CILANTRO SAUCE
35 g. (1 c.) packed Cilantro
10 g. (½ c.) packed Parsley
30 g. (1/3 c.) coarsely chopped Scallions
1 Garlic Clove
10 ml. (2 tsp.) Lime Juice
Be prepared, one cup of packed cilantro is a lot. If buying it, it’s likely to be close to one entire bunch, maybe two. Same with the parsley, even though it is only a half cup. I don’t like recipes written like this that say ‘1 cup packed’ because that can vary largely from one iteration to the next. This is partly why I use metric measurements. I stopped at 35 grams for the cilantro but probably could have fit another 35 grams.
