My BFF at work and fellow rock-nerd will no longer be my work-spouse (she's moving to a different job), so I wanted to make her something special.
So they didn't turn out as perfectly as I'd envisioned, and some are more just minerals and rocks than specifically geodes, but... well, this one resembles Coal Breccia.
The cupcakes are gluten-free honey-vanilla cake, iced with a combination of vanilla frosting, nutella, various decorating sugars, edible glitter, and chocolate. (I really wanted to use some pearl sugar but couldn't find any on short notice. Boo.)

Strawberry Rubarb with Breyers natrual vanilla ice cream!!
Gluten free strawberry rhubarb pie. Pie crust from scratch. Bought a huge flat of fresh strawberries and a big ol bunch of rhubarb at the farmers market.
Dinner consisted of furikake omusubi(triangle rice ball with rice sprinkles mixed in), steamed carrot strips and broccoli, hard boiled egg half, chicken strips and frozen mango chunks.
grilled shrimp marinated in a garlic vinaigrette with onions, tomatoes, serrano peppers and yucatan pico de gallo. served over house rice.
Lentils, mushroom and pea curry, saag aloo (spinach and potato) with oil-free low salt lime pickles, yum!
Kidney Bean Feijoda
1 onion, diced
1 cloe of garlic, minced
1 carrot, sliced
2 green peppers, diced
3 potatoes, peeled and diced
1 large zucchini, peeled and chopped
1 28oz can salt-free diced tomatoes
2 cups of cooked kidney beans
1/2 tsp cumin
1 tsp oregano
1 tsp chile powder (or more or less, to taste)
a dash of chipotle chile pepper powder
2 bay leaves
1/4 cup apple cider vinegar
In a pot, brown the onion in garlic in water or vegetable stock. Add the carrots and peppers and cook for a few minutes more. Add the rest of the vegetables, the beans and the spices. Heat until they are cooked through. Serve over rice.
Peanuts, almonds, and gram crackers ground up with tapioca flour, raw sugar, one banana and almond milk.
Oh yea - a delicious fruit salad with a to-die-for pomegranate dressing.
