix some mashed berries into the cream.

 

OK, there are only three, but the possibilities are endless.
