With a taste most similar to Bud Light, its gluten-containing cousin, Redbridge makes for a delicious gluten-free beer. Annette said it tasted phenomenal when matched with Uno's gluten-free pizza.

I originally title this "whole wheat" bread, which would be exactly the opposite of gluten-free. Oops!

These were good. I need a bigger pan (or fill them less!), but the structure was perfect.

 

too sweet, though. I'm sort of waning on sugar these days. next step -- make them with only honey. and maybe applesauce instead of butter or oil.

 

lord, that would make them gluten-free, sugar-free, and fat-free.

 

after we finish the puff pastry, this is the next big task.

Garlic kale, jerk tempeh, red beans and rice, coconut mashed yams, and fried plantains.

on brown rice bread with cheese stick, cucumber slices, dried cranberries and clementine. GF graham cracker(below the sandwich) for treat.

My lovely friend Kaytlyn designed these for us, as a gift fot the wedding. Each guest who arrived was given one of these, and each checked off ingredients that people could be trying to avoid:

 

gluten

meat

sugar/honey

tree nuts

 

etc.

 

They worked. people could walk around and spot, immediately, what they could not eat. And could.

 

Every dish there was gluten-free.

For the first time in two years I have had bagels. The difference is that I have to make them gluten free, which proved difficult, but I know I will do better next time. They're a little flat, but for the first time: Gluten Free Vegan Bagels!

 

2 tbsp yeast

1 tbsp agave

2 cups hot water

4 tbsp agar

4 cups brown rice flour

1/2 cup of quinoa flour

1/2 cup potato flour

1/2 cup masa flour (fine cornmeal)

1/4 cup tapioca flour

1/4 cup corn starch

(basucally 6 cups of flour altogether)

1 and 1/2 tsp xanthum gum

1 and 1/2 tsp guar gum

2 tsp salt

1/2 cup oil

more agave and water to boil the bagels in

 

boil the water, add the agar, let sit for 10 - 15 minutes

add the yeast, agave, and 2 cups of the flour

let stand for 10 minutes to make a sponge

stir in the oil

add the rest of the flour, gums, and salt

first stir with a whisk then continue with a spoon or your very clean hands

Shape the dough into bagels, I have not yet figured out how to make them look nice, but I'll tell you when I do!

This should make about 12 bagels

let stand for 5 minutes

preheat the oven to 375 degrees F

Boil a 4 quart saucepan filled 2/3 of the way with water

add four bagels at a time, boil, covered with a lid, for about 30 seconds

take them out and place them on a greased pan.

Bake them for 25 to 30 minutes

let cool, and enjoy

Wahoo! A saturated-fat-free Banana Bread? And this one has Omega 3 and Omega 6 (aka "Good fats") when you use the chopped walnuts.
