I am COMPLETELY inspired by the River Cottage Veg cookbook at the moment.. Okay, I might not follow the recipes necessarily, but as a style of veggie box eating, it can't be beat ;)
Those are Hugh F-W's flatbreads, with hummous from home cooked chickpeas (TOO nice!) cheesy chickpeas with parsley and roasted veg.. very nice indeed...
Really easy/ really good.
Carmelized the onions on really low heat on the stove for about an hour.
The flatbread is a foccacia recipe from a Julia Child Recipe.
I brushed the dough with dijon vinegrette before adding the onions and alittle mozzerella.

Even more than most chains, this chain (concept) is all about selling restaurants (to franchisees), food is an afterthought. You must hate money if you get involved in this racket.
This particular location is on M st NW in Washington DC. I had the buffalo chicken panini. It wasn't bad.
