I don't recall when I first installed a bamboo/netting fence around the vegetable garden, but it was long overdue to be replaced. Not foolproof but it has decreased the amount of animal damage I get. About halfway done.

I needed to get rid of some of the MOUNTAINS of fresh cranberries that we have left over from thanksgiving. This recipe turned out wicked tart, but I realized the next day that this may be due in part to the fact that I forgot to add the flour to the filling (oops!). However, if you're a fan of sour patch kids (which I am), this pie will be no problem, especially w/ some cool whip or vanilla ice cream. Also, after about 24 - 36 hours of sitting the pie got significantly less tart and more sweet. Don't know how that works, but that was my observation.
As a side note: Some say to put the egg was on after the pie's baked a little bit. I tried that this time, but w/ the apple pie I made @ Thanksgiving did the egg wash right away before putting it in the oven. I will say without a doubt that it turns out way better w/ the egg was going on first.

Often, the thing that holds people back from their ability to get to tomorrow is their insane ability to hold to their beliefs, even in the face of absolutely fascinating compelling evidence to the contrary. One might often find that these are due to the assumptions that people cling to.
It's most often been the case with technology and the inevitable disruption that comes along with it. IBM chairman Thomas Watson famously predicted in 1943 that "there is a world market for maybe five computers." n 1995, Robert Metcalfe, the inventor of Ethernet, predicted the collapse of the Internet by 1996, which obviously did not happen. In 1977, Ken Olsen, the founder of Digital Equipment Corporation (DEC), stated with certainty, "There is no reason anyone would want a computer in their home."
Forecasting the future — particularly with technology — is a difficult thing to do. Many people have said that while it’s easy to predict the future, it’s another thing altogether to be right! Consider, for example, one fellow who in 1868 tried to alert residents of London, England, that they would soon face a very serious problem. Why? In his studies, he had looked at the city's population growth rate and then factored in the bathroom habits of the horses used for travel. His conclusion? In the not-too-distant future, most streets in the city would be six feet deep in manure!
Oops. He failed to see the arrival of a technology - automobiles - that would render irrelevant the potential problem. His assumption was at the core of his failed prediction.
The result of all this is that people often assume that tomorrow will be very much like today; that current trend lines will continue well into the future and that new trend lines won't appear; or they fall into the trap of being unable to see the dramatic shifts in those trends that result in something entirely different.
What comes about then, are the statements and attitudes - assumptions - that blind them to their emerging reality. Consider these winners in the assumption game:
- "Our product is so innovative, it doesn't need market research"
- "Our customers will always be loyal"
- "We don't need to worry about the competition"
- "Our technology is foolproof"
- "We can cut costs without affecting quality"
- "Our business model will never become obsolete"
- "We know what our customers want better than they do"
- "Our brand is invincible"
- "We can't fail because we're too big to fail"
Put these blind beliefs in the face of the accelerating change and the volatility that comes with it:
- your business assumptions might be changing faster than you are
- your timing of a trend might be way off
- your products are not aligned with the reinvention of the industry which is underway
- you are falling behind on customer expectations which are changing quickly because of new external factors
- products in your industry are being redesigned faster than ever before
- you are essentially structured for slow in the era of fast and can't keep up
- you don't have the right resources at the right time for the right purpose - your structure is outdated
- you have weak management teams that are more readily exposed to disruptive change
- you don't have agility at your core - you can't react quickly enough
- you aren't finding partners fast enough to do what needs to be done
- your leadership team is too old in a younger world
The result is that your planning is out of sync with your reality, your mindset exposes your flaws and weaknesses, your plans are going out of date faster, and the baseline trends impacting you are changing faster!
That's why you should never cling to your assumptions - you must be prepared to abandon them, avoid them, and ignore them. Get into a mindset of continuous assumption abandonment - never assume anything, anticipate everything, and always align with something!

1.0 quart (4.0 cups / 32.0 fl oz / 946.0 ml) Filtered Water

2.0 tbsp (approx. 1.2 oz / 34.0 g) Sea Salt

Note: If your kitchen temperature is consistently above 85°F (29°C), reduce salt to 1.0 tbsp (0.6 oz / 17.0 g).

1.0 to 2.0 tbsp (0.2 oz to 0.5 oz / 6.0 g to 14.0 g) Pickling Spices (such as mustard seeds, peppercorns, coriander seeds, or dill seeds)

2.0 to 4.0 cloves Fresh Garlic, peeled and slightly crushed

1.0 to 2.0 units Tannin-rich Leaves for crispness (fresh grape, horseradish, oak, mesquite, or even dried black tea leaves)

0.25 to 0.5 medium Onion, sliced (optional)

2.0 to 3.0 sprigs Fresh Herbs (dill, thyme, or oregano)
Preparation Instructions
- Prepare the Brine: In a pitcher or bowl, combine 1.0 quart (4.0 cups) of water with 2.0 tbsp (1.2 oz / 34.0 g) of sea salt. Stir vigorously until the salt has completely dissolved. Set this liquid aside. Remember to check your room temperature; if it is extremely hot (over 85°F), use only 1.0 tbsp of salt.
Prepare the Vegetables: Wash your vegetables thoroughly. Chop them into sticks, spears, or bite-sized chunks depending on the vegetable type. Ensure pieces are small enough to fit comfortably inside the jar but substantial enough to stay submerged.
Layer the Flavorings: In a clean, sterilized 1.0 quart glass jar, place the aromatics at the very bottom. Add the 2.0 to 4.0 cloves of garlic, the 1.0 to 2.0 tbsp of pickling spices, the sliced onion (if using), and fresh herbs.
Add Crisping Leaves: Place the 1.0 to 2.0 units of tannin-rich leaves (grape, oak, etc.) on top of the spices. These leaves contain tannins that prevent the vegetables from becoming mushy during fermentation.
Pack the Vegetables: Pack the chopped vegetables tightly into the jar on top of the flavorings. Leave at least 2.0 inches (5.0 cm) of headspace between the top of the vegetables and the rim of the jar.
Add the Brine: Pour the prepared salt water brine over the vegetables. Ensure the vegetables are submerged by at least 1.0 inch (2.5 cm) of liquid. If you have a larger jar, 2.0 to 4.0 inches of brine coverage is ideal.
Weight Down: Place a fermentation weight on top of the vegetables to keep them submerged beneath the anaerobic brine. You can use a glass fermentation weight, a small ceramic plate, a cabbage leaf tucked down the sides, or a slice of root vegetable.
Fermentation: Seal the jar tightly with a lid. Place the jar in a location out of direct sunlight with a temperature range of 65°F to 85°F (18°C to 29°C). Allow the mixture to ferment for 10.0 days or longer.
Maintenance (Burping): During the first 3.0 to 5.0 days, carbon dioxide will build up inside the jar. Check the lid daily. If it feels tight or bulging, briefly unscrew the lid to release the gas ("burping") and immediately screw it back on tightly.
Storage: After 10.0 days, taste the vegetables. If they have reached your desired level of sourness, move the jar to cold storage. This can be a root cellar, basement, or refrigerator kept below 65°F (18°C). The fermentation will slow down significantly, and the pickles will keep for several months.
