From the East End Food Co-op - with our own sun-dried tomatoes. RUSTIC BAKED POLENTA
SERVINGS: 8 SERVINGS
INGREDIENTS
3 cups water
1 cup plain non-dairy milk soy, almond, rice etc.
Salt and pepper to taste
1 cup coarse-ground polenta
2 oz. vegan grated Parmesan cheese or 1 oz. of Nutritional Yeast
3 Tbsp.. unsalted non-dairy butter
9 Tbsp. Olive oil
1 onion chopped fine
1 large eggplant cut into 1/2-inch cubes
12 oz. cherry tomatoes
8 oz. fresh mushrooms wild or cultivated, sliced thin
3 crushed garlic cloves
3 Tbsp. Italian Seasoning
2 Tbsp. Fresh Italian Parsley
28 oz. can of tomato sauce
16 oz. frozen spinach drained.
4 oz. of vegan mozzarella cheese shredded
INSTRUCTIONS
Preheat oven to 400ºF.
In large saucepan bring water and milk to a boil. Lightly salt the mixture and stir.
Slowly pour in polenta while stirring back and forth. Reduce to a simmer. Cover, stirring often, until mixture is thick and smooth. Remove from heat and stir in Parmesan (or nutritional yeast) and butter. Stir in spinach and mix well. Salt and Pepper to taste.
Pour polenta into 9 x 13 in. baking dish.
In a large frying pan, heat a Tbsp. of olive oil. Add the onion and garlic and cook until the onion starts to brown. Transfer to mixing bowl and set aside.
Add 1 Tbsp. of olive oil to same pan and cook mushrooms until they have released their liquid and are well browned. Transfer to mixing bowl.
Heat 6 Tbsp. of the oil in the same pan. Add the eggplant and cook until golden.Tranfer to mixing bowl.
Heat 1 Tbsp. of olive oil and cook cherry tomatoes until the tomatoes are lightly charred and about to burst. Transfer to mixing bowl.
Add the tomato sauce, Italian seasoning, and salt and pepper to taste.
Return to skillet and simmer until thick. Spread mixture evenly over polenta, then sprinkle with vegan cheese and fresh Italian parsley.
Bake until warmed through and cheese is melted.

Single light: SB-28 into reflective umbrella low and close camera right, slightly oblique to keep light on the darker cake and not directly on the lighter ice cream. Gelled 1/2 CTO.
I don't know what the real name is for these things. I made some sweet pie crust filled with preserved pears and plum jelly (both from my grandma) and a little flour to thicken it. Tiny and sweet.

Remember how I made a pear-nectarine pie for Pi(e) Day, and I said it was the most delicious thing I have ever made in my life? Yeah that pie has been de-throned.
Homemade bread + golden raisins and this recipe, roughly followed.
The sauce is sugar, butter, marmalade, and deliciously strong homemade vanilla.
Tinkered with a recipe to include some whole wheat, mashed banana and some chocolate. So moist. Even though they don't rise up super high, I was really happy with the results. Find the recipe at: tammabley.blogspot.com

I was asked to do the cake last minute for my nephew's birthday party which was on Saturday. I basically came up with the idea on the spot in a matter of about 2 minutes. It came out waaay cuter than I ever imagined. I think this is to date one of my best yet. I'm definitely NOT bragging, but I'm pleased with it myself, and he and his mom along with all his friends loved it. Boys, the grosser it is the more they love it right?
I have an absolute craving for salty stuff these days. And for all things fresh like cucumbers and peppers. So Greek salad with original feta cheese is just perfect. Actually, I had to postpone this dish: with 37C in town all tomatoes and cucumbers were sold out!

After the dough is kneaded it's rolled out, then cut into strips and put through a pasta machine then meatballs are laid out on the dough, the dough's folded over, then cut into raviolis and passed to the closers.

If you want slightly sweetened almond milk add dates (it's a good idea to soak them first so they don't jam up in your food processor) but they will work if not soaked.
