Chocolate Coffee Mini Cupcakes with Nutella Buttercream Frosting

Couldn't decide whether this was "messy composition" or "pleasingly natural." I decided that I quite liked the messiness. Feel free to say what you think!!

I did an interview for local radio (BBC Northampton) yesterday and took these in for them. They were chocolate cupcakes filled with strawberry pieces & a cream cheese centre, topped with strawberry frosting, a chocolate dipped strawberry and a drizzle of chocolate.

Such an easy and delicious frosting!

3 ounce pkg. of Jello (favorite flavor)

2/3 cup granulated sugar

1 egg white

1 teaspoon vanilla

Place the above ingredients in a large GLASS OR METAL mixing bowl (OF A STAND MIXER). Turn the mixer on high just as you add ½ cup of boiling water. Whip on high for five minutes and you will get this:
