Julia's 牛肉芹菜饺子 Beef and Chinese Celery Dumplings, made with Little Creek grass-fed beef. Very tasty beef indeed!

Julia's last batch of 牛肉芹菜饺子 Beef and Chinese Celery Dumplings had a powdery, grainy texture in the beef filling, so this time, Julia didn't add as much water, and sure enough the filling wasn't powdery but just a tad on the dry side. I suspect that this grass-fed beef is quite lean, and adding water and cornstarch would make it more moist.

Rather tender round steak that we made into a hotpot with daikon and vegies.

 

Because it was a lean cut of beef, it wasn't as beefy in a stock, but quite nicein beef stroganoff, when browned.

Hiking season also means jerky season around here, our 11 year old’s must-have trail snack. We are fortunate to be able to have access to some really beautiful beef- raised ethically and grass fed, on a family farm nearby. Jerky is incredibly simple to prepare- begin to thaw a roast, and slice to your liking while still quite cold or semi frozen (makes cutting it thin significantly easier), add your favourite marinade, leave overnight or longer to marinate, then spread thinly on dehydrator sheets, dry at 165f- Test often as it’s done faster than you think (it takes four hours for a full load on my 9 tray Excalibur). Marinade was a bit of a Korean Bulgogi but with a tweak, gochujang, a shredded apple, fresh ginger, garlic, Worcershire sauce, a smoked plum butter, coconut sugar, sea salt. Hot congee on a chilly Autumn evening. The Little Creek grass-fed beef is really rich and minerally. Tasty stuff.

Julia made a wondeful osso bucco with port, because we didn't have white wine on hand. It turned out amazingly good. The beefiness from the Little Creek grass-fed beef stood out from the mellow sweet flavours of the sauce.

 

Served with cauliflower puree to balance the richness of the stew.

Simple and easy to make too!

Cook noodles, stir-fry meat and vegetables separately and toss together with soy sauce, sugar and sesame oil to taste.

The Boroondara Farmers Market is the perfect chance to stock up on farm-fresh supplies and delicious treats.

 

Entry is $2.

 

The Farmers Market was started as an initiative by the City of Boroondara and is partnered by the Rotary Club of Glenferrie. Money raised by the entry fee helps fund Rotary and Foundation Boroondara projects.

I spent about $90 at the farmer's market this week, more than I usually spend, and it's because I bought beef and chicken. The beef vendor sells pastured chickens which I didn't realize until the season was almost over. I'm going to try this one and see how it is. If it's good, I might join their chicken CSA and can pick up my chicken at the farmer's market which is convenient. If you are interested in joining the chicken CSA, let me know. Julia made a yummy chilli con carne tonight served with brown rice and Greek yoghurt instead of sour cream. Delicious with an extra sprinkle of spicy roasted chilli powder!

 

The no-fat Greek-style yoghurt was a bit runny. I think I prefer the Tamar Valley pot-set yoghurt.

Very fine-grained and lean flesh. The pickled corned beef wasn't too salty either, letting the natural beefy flavour of the beef shine through.

The minced beef from the Little Creek Cattle Company is too lean. Everytime we use it in dumplings and meatballs, it tends to be a bit dry and almost powdery. Still very tasty though.

Cows, sheep, and other grazing animals are endowed with the ability to convert grasses, which those of us who possess only one stomach cannot digest, into food that we can digest. They can do this because they are ruminants, which is to say that they possess a rumen, a 45 or so gallon (in the case of cows) fermentation tank in which resident bacteria convert cellulose into protein and fats.

Salted turnip (really, 白萝卜 daikon radish) that is salted and bundled like this is new to me. Each bundle consists of a the unsightly knobbly top of the radish rolled in a thin sheet or radish, cut lengthwise, and finally wrapped with the salted radish tops. The radish tops were tought and stringy, but might be ok to flavour a soup. The rest of the salted turnip was quite tender but so salty you wouldn't believe! As is typical with these salted veg, you're supposed to rinse, then soak until the saltiness is about right, and you don't add any more salt to the dish you're making.

 

Batons of salted turnip, together with the minced beef and some finely diced celery and chopped spring onion, the salted turnip gave the steamed meatloaf a fragrant mustiness. Surprisingly, there was a nice sweetness to the salted turnip, and I was glad I cut them differently t allow them to stand out.

 

Not a bad dish, if I do say so myself :)

It was good that the flavour and minerally Little Creek grass-fed beef was beefy enough to hold it's own.

We love the beefy grass-fed beef from the Little Creek Cattle Company. While it might be tougher than regular beef, it is also tastier.

 

The trick is to slice thinly and not overcooked it.

Julia stewed beef ribs using the same style as the 焖牛腩 beef brisket stew she made before. With the lean grass-fed beef, we found that the texture was best when cooked through, but still with a bit of bite. Reheating it a day later, some pieces were a bit dry.
