Street food in Mexico City is popular and they offer a wide range of goodies like tortillas at this stand.
One of my holiday gifts this year was a two-burner griddle. Today it was flipped on its grill side to car some veg. Besides the massive smoke in the kitchen, it turned out well.

This is probably one of the most cooperative American Redstarts I have ever encountered. He was not hopping and flitting around like a flea on a hot griddle!!! So, it allowed me a few decent shots as I was able to get focused on him for a few seconds before he moved again.

Description Just as the Amazon, the Mississippi, the Zambezi, the Yangtze, and Earth’s other mighty rivers drain the continents, rivers also drain Antarctica, only in this frozen landscape, the rivers are ice. Under their own massive weight, the Antarctic Ice Sheets are constantly spreading out like a mound of batter on a griddle. The outer edges of the ice sheets crumble into the Southern Ocean as they spread, giving birth to icebergs. In some places, steep mountains channel the flowing ice sheet into fast-moving rivers of ice. The Byrd Glacier is one such place. Located near McMurdo Station, the principal U.S. Antarctic Research Base, the Byrd Glacier plunges through a deep, 15-mile-wide valley in the Transatlantic Mountains to create a 100-mile-long, rock-floored ice stream.
This image, captured by the Landsat 7 satellite on December 24, 1999, shows part of the Byrd Glacier flowing through the Transatlantic Mountains. The glacial ice has a blue cast, and bears long stripes that echo the currents in a river. The current in this ice stream carries the glacier towards the Ross Ice Shelf at a rate of one half mile per year. Though this may seem like a snail’s pace, the Byrd Glacier is fast-flowing. It contributes more ice to the Ross Ice Shelf than any other ice stream, and the long grooves that mark its outflow are visible all the way to the edge of the Ross Ice Sheet, some 270 miles from the foot of the mountains.
A century ago, this site would have been inaccessible to all but a hardy handful of intrepid explorers. Now this frigid, windy, remote continent is revealing its features not just to visiting researchers, but to anyone with access to satellite imagery. In the spring of 2007, NASA and the U.S. Geological Survey (USGS) announced the release of an unprecedented image of Antarctica: the Landsat Image Mosaic of Antarctica (LIMA). With each pixel representing 15 by 15 meters (49 by 49 feet), LIMA offers ten times greater detail than any other satellite map previously available. LIMA images are derived from observations made by Landsat 7’s Enhanced Thematic Mapper Plus sensor, such as the image above.

Canadian bacon & egg fried in cocoanut oil on a cast iron griddle
Thick, substantial and slightly sweeter than the American griddle pancakes, yet impossible fluffy at the same time. Served with chocolate fudge sauce piped in a lattice pattern
It was so hot that day you could fry an egg on that rock.
I suppose some guys would think she's so hot ...you could fry an egg on her : )

INGREDIENTS:
1/2 lb bacon (8 slices)
1/3 cup packed brown sugar
2 cups Original Bisquick® mix
1 cup of your favorite regular or nonalcoholic beer
2 eggs
DIRECTIONS:
1. Heat oven to 350°F. Line cookie sheet with foil. Place wire rack on top of cookie sheet. Arrange bacon in single layer on top of rack. Bake 10 minutes.
2. Sprinkle bacon with half the brown sugar. Bake 10 minutes longer. Turn bacon over; sprinkle with remaining brown sugar. Bake 10 to 15 minutes longer or until golden brown. Remove from rack. Cool completely, about 15 minutes. Crumble bacon into small pieces; set aside.
3. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with vegetable oil or shortening.
4. In medium bowl, beat Bisquick mix, beer and eggs with whisk until blended. If batter is too thick, add additional beer until desired consistency. Stir in bacon. Pour by 1/2 cupfuls onto hot griddle. Cook until edges are dry. Turn; cook until golden brown.

The NRM's preserved BR Mk1 (diag 30) Buffet Griddle SC1100 behind 47543 at York - 13/09/1979.
This coach now has badly faded & blistered paintwork and resides on the Great Central Railway at Loughborough. However, it seems its future is brighter, having recently had the interior asbestos removed.

Für Mutabal (Auberginenmus mit Tahina, Knoblauch, Olivenöl)
For Mutabal, an eggplant mousse with tahina, garlic, lemon juice and olive oil. The eggplants are grilled until black all over for 45 minutes and then finished in the oven for another 10 min. quite an effort, lovely smoky aroma makes it worth it
Sous vide beef strip steaks marinated with seasonings, butter, and fresh rosemary sprigs seared on a cast iron griddle (plancha), griddle seared divers scallops, Portuguese style green beans with tomato, onion, garlic, and bacon (no linguicia in the fridge), a big fresh garden salad with all kinds of goodies in it, and fresh from the oven 8 seeded multgrain sourdough bread. A big bowl of sauted mushrooms with the sous vide marinate as a stock while cooking meant that I didnt need to use any butter or seasoning them and the beefy juices really added a flavor bomb in the mushrooms. Waste not want not! Life is good
An oldie but a goodie. I didn't used to like gooey yolks, but when my wife started making this recipe for breakfast I changed my mind very quickly!

Melody has been playing with her little sisters all day. Greta Griddle has been jumping up and down on the bed and she better watch out that she doesn't fall off! Baby Diddle has her toys all out of the toy box and the two puppies with their diapers on are having fun playing too!
